かふぇまるが作る「まるめし」
食べて顔がまるになる^^
今日は「餃子の皮」
おうちで作る皮もやってみると美味しくて病みつきに♡
皮にも薄力粉だけ、薄力粉、強力粉半々、強力粉のみのレシピと色々ありますが、焼いたときに底の部分がカリッと上がむっちりになるのが薄力粉かと思います。
強力粉のように生地をゆるめたりしなくてもいいので、とっても手軽です。
ただ、麺棒で伸ばすのは意外に大変なので、カード(100均などで買えます)でぎゅっと押して平らに伸ばす作り方にしてみました。
それでも難しかったら、手で少し伸ばしてから最後にカードで均一に伸ばしてみてください。
だいたい丸になれば大成功です^^

【Ingredients】about 20 sheets
200g flour
110g Boiling water
potato starch
【Directions】
①Add the boiled water into the flour little by little, stirring with chopsticks and bring the dough together with hands.
②Transfer to a floured surface and knead for 5 minutes.
③Cover with damp towel and keep at room temperature for 30 minutes.
④Cut dough into 4 pieces.
⑤Roll then out into a sausage shape.
Cut into 1-inch ( 2 cm ) pieces.
***Cover the dough with a damp kitchen towel at all time to prevent from drying
⑥Roll out the dough to a thin circle.
Continue with the remainder of the flour mixture.
⑦Sprinkle each wrapper with potato starch.

【材料】約20枚
薄力粉 200g
熱湯 110g
*片栗粉
【作り方】
①ボウルに薄力粉を入れて熱湯を少しずつ加えながらお箸で混ぜ、手でひとつにまとめる。
②打ち粉をした台の上で5分くらいこねる。
③ボウルにいれて濡れ布巾を被せて室温で30分置いておく。
④生地を4等分する。
⑤ソーセージ状にしたら、端から2cmくらいにカットする。
***作業中は生地が乾燥しないように濡れ布巾を被せてください。
⑥生地を丸く薄く伸ばす。大きさは約8cm。
残りも同じように丸く伸ばす。
⑦出来上がったらくっつかにように片栗粉をまぶす。

*生地は丸く伸ばしたら、冷凍出来ます。
片栗粉を薄くまぶして4枚くらいずつ重ねてラップに包んで、使う時は早めに冷凍庫から冷蔵庫へ移します。
冷たいうちに無理にはがそうとすると生地が破けますので、室温にもどしつつゆっくりと優しく剥がすと良いです。

Ingredients (for 9 brownies)
*Mold size 7x7 inch.(18x18cm)*
* unsalted butter 85g
* bittersweet chocolate 100g
* cocoa powder 15g
* granulated sugar 100g
* brown sugar 50g
* vanilla extract 8g
* salt 1/2 tsp
* eggs 2
* all-purpose flour 40g
Preparation:
1.Chop the chocolate into small pieces
2. Melt the butter from heat
3. Pour the hot butter over the 60g chocolate and let it sit for 2 minutes
4. Whisk until the chocolate is smooth and melted. Set aside.
5. Combine the eggs, granulated sugar, brown sugar in a large bowl. Beat until light and fluffy.
6. Add Salt and vanilla extract, mix well.
7. Pour chocolate and butter mixture and whisk until smooth.
8. Sift the flour and cocoa powder, and fold gently until just combined.
9. Add remaining chocolate and blend well.
10. Grease a 7x7-inch (18x18-cm) baking pan with softened butter, then line with parchment.
11. Pour the batter into the baking pan and smooth the top with a spatula.
12. Preheat the oven to 180°C and bake in 20 minutes.
13. Let cool in pan 30 minutes before slicing.
14. Enjoy.
