雙色廣式月餅 Double Prosperity Mooncake
傳統月餅,聽起來讓人有點卻步,但其實多加練習還是會有得心應手的一天。喜歡用雙手感受糖漿與麵粉揉成團的質感,細細感受麵團的活力。外頭賣著的月餅雖然每年都推新,但說真的又有哪個口味是讓人今年吃了明年還會想念的,而且今年推出的新口味明年有被取代了,這也許是推新又或者是銷量不好而被取而代之呢?在華麗創新的口味內餡,往往不及那經過慢慢歲月的豆沙與蓮蓉內餡來得純樸動人。為了不失傳統,所以在豆沙餡料加了帶有花生顆粒的花生醬,這樣有助內餡多了股花生香氣。
餅皮材料:
低筋麵粉250克(过筛)
糖浆150克
花生油75克
碱水1又1/2茶匙
內餡材料:
蓮蓉餡700克
花生豆沙餡300克
花生豆沙餡材料:
豆沙餡300克
花生醬 3大匙
花生豆沙餡做法:
1.將豆沙餡和花生酱放入鍋中拌炒至濃稠不粘熟即可,起鍋放涼備用。
月餅做法:
1.將糖漿、花生油、碱水和麵粉拌勻,即為麵團。
2.將麵團静止于室溫鬆弛2小時,再把麵團分成等份。
3.將蓮蓉和花生豆沙餡分成等份。將花生豆沙餡包入蓮蓉餡中。
4.用擀麵棍把麵團分別擀平,將內餡包入餅皮中。放入月餅模內壓制成型后扣出。
5.預熱烤箱,以190℃烤約10分鐘即可。
6.取出待凉约10分鐘。在月餅表皮刷上蛋液,再繼續烤約10分鐘或至金黃即可。
Skin ingredients:
250g Low gluten flour (sift)
150g Golden syrup
75g Peanut oil
1&1/2tsp Alkaline water
Filling ingredients:
700g Lotus paste
300g Peanut red bean paste
Peanut red bean paste ingredients:
300g Red bean paste
3tbsp Peanut butter jam
Peanut red bean paste procedure:
1. Add red bean paste and peanut butter jam into pan, continue stir-fry until thick and nonstick.
Procedure:
1. Mix golden syrup, peanut oil, alkaline water and flour until well combined, knead well to form dough.
2. Let dough rest at room temperature for 2hours, and divide dough into each equal portion.
3. Divide lotus paste and peanut red bean paste into each equal portion, flatten the lotus paste and wrap in peanut red bean paste.
4. Flatten dough with roller and warp in filling, press into moon cake mould, knock it out.
5. Bake in pre-heated oven at 190℃ for 10minutes.
6. Remove from heat and let it cold for 10minutes. Brush egg wash on top and continue bake for 10 minutes or till golden brown.

去年自己做中秋兔兔月餅,沒想到中秋節又快到了!(一年過得真快)看小龍眼吃的津津有味~今年再來做一次好了🐰🌔🎋
🐰自製中秋兔兔月餅—How to make bunny mooncake at home 🌕
減糖減油版本,寶寶吃的安心也吃得健康,在家自己做無添加最安心,一起和寶貝們動手做兔兔月餅吧!
#材料Ingredients (9顆 /9 units)
低筋麵粉cake flour - 113g
奶粉milk powder- 8g
蜂蜜honey - 23g
細砂糖粉sugar powder - 30g
蛋黃egg yolk - 3顆
無鹽奶油butter - 38g
紅豆泥red bean paste - 135g
#步驟Directions (製作時間1h30m)
1. 烤箱預熱170度(Preheat the oven at 170c)
2.麵粉和奶粉一起過篩備用(Sift cake flour and milk powder together. Set aside)
3. 奶油和糖攪拌至乳霜狀(Put butter and sugar in the mixing bowl. Whisk until become creamy)
4. 加蜂蜜攪拌均勻後加入兩顆蛋黃打散拌勻(Add honey, mix well before adding in 2 egg yolks and mix until well combined)
5.加入步驟2的乾粉攪拌均勻(add the dry ingredients into the wet mixture. Mix until the dough comes together.)
6.用保鮮膜包裹住麵團靜製15分鐘(wrap with plastic wrap. Set aside for 15 mins)
7. 將紅豆泥餡分成9等份圓球狀,一顆15g(Divide the red bean paste into equal portions, 15g each. Roll each one into a ball.)
8.麵團分成9等份圓形球狀,一顆22g(Divide the dough into equal portions, 22g each. Roll each one into a ball.)
9.外皮壓扁後包入紅豆內餡,捏成橢圓形狀(Flatten the dough ball and place red bean ball in the middle. Shape into a nice round oval as the bunnys body.)
10. 用剩下的麵團做兔耳,一隻耳朵5g,捏成水滴狀用筷子壓出內耳形狀(For the war, roll the 5g dough into a water drop. Flatten a little and use a little and use a chopstick to create am imprinted line in the middle.)
11.兔尾巴用剩下的麵團捏成小球狀(For the tail, roll the 1g dough into a ball and attach at the back)
12. 用筷子戳出兔子眼睛(For the eyes, use a stick to poke eyes)
13. 製作完成的兔子放在烤盤上擺好後刷上薄薄一層蛋黃液(place the mooncakes on the lined baking tray. Brush each one with egg mixture.)
14.烤12分鐘,冷卻後可裝盒(bake for 12 mins take out and let them cool down completely.)
