時差要命,陷入一直在睡、醒沒兩小時就又睏的輪迴。今午拖著不知在哪個時區的身體外出買菜,也為元宵買買湯圓,結果湯圓沒找著,反倒撿回一包先前從未見過的蒜味香腸。眼看買得差不多,猶豫要不要再去趟中國城香港超市,那裏肯定還有桂冠,但太懶,於是作罷。回家將事先浸過、台灣帶回的「母親牌」蘿蔔乾切丁爆香,和著蛋液及蔥末油煎做了菜脯蛋,一旁熱了小鍋,炒起糖熬起薑片,丟入地瓜塊煮甜湯,再順手煎了香腸切了青蒜,清炒油菜,開飯。
菜都上齊擺了小小一桌才發現自己還想著台灣胃口還沒切換。媽細心曬的蘿蔔乾清脆又會回甘,雖然代價是,即使封了雙層、半個行李中的衣褲還是覆上鹹香,但誰在乎,把家的氣味越洋帶來才是要緊事。
I made these dishes unconsciously because of jet lag. It turned out that I obviously still in the mood of Taiwan and haven't switched my appetite to an American one(though I'll probably never do that.)

凱蒂食記:雞家莊:每次有外國訪客來台時,雞家莊就是傳統台菜的不二選擇。點的當然也是招聘菜色,包括東坡肉,脆皮腸,雞捲,菜脯蛋,蔭豉蚵,糖醋魚片,絲瓜。除此以外我特別喜歡他們的扁魚白菜,滷的非常入味。當然,來到這裡,一定要吃三味雞!顧名思義就是三種不同的雞的拼盤。烏骨雞,玫瑰雞,跟原味,都super鮮嫩!即使肉較厚的也不乾,不柴,每一塊雞皮下都還有薄薄的肉凍,天然的膠原蛋白!另外大受歡迎的是蛤蜊雞鍋!湯的清甜完全是從雞腿肉和蛤蜊燉出來的,無人工添加,果然天然的最好!Katherine's food diary: chicken village: the best restaurant to represent Taiwanese cuisine for foreign guests. They have all the traditional dishes such as slow cooked pork belly, pan fried intestine, deep fried shrimp and chicken rolls, radish omelette, sweet and sour fish, etc. I strongly recommend their stewed bokchoy, which is stewed together with mushroom and dried fish. And of course you have to have their chicken platter! Even the thickest piece is soft and tender inside and natural jelly collagen underneath the skin. The other must have is their chicken clam soup. The broth so clear but flavorful simply from chicken drumstick and clam itself, without any artificial flavor, proving natural taste is the best!

1 lb (453g) chicken carcass
1 lb (453g) pork bones
2 onions
2 shallots
1 squid
⅓ cup (100g) dried shrimps
4 dried shiitake mushrooms
1 tbsp salt
½ tsp black pepper
About 12 cups water (2880ml)
For the pickle radish:
1 ½ cup (90g) dried radish
1 cup (240ml) water
¼ cup (60ml) rice vinegar
½ cup (100g) sugar
¼ cup (140g) fish sauce
For other combinations:
⅓ cup (150g) peeled, deveined shrimps
1 tsp fish sauce
