台北(北投)阿輝伯蘿蔔絲餅
早上六點一開業,早已有人在等待排隊了。
主掌著煎台的老闆娘跟忙著備料的老闆有節奏地各司其職進行著。
這裡賣的是「三板釜」:蘿蔔絲餅、飯糰、豆漿。
(或米漿也可混漿)
在小編五花肉三歲時便開始經營,已過了30幾個年頭,我也已長大成人變成了搶手的十八少年...而阿輝伯呢?
阿輝伯是當年教老闆娘這份手藝的江蘇老兵,店名取自師父的名字,而不是一般尋常人取自自己的名號為店名,頗有傳承和飲水思源的意味。
蘿蔔絲餅加蛋,端過來就是一切四。
極力推薦,第一口先不加佐料,品嚐金黃不焦、清脆度滿分的油煎餅皮功力及蘿蔔絲的鮮甜味後,再喝上一口一早現做的豆漿,一搭一唱充分的顯現出蘿蔔絲的實在和豆漿的濃醇度。
然後,你就會感受到一些人生的體悟。
時間:早上六點賣完為止,所以請當隻早鳥早起搶票搶食物。
地址:中央南路、亞藝影音的旁邊,因在路邊不好停車,請節能減碳當減肥地走過去會好點。

Taipei (Beitou) Uncle Hui’s Daikon (radish) pancake.
6 AM of early morning, the queue is already there.
The owner of the food stand who’s preparing the materials, and his wife who’s in charge of the griddle station, are both making the works on fire.
There’re three main courses they sell: Daikon pancake, rice roll, and soy milk ( you can mix with rice and peanut mike as an option).
This little stall started business when I was just a toddler, it has been more than 30 years since. I’m now all grown up, but how about Uncle Hui?
Uncle Hui was a veteran who taught the lady owner the secret of the Daikon pancake, then the shop was named after Uncle Hui as a gratitude, also the pass-on of 2 generations.
Daikon pancake with an egg, the main attraction, is served with four slices in one plate.
I highly recommend to try the original taste without any sauce for the first bite, enjoy the crispy but not over-fried pastry, and the sweetness of fresh chopped radish. Then take a sip of the soy mike which is freshly made every morning. The perfect combination is beyond your imagination.
Some people comprehend the essence of life during this fine food experience, I myself sure did.
Open Hours: 6 AM until sold out, so you better be an early bird.
Location: Next to the TSUTAYA DVD rental shop on Zhongyang S. Rd., Beitou Dist. Not easy to find a parking place, so I personally suggest to do it in an eco-friendly way, go by foot from Beitou MRT station.
Insider Tips: Remember one serve include four slices, it has a professional way to say it “Yi-Qie-Si”. Don’t ask what that mean again, cuz me, AKA Fatstreet Boy, have told you one time

