Nitrosamine
Nitrite may seem innocuous at room temperature, but just a bit of heat can transform it into a carcinogen: nitrosamine. It is often found in meats where the transformations take place.
Processed Meats
Processed meats such as Chinese sausages, jerky, smoked meats, ham, Frankfurt sausages, hotdogs, minced beef and luncheon meats all contain nitrites.
