難得來一篇長文,大家安心在家可以慢慢看(順便幫我檢查錯字)
既然Andre is back了
就拿來當作邁入疫情三級之後的第一篇吧。
前幾天跟朋友聊到,一些人在寫一道料理的時候常會用到一個詞彙:「完成度」。
所以究竟怎樣算是完成度高?是從誰的立場來看?怎樣的菜色是未完成?又或許一道感覺未完成的菜,卻可以是完成一整個套餐的某一個轉折?
這個定義好難,但討論起來也蠻有趣的。
RAW 在今年五月迎來了Andre is back menu,無緣去過新加坡 Restaurant ANDRE的饕客紛紛摩拳擦掌。
打著主廚的名號,可以視作江振誠主廚過去料理的經典重現,以及他料理的成長經驗與軌跡,的確值得期待。
之前在江振誠與Room by Le Kief 聯手的活動上就見識過主廚對於概念與體驗的呈現感極高,讓人可以輕易落入他安排好的欣賞角度,這點很厲害。
喜歡海膽與花生醬的天使麵,像是更細緻高雅的擔擔麵,點點的芽蔥與青花椒點綴的靈巧,不單純只是以暴力海膽的味覺衝擊,很高。
同時也喜歡尼斯沙拉的意象,將傳統使用罐頭鮪魚改成油脂豐厚的黑鮪魚中腹,半炙燒的香氣與羅勒的煙燻香氣,有種溫暖明亮的海洋感。
而 “Memory 1997”這道主廚當年的招牌菜色,連刻著Memory的湯匙都完美承襲下來,黑松露鴨肝暖凍這樣味道富裕華麗飽滿的組合,卻只保留了溫柔厚實而沒有膩感,也很厲害。
主菜是羅西尼牛排的釜飯呈現版。牛排、鴨肝、黑松露⋯青天霹靂米很好吃,但整體的味道組合反而沒有前面驚艷。
隨即的布里耶起司千層可麗餅瞬間又把我拉回高潮,主廚說,這道起司在法國是主菜與甜點之間的過場,不屬於任何一邊。
這道的精彩,在於他的不屬於誰,同時也是我最喜歡的轉折。類似Lady M的千層口感,起司香濃而高雅,大方而自成一格,為整頓套餐的品嚐歷程,最好的詮釋了何謂「完成度」。
加點的Peach Pione Rosace 視覺美感極為驚人,葡萄的刀工精準,白桃與葡萄、覆盆子帶來少女般,令人微笑的青春爛漫。
銅模烤製的炭焙費南雪上桌就香氣驚人,噴灑上泥煤威士忌後更是立體,炭焙與泥煤的象限相近,苦韻很美。
除了食物的味道,其他用餐的體驗,比如選用有著不同故事的刀具的環節; 現場用愛樂壓做出咖啡高湯的新奇程度⋯也都十分讓人沈浸。
說菜的細膩度、介紹的內容、節奏的流暢,長年的經驗與世界觀,的確讓這套Andre is back 菜單有著極迷人的品飲歷程。
值得說上一句:「完成度真的很高啊」。

Long after the Golden State Warriors were presented with their third NBA Finals trophy in the past four years on Friday night, the game operations crew at Quicken Loans Arena had a few unenviable final tasks to get through.
Because these Finals were so short, and the last game so noncompetitive, the flame-blowing machines affixed to the jumbo screen high above the court had to burn off extra fuel in their tanks before the arena and the NBA season turned over to a long, uncertain summer.
As the Warriors players and coaches celebrated in their locker room, fire sprang forth from the scoreboard toward their families and friends on the court. One last angry, empty lament from the Cavaliers and every other franchise that's tried and failed to dethrone these Warriors over the past four seasons.
"Wow, that felt like that last scene in 'Game of Thrones,'" Warriors coach Steve Kerr's wife, Margot, said, referencing the iconic battle scene in Season 7 of the hit HBO show, when the presumptive ruler of the Iron Throne, Daenerys Targaryen, flies in on her fire-breathing dragon to destroy the superior Lannister army. A great analogy, except the dragon was far more effective.
These flames, like the flames 29 other teams in the NBA hurled at Golden State this season, never really touched them.
Yes, the Cavaliers had a chance to win two of the four Finals games. But that was only due to the brilliance of LeBron James. And even then, there was never a time when the Warriors genuinely felt threatened in this series.
The Houston Rockets took them to seven games in the Western Conference finals and may have prevailed if point guard Chris Paul hadn't injured his hamstring at the end of Game 5. Of course, the Warriors might've won that series in five games if former Finals MVP Andre Iguodala hadn't missed most of it with a leg injury. And even when the Warriors faced elimination, it always felt like they should win, if they simply played up to their capabilities.