美式蘋果派
材料:
酥皮 3張 puff pastry 3
內餡材料:
蘋果丁 150公克cubed apples 150g
無鹽奶油 20公克 unsalted butter 20g
檸檬汁 1大匙 lemon juice 1tbsp
肉桂粉 少許 ground cinnamon
糖 30公克 sugar 30g
作法:
1. 奶油炒蘋果至透,加入糖、檸檬汁與肉桂粉攪拌至糖融化,放涼備用。
2. 酥皮直放對切成兩半,表面刷少許水後,舀一匙的蘋果內餡放在酥皮中間,上下1/3處往內對折,再將左右壓緊,用叉子在邊緣處壓出紋路,上方再斜劃兩刀,用叉子差出小孔防止烤時爆開,放入氣炸鍋,表面刷上蛋黃液,設定溫度170℃10分鐘即可。
葡式蛋塔
材料:
市售酥皮 5張 puff pastry 5
內餡材料:
牛奶 200公克 milk 200g
鮮奶油 100公克 whipping cream 100g
糖 60公克 sugar 60g
蛋黃 4顆 yolk 4
作法:
1. 將蛋黃、糖、鮮奶油、牛奶混合均勻,攪拌至糖無顆粒狀態,過濾備用。
2. 酥皮攤平,表面刷上少許水捲起,再接續下一張繼續捲起,如此反覆共五次,並拿去冷凍約10分鐘。
3. 將稍微冷凍好的酥皮捲橫放切約1公分大小,放入蛋塔模型中,拇指沾水推開,靜置鬆弛約10分鐘。
4. 蛋液倒入約7分滿,將蛋塔放入氣炸鍋,設定溫度180℃10分鐘即可。
蝴蝶酥
材料:
市售酥皮 4張 puff pastry 4
糖 適量 sugar
作法:
1. 酥皮攤開表面刷水,均勻灑上糖,再重複疊上四張酥皮,每蓋上一張時壓平讓酥皮黏著在一起,最後將疊好的酥皮兩面灑上少許麵粉桿平,表面再刷少許水,灑上糖後1/6處左右向內摺再對摺,最後向中間摺成一個長方形,稍微壓平整型,放入冷凍約10分鐘。
2. 將酥皮取出橫放,切約1.5公分大小,單面沾糖,放入氣炸鍋,設定溫度180℃15分鐘即可。
蜜汁叉燒酥
材料:
酥皮 3張 puff pastry 3
叉燒肉 150公克 Chinese BBQ pork 150g
叉燒醬材料:
糖 60公克 sugar 60g
紅蔥酥油 1大匙 crispy shallot & oil 1tbsp
醬油 30公克 soy sauce 30g
蠔油 25公克 oyster 25g
水 230cc water
太白粉水 5大匙 tapioca starch with water 5tbsp
作法:
1. 水、糖、蠔油、醬油、紅蔥酥油倒入鍋中煮滾,加入太白粉水攪拌,放至涼備用。
2. 叉燒切成丁狀,再與冷卻後的叉燒醬混合均勻。
3. 酥皮用杯子邊緣切下兩個圓形酥皮,表面灑上少許麵粉趕成橢圓形,舀一匙叉燒內餡放入,再將酥皮對折,表面用叉子戳小洞,放入氣炸鍋,表面刷上蛋黃液,設定溫度170℃10分鐘即可。
蘿蔔絲酥餅
材料:
酥皮 2張 puff pastry 2
內餡材料:
蘿蔔絲 400公克 shredded radish 400g
蒜末 20公克 minced garlic 20g
糖 1/4茶匙 sugar 1/4 tsp
白胡椒粉 1/2茶匙 ground white pepper 1/2tsp
鹽 1/2茶匙 salt 1/2tsp
蔥花 20公克 scallion 20g
沙拉油 1大匙 oil 1tbsp
作法:
1. 鍋中倒入少許油炒香蒜末,加入蘿蔔絲炒至軟,並將水分炒乾,加入鹽、糖、白胡椒粉,炒均勻後加入蔥花攪拌,放涼備用。
2. 酥皮用杯子邊緣切下兩個圓形酥皮,表面刷上少許水,舀一匙內餡後用另一片酥皮蓋上,再用叉子壓緊邊緣。
3. 在蘿蔔酥餅的表面上戳小洞,放入氣炸鍋,表面刷上蛋黃液,設定溫度170℃10分鐘即可。
酥皮咖哩餃
材料:
酥皮 3張 puff pastry 3
內餡材料:
洋蔥丁 80公克 cubed onion 80g
蒜末 20公克 minced garlic 20g
豬絞肉 150公克 minced pork 150g
咖哩粉 2茶匙 curry powder 2tsp
沙拉油 1大匙 oil 1tbsp
水 50cc water
鹽 1/2茶匙 salt 1/2tsp
糖 1/2茶匙 sugar 1/2tsp
太白粉水 1大匙 tapioca starch with water 1tbsp
作法:
1. 鍋內倒入一匙沙拉油,炒香蒜末後加入絞肉炒至變白鬆散,加入洋蔥與咖哩粉炒香,之後加入水、鹽、糖與太白粉水,煮滾後放涼備用。
2. 酥皮對切再對切成4小片,放入一小匙咖哩內餡,封口處刷上少許水,以菱形邊的對角線折起,稍微壓緊,表面上戳小洞,放入氣炸鍋,表面刷上蛋黃液,設定溫度170℃10分鐘即可。
