メロンシート食堂、濃厚オリジナルパスタを手作り！これまで家系ラーメン、味噌ラーメン、二郎系、天下一品ラーメン、カップヌードルチャーハンや吉村家カップ麺を使ったチャーハンなど、人気ヒットメニューを作ってきたメロンシート。今回はなんと…パスタ！以前リクエストがあった「ペペロンチーノ」をメロンシート流にアレンジし、秋刀魚の干物と旬の素材ウドを使ったペペロンチーノを作りました。簡単に作れて、しかも意外な素材を使いましたがその仕上がりは本格派！秋刀魚の濃厚な脂とニンニクオイル、ウドのサクサク食感、まとめるのはシンプルに塩と胡椒だけという素材の味を生かした絶品パスタが誕生しました！基本のペペロンチーノを丁寧に解説しながら作っていますので、家にある素材を使ってアレンジしても楽しいですね！それでは実際に作る様子をのぞいてみましょう！
【材料 4人前】
・乾燥パスタ 300g
・干物の秋刀魚 1匹分
・うど １本の半分
・ニンニク　２かけ
・鷹の爪 1つ
・塩、胡椒
・オリーブオイル 適量
【作り方】
① 材料を切っておく。ニンニクはみじん切り。鷹の爪は輪切りして種を取る。ウドはパスタに絡めやすいよう細長い短冊切りにし、お酢をサジ1杯入れた水に入れてアク抜きする。
② パスタ茹でるための湯を沸かす。この間に干物をフライパンで焼く。両面を焼き、フライパンの上で身をほぐす。大きな骨も取っておく。焼きあがったほぐした干物を皿に移す。秋刀魚の油が出たフライパンはそのまま置いておく。
③ パスタ用の湯の中に塩を多めに入れ、パスタを茹でる。
④ 秋刀魚の油が残ったフライパンにオリーブオイルを多めに引き、ニンニクを入れる。油が温めかかったところで、ほぐした秋刀魚、アク抜きしたウド、鷹の爪を入れて炒め塩胡椒で味を整える。
⑤パスタの茹で汁をお玉で2杯分ほどフライパンの具材に入れる。茹で上がったパスタをフライパンにうつし、全体に火が通ったら出来上がり！

[how to make]
① Cut the ingredients. Garlic is chopped. Takanotsume is sliced ​​into seeds. Udo is cut into long strips so that it can be easily entangled with pasta, and then put in water with a glass of vinegar to remove the scent. ② Boil the boiling water for pasta. During this time, dry the dried fish in a frying pan. Bake both sides and loosen on a frying pan. Get rid of the big bones. Transfer the roasted dried fish to a plate. Leave the frying pan from which the oil of saury has come out. ③ Add a little salt to the pasta water and boil the pasta. ④ Add a little olive oil to the frying pan that contains the oil of saury and add garlic. When the oil has warmed up, add the loosened swordfish, puffed udo and hawk's claws and stir-fry with salt and pepper to adjust the taste. ⑤ Add about 2 cups of boiling soup of pasta to the ingredients in the frying pan. Transfer the boiled pasta to a frying pan, and when the heat is over, it's done!
