CheckCheckCin: Many of us got to spend more time at home during the pandemic. While some of our culinary skills have improved, some of us have developed the habit of binge eating. The lack of exercise and our sedentary lifestyle at home have caused our body to inevitably increase in size
Moreover, stress can also cause us to gain weight. The stagnation of qi in the liver will disrupt the overall circulation of the qi and blood in the body, hence adding a further burden to the spleen and stomach. If these two organs fail to eliminate excess water from the body, dampness will accumulate and cause us to look swollen, as if we have put on weight. However, if we become fat due to our eating habits, then we need to re-examine our diet and improve our body shape by exercising regularly.
If the weight gain is stress-induced, then individuals need to find ways to relieve stress. Consume an appropriate amount of lotus root, white radish, dried citrus peel and rose flowers, as these ingredients can soothe the liver. Cut down on spicy food, strong tea, coffee and other foods that can irritate the body.

◆Simmered Mackerel in Miso sauce
《iIngredient ( servings 2 ) 》
1 mackerel
1/2 stalk of long onion
A 150ml water
A 8 pieces of sliced ginger
A 2 1/2 tbsps miso
A 3 tbsps sake
A 3 tbsps sweet rice wine (mirin)
A 2 tablespoons sugar
Preparation
Clean and fillet a mackerel. Make a cross incision on the skin side. Pour boiling water over the mackerel on a colander to blanch. Wipe off any excess moisture on the fish.
①Make fine stripes of long onion.
②In a saucepan, combine all the ingredients A for seasonings and bring it to boil. Place mackerel in the pan
with a small lid resting directly on. Simmer for 10 minutes.
③Serve the fish on plate, then boil down the sauce for 5minutes. Pour sauce on top. Garnish with fine stripes of long onion and Shichimi pepper if desired.

◆Chili Shrim
iIngredient ( servings 2 )
200g shrimp peeled and deveined
1 egg (take egg white for C ingredient)
2 tablespoons vegetable oil
2 tablespoons cornstarch, mixed with 2 tablespoons water
A 1 /2 stalk of long onion (minced)
A 4 tablespoons ketchup
A 2 teaspoons TOBANJAN(Chinese chili source)
A 2 teaspoons sesame oil.
A 1 1/2 teaspoon grated ginger
A 1 1/2 teaspoon grated garlic
B 200mL chicken soup (dissolve chicken stock powder in water following the package instructions)
B 2 teaspoons Chinese rice wine
B 1 teaspoon sugar
C 1 tablespoon egg white
C 2 teaspoons cornstarch
C salt and pepper to taste
pre-cooking
Peel and device shrimp, Mix shrimp and 1 tablespoon water and 1 teaspoon cornstarch ( not included in ingredient) well.
Wash and drain shrimp on kitchen paper.
Mix with C ingredient(egg white, cornstarch and salt and pepper)
①Heat vegetable oil in frying pan until hot. Stir fry shrimp and cook until shrimp are done over medium heat. Dish the shrimp and remove excess oil with kitchen paper.
②Add ingredient A(ketchup, TOBANJAN sesame oil, ginger and garlic) into frying pan and mix over medium heat for 1 minute.
③Add ingredient B( chicken soup, Chinese rice wine, sugar) to frying pan and cook until it brings to boil. Add shrimp and long onion. Then cook until it brings to boil again and cook 1 more minute.
④Add cornstarch mixed with water into boiling source.Then pour beaten egg evenly and mix quickly. Dish up on the plate and sprinkle chili oil or Japanese pepper, if desired.
