Although the name may implicate that you're about to be "wow-ed" by slabs of smoky chunks of protein we were actually enamoured by basically... Well, everything else, starting with the corn salad to which Chef Mateo Roberson, an American with Mexican roots informs us this dish was listed among GQ Magazine's best, our minds grumbled "yeah, yeah" but after one bite our taste buds screamed "Yeah! Yeah!".
Smokiness, sweetness, freshness with a touch of cheesiness was absolutely on-point. So was the "Vegetables and greens", sounds positively pedestrian right? Wrong! Imagine all your most favourite exotic Asian fruits signed a treaty with vegetables, and enlisted the powers of bees to bear witness. That was this dish. A dish consisting of starfruit, rose apple, toasted pumpkin seeds, mandarin, baby cos and more, drizzled lightly with bee pollen and cherry dressing. Sorcery!
We were also floored Mateo's version of a bread basket, these (please help me with the name!) little spongy, gluten-free rolls with toasty cheesy notes. I could have binge-eaten those like pop corn in front of the screen. This "bread" plus the Sorbet were about the best I've ever tried. The makroot Sorbet is as umami as it gets, too complex to explain, its a must-try yourself. Best of, all this non - meaty stuff is super fairly priced. Considering how much love and technique is devoted. Just get talking and observing Mateo' s intensity as he works, you'll see that the passion is just as acute.
The Seabass Ceviche held no surprises, the same with the Wagu beef tongue, good, solid technique and flavours as expected. The duck carnitas and roasted bone marrow was tasty and rich, fatty and filling, so go for that if that's what you're into.
The let down most surprisingly was the steak, the Spider cut to be exact, not cooked evenly and salted to the extreme, but we were assured it was a stroke of bad luck.
That mishap certainly won't stop us from coming back, that's for sure, although our hearts were stolen by their veggie dishes and sides, Carne actually plans a rehaul of their menu, including a tasting menu addition. One can only hope they save the best and improve on the name's sake.

I wasn’t a great fan of salads because I always find it difficult to eat greens without a good dressing up until lately.
Here's my version of salads - lettuce, romaines, carrots, baby tomatoes and Japanese cucumber and drizzled on top is the Hellmann’s Roasted Sesame dressing that brings together all the ingredients.
Hellmann's Malaysia dressing has become my choice of salad dressings because it's made with real ingredients, it can easily transform a simple salad to a spectacular one. Recently, I’m really addicted to the Roasted Sesame dressing that goes along well with just any salad.
Besides the Roasted Sesame, there's also the Smoky Thousand Island and Smoky Caesar, the dressings are available at 210ml bottles and sold at a retail price of RM9 each.

How to Make Pork Char Siu

430 g Pork Shoulder Roast
[Marinade]
2 tbsp Soy Sauce
1 tbsp Oyster Sauce, the amount of salt varies depending on the product.
3 tbsp Sugar
2 tbsp Sake
1/2 tbsp Sesame Oil
3 slices Ginger Root
1 Garlic Clove, crushed
10 cm Long Green Onions (Naganegi), green part
[Other Ingredients]

Although Japan is not currently on any sort of lockdown or strict order to stay indoors, I think we are all starting to realize that we need to take matters into our own hands and self-isolate as much as possible. For those of you who are dealing with your first "crisis" in Japan, I wanted to provide a little bit of a guide to help you make sure you're as prepared as you can be, for spending time indoors.

●Curry
- Meats: Pork, Beef, or Chicken. Whatever you have.
- Vegetables: Potato, Onion, Carrot, Mushrooms, Spinach/Komatsuna/Kale, Asparagus, Sweet Potato, Pumpkin (Kabocha), Eggplant, Okura, Renkon (Lotus Root)

●Instant Miso (for reference, this is the kind I usually buy https://www.amanofd.jp/amano/shop/goods/index.html?ggcd=B4741&cid=miso)
You can buy any kind, some instant miso comes with a paste, which some people may prefer but I like the freeze-dried type. It is said that certain nutrients are preserved when you freeze-dry vegetables, so I think they're a bit healthier.
●Cook Do (for reference: https://www.ajinomoto.co.jp/cookdo/lineup/)
These are usually found in the Chinese seasoning section of your Japanese supermarket (as the majority of the boxes are Chinese.) Similar simple-meal kits with Japanese recipes are sometimes stocked in the same aisle.
●Canned Tomatoes
- Good for curries (add one can of diced tomatoes to your curry to make it more tangy and acidic)
- Pasta (sautee veggies, garlic, onion, and bacon, add your diced tomatoes, stew, taste, and season, add to pasta)
- Soups (lightly sautee your favorite soup veggies in oil and garlic, pour diced tomatoes into the pot, then fill the empty tomato can with water and add one cube of soup stock of your choice, throw in your desired seasonings, bring to a boil and simmer. you can add rice, quinoa, gains, shredded chicken to make it a hearty meal.)
- Stews (for beef, lamb, and pork, I cut my vegetables large, season them first with cumin, curry spice, cinnamon, salt, pepper, paprika, etc to make a fragrant mix, then add tomatoes and water, and simmer until liquid has dissolved and the mixture is thick enough to be a stew.)
- Salsa (Use half a can, pulse in a mixer with red onion, cilantro, garlic, green pepper, red chiles, lemon, salt, pepper, and a bit of cumin for a more tex-mex flavor)
●Spices:

Most supermarkets have them, and they are very versatile, cheap, and easy to use.
●Yakiniku Sauce:
You can choose any kind you like! When in doubt, the popular Yakiniku chain "Gyukaku" has a sauce in the supermarket that's pretty good. Use this on "grilled" and "charred" meats. Tastes great over rice. Make a "Yakiniku Bowl" with charred carrots, cabbage, onion, green pepper, and slices of beef or pork.
●Ponzu: I prefer Yuzu, but you won't be missing out on too much if they don't stock it. Regular Ponzu works. Use this on steamed veggies with lighter flavors, or in sautees with Asian veggies (bok choy with garlic topped with ponzu, baked white fish with salt and ponzu, or daikon and pork sauteed with ponzu is great!) Can be mixed with olive oil, salt, and pepper to make a salad dressing too!
●Veggies - Try to pick a few greens, and then one veggie of each color. I try to plan for one raw-green (for salads), one wilting-green (for soups and stir-fries), and one firm-green (for baking grilling) per shop.
Green: Lettuce, Baby Leaf, Spinach, Bok Choy, Komatsuna, Asparagus, Zucchini, Green Pepper, Kale, Cucumber, Cabbage, Avocado
Purple: Red Onion, Eggplant, Purple Turnip, Satsumaimo (Sweet Potato), Purple Cabbage (great for adding color).
Red: Tomatoes, Red Peppers, Beets, Beni Daikon (Red Radish)
Orange: Carrot, Pumpkin, Orange Pepper, Orange/Yellow Fruit Tomatoes
White: Daikon, Turnip, Cauliflower, Renkon (Lotus Root), Bean Sprouts, Potato, Onion, Sato-Imo, Yama-Imo,
Brown: Gobo (burdock root), Mushroom
●Buy & Freeze:
- A loaf of bread or two (Japanese bread tends to come in slices instead of loaves so buy accordingly.)
- Meats (Chicken Breasts are the most versatile AND cost-effective IMO.)
- Frozen Seafood (S&B has a paella seasoning! if you can find it, this is a nice way to utilize rice, veggies, and seafood)
- Frozen naughty snacks like pizza, dorayaki, frozen fried rice, emergency instant meals, etc can go here too.
●Pasta and Rice are good to have, but if you don't have a rice cooker in your apartment, you can buy a few microwavable instant-packs from your supermarket or convenience store and store those instead.

高筋麵粉 180g,酵母 3g,鹽 3g,砂糖 12g,暖水 110ml,橄欖油 10ml,水牛芝士 130g,沙律,車里茄,杏仁,乳清芝士,意大利黑醋
做法:
1. 將高筋麵粉,酵母,鹽,砂糖,暖水,橄欖油搓勻,蓋上保鮮紙,發酵 30分鐘
2. 分成兩份,壓平
3. 在焗爐紙上加入薄餅,用叉拮窿,加入水牛芝士,薄餅,修邊,用叉拮窿,用170℃焗25分鐘
4. 加入沙律,車里茄,杏仁,乳清芝士,意大利黑醋

※INGREDIENTS:
Pizza Dough (180g Heavy Flour, 3 G Yeast, 3 G Salt, 12 G Sugar, 110ml Warm Water, 10ml Olive Oil), 130g Mozzarella Cheese
2 Handful Salad Greens (Romaine, Chicory, Vitamin, Radicchio), Baby Tomato, Almond Slice, 1 Scoop Ricotta Cheese, Balsamic Galze
※PREPARATION:
1. Sift the heavy flour and make three holes for yeast, salt and sugar.
2. Mix them well, and add warm water.
3. Knead the mixture together.
4. Add olive oil and continue kneading.
5. Place in warm area for 30 minutes to let it rise.
6. Divide the dough into two pieces and roll out the dough.
7. Place thinly rolled out dough on oven pan and make holes with fork.
8. Sprinkle enough mozzarella cheese and cover it with other dough and seal the dough.
9. Make a hole on top dough for preventing from rising up during baking.
10. Bake in 170 C oven for 25 minutes.
11. Place prepped salad greens, baby tomato, almond slice, ricotta cheese on top of pizza and finish off with balsamic glaze.
