東京・JR中央線の大久保駅から徒歩8分。2019年8月にオープンした新しいコーヒーショップがあります。大手コーヒーチェーン店で14年間腕を磨いてきて、ラテアートの競技会への参加経験も持つというご主人。
駅から小滝橋通りを歩いていると、「COFFEE」と壁にかかれたお店を発見！ドアが２つあり、入り口を迷いましたが、どちらでもいいようです。私は、カウンターが近い入り口から入店。キラリと光るエスプレッソマシンと焙煎機に、まず目が惹かれました。店内はこじんまりした空間で客席があるのは1階だけ。2階はワークショップのスペースとして使用されているようです。
1階のスペースには、2名がけのソファーが一つ、1名がけのソファーが二つあり、その間に木のベンチ椅子が二つ。コーヒー片手に読書や書き物なんかがピッタリな落ち着ける空間だと思いました。
メニューには、ブレンドコーヒーとシングルオリジンがあり、シングルオリジンは5種類の産地から選ぶことができます。他に、アイスコーヒー、エスプレッソドリンク、ティー、バナナシェイク、キッズドリンクがあります。
今回は、シングルオリジンのマンデリンに。ハンドドリップで丁寧に淹れてくれます。ひとくち飲んでみると、酸を強く感じ「豆を間違えたかな？」と思いました。
マンデリンの産地インドネシアはスマトラ式という独自の精製方法で豆を取り出します。スマトラ式では果肉を取り除き乾燥させ、乾燥前にパーチメントという殻を脱穀してしまいます。そのため、生豆一つ一つに太陽の力強さが染み付き独特のコクと力強さがあるコーヒーになるのです。
そのため、マンデリンはコクを引き出すために深煎りにするのが一般的。私自身、マンデリン＝深煎りが当たり前、という概念を持っていたので、そのイメージを覆されたような感覚でした。なるほど、これが「オルタナティブ」なのかと感心しましたが、残念ながら、私は、酸よりもコクが感じられる深煎りのマンデリンが好みでした…。
次回はこのコーヒー店のインスタグラムに美しく彩られているラテアートを、目で、舌で、楽しみに伺いたいと思います。