Golden State had more talent, more depth, more swagger and more experience than any team in the league -- maybe ever. That's been the case since the Warriors added two-time Finals MVP Kevin Durant to a team that won an NBA-record 73 games two years ago.
"We're loaded, and I'm not afraid to say that," Steve Kerr said.
Kerr's challenge this year hasn't been harnessing that talent or figuring out what to do with it. The challenge this time came from within. The Warriors' toughest opponent this year was themselves. Could they stay motivated through the slog of the regular season? Could Kerr remind them to be grateful for the chance at history, rather than bored or resentful at the obligations of greatness?
"Probably the hardest road we have had," Warriors guard Stephen Curry said. "A lot went into this year, mentally and physically, to get to the finish line."
High-class problems, to be sure. But nothing compared to the problem Golden State has created for the rest of the league.

Allen Iverson keeps scoring and the
Philadelphia 76ers keep winning.
One night after a 41-point effort in Philadelphia's most
lopsided win of the season, Iverson scored an NBA season-high
and career-best 54 in a 107-103 victory over the Cleveland
Cavaliers.
"It was like he was playing horse tonight," said 76ers guard
Aaron McKie, who had 20 points and nine assists. "His jumper
was deadly."
Using mostly jump shots, Iverson went 20-of-30 from the field.
He also hit 10-of-13 free-throw attempts en route to his third
career 50-point game and first since February 6 against
Sacramento.
"When your jumper is on, the basket seems like an ocean and the
basketball seems like a rock," he said. "That is the way it
felt tonight.
"My teammates are the ones that set the screens for me and got
me the ball in spots where I need the ball. My coach calls the
plays and I wouldn't set a career high without those guys."
The 1998-99 NBA scoring champion, Iverson broke his own Gund
Arena record for points. He has fond memories of this building,
having scored 50 points in a 125-118 loss in April 1997 after
being named Most Valuable Player of the rookie game at All-Star
Weekend that same year.
"Coming here is something special because I remember I came in
here and won the MVP of the rookie game in 1997," he said. "All
I heard was boos and didn't understand it. I always look
forward to coming back here to play in front of these people."
The 76ers extended their winning streak to six games and
improved the league's best record to 24-8. They have won eight
straight on the road, three shy of a franchise record.
Theo Ratliff chipped in 12 points, nine rebounds and nine blocks
for Philadelphia, which was coming off Friday night's 121-89
home rout of Seattle.
Despite Iverson's 54 points, the Sixers could not shake
Cleveland, which closed within 103-99 on a three-point play by
Lamond Murray with 67 seconds left but could not get any closer.
"I thought our guys gave what they could," coach Randy Wittman
said. "They ran into a guy that had it going tonight. I
thought we gave a great effort but just couldn't overcome his 54
points."
Andre Miller had 22 points and 14 assists for the Cavaliers, who
have lost three straight and eight of nine after a six-game
winning streak.
The Cavs got within four points five times before Miller capped
the scoring with a dunk, but the trio of Iverson, McKie and
Ratliff foiled them each time.
Murray's three-point play with 67 seconds left got Cleveland
within four points but Ratliff followed with a 15-footer and
Iverson added two free throws for a 107-99 lead with 22 seconds
to play.
Playing for the second straight night, the Sixers trailed 15-4
less than five minutes into the game. But Iverson scored eight
points and Ratliff added six during an 18-6 run that gave
Philadelphia a 27-25 lead after one period.
The Sixers never trailed again, leading by as many as 11 points
three times.
Iverson, McKie and Ratliff combined for 26 of 29 Sixers points
as they turned a 15-4 deficit into a 33-29 lead 3:15 into the
second quarter.
The lead hovered between five and 10 points until a layup by
Rodney Buford made it 55-44 with 73 seconds to play in the first
half. The Sixers took a 56-48 lead into the locker room behind
Iverson's 28 points.
Iverson scored Philadelphia's first 13 points of the third
quarter on a trio of jumpers, a 3-pointer, a three-point play
and a free throw for a 69-61 lead with 6 1/2 minutes left in the
period.
"He was amazing," Sixers coach Larry Brown said. "He shot the
ball as well as you can shoot it because there weren't a lot of
easy shots. People had a hand in his face."
"What a Larry Brown team does really well is spread the floor
well for Allen," Cleveland guard Jim Jackson said. "It's really
hard to stop a guy like that on the perimeter."
