RECIPE: JUICY BEEF BURGER WITH HOMEMADE MAYO
Making burger used to take longer because we have to season our burger patties. But now life become simpler when I decided to get some ready made beef burger patty from Huber's Butchery. All I have to do is to pan-fry it and it's done. It tastes so delicious and meaty and we think it goes the best with all the toppings and sauce.
The mayo sauce that we made for this Burgers is the star of the show after the meat itself. It is so easy and you can season it exactly the way you want to. I love a messy burger that is saucy, so I topped it up with some crunchy kimchi slaw, a sunny side up and lots of mayo. Look at that sexy piece of burger.
Ingredients (makes 4)
480g Huber's Butchery beef burger patty
4 Hamburger Buns
Mayo:
1 large Egg Yolk
Juice of ½ a Lemon
1 tbsp Maille Original Dijon Mustard
1 clove Garlic
1 tsp Smoked Paprika
1 tsp Cajun Spice
2 Tomatoes diced
1 - 2 cups il cavallino Extra Virgin Olive Oil
Salt and Pepper to taste
Toppings:
Tomato slices
Kehoe's Kitchen Kimchi Slaw
Mesclun Salad
Hamburger Buns
Egg
Method:
1. To make the mayo, use a hand mixer to combine the egg yolk, lemon juice, mustard, and garlic clove and process until foamy. Pour in the oil in a very thin trickle until the mixture becomes thick. Stir in the tomatoes, paprika, cajun spice and seasoning.
2. Heat the oil in a stainless skillet and cook the beef patty over a medium heat. Heat one side of the patty about 5 minutes, then flip again for another 5 minutes. This will make a medium-well burger with charred exterior.
3. To assemble, place some mayo on the bottom bun, add all the toppings and the burger in whatever order you like. Top with a sunny side up.

How to Make Beef Hamburger

200g Gound Beef (7.1 oz)
1/3 tsp Salt
Pepper
50g Onion, finely chopped (1.8 oz)
3 tbsp Panko
2 tbsp Milk
Vegetable Oil
1 tbsp Water, to cook the meat
[Sauce]
2 tbsp Tomato Ketchup
2 tbsp Tonkatsu Sauce, if not available, check out the recipe notes below
1-2 tsp Water
1 tsp Butter
2 Hamburger Buns
Butter
Whole Grain Mustard
2 slices Cheddar Cheese
2 slices Tomato, 1 cm/0.4 inch thick
20g Red Onion, thinly sliced (0.7 oz)
1 Pickle, chopped
2-3 Loose Leaf Lettuce Leaves

1) 鹹蛋十穀飯糰
材料:
十穀熟飯(退冰) 1包/ 10 mixed cooked grains 1pcs
鹹蛋 1/2顆/ salted duck egg 1/2pcs
水 20ml/water 20ml
作法:
1. 十穀熟飯先退冰,放入鍋中,倒入20ml的水,輕輕翻炒至十穀飯變軟。
2. 將十穀飯沿著鍋邊稍微整形成圓形,在米飯中間壓出一個凹洞,放入鹹蛋,再將米飯沿著鹹蛋邊緣壓緊。
3. 開小火,將底部的十穀飯煎至略焦香即可。
2) 香腸十穀飯糰
材料:
十穀熟飯 1包/ 10 mixed cooked grains 1pcs
香腸 2條/ sausage 2pcs
生菜 適量/ lettuce q.s.
作法:
1. 香腸放入鍋中,加水蓋至香腸的一半。
2. 水煮滾後翻動一下香腸,再煎至水份收乾、香腸熟,取出對切。
3. 放入1/2包加熱過的十穀熟飯,再依序放入生菜、香腸、生菜,蓋上另一半的十穀熟飯。
4. 開小火,將飯糰煎至雙面皆焦香即可。
3) 甜甜圈飯糰
材料:
十穀熟飯 1包/ 10 mixed cooked grains 1pcs
起司絲 60公克/ shredded cheese 60g
香鬆 適量/
作法:
1. 將加熱好的十穀熟飯撒上起司絲,開小火拌勻。
2. 利用鍋邊弧度,整形成圓形,再在中間挖出一個小洞,塑形成甜甜圈狀。
3. 將兩面皆煎至金黃焦香後取出,撒上香鬆即可。
4) 漢堡肉十穀飯糰
材料:
十穀熟飯 1包/ 10 mixed cooked grains 1pcs
漢堡肉 2片/hamburger patty 2pcs
起司絲 適量/shredded cheese q.s.
作法:
1. 將退冰的漢堡肉放入鍋中,用中小火將雙面煎至金黃後取出,再煎第二片。
2. 將漢堡肉多餘的油脂瀝除,擺上適量起司絲,再擺上十穀熟飯,稍微整形成圓餅狀後中間壓出一個凹槽,依序擺上起司絲、煎好漢堡肉,再壓緊實。
3. 開小火,將雙面煎至略焦香後取出即可。

チーズin煮込みハンバーグ
2個分
材料:
■ハンバーグ
合い挽き肉 400g
キャベツ(3cm角ざく切り) 200g
ベーコン(粗みじん切り)2枚
にんにく(みじん切り)1片
塩 小さじ1/2
粗びき黒コショウ 少々
スライスチーズ(モッツァレラ) 4枚
シュレッド・モッツァレラチーズ 少々
オリーブオイル 大さじ1
■トマトソース
カットトマト缶 400g
赤ワイン 200ml
しょうゆ 小さじ2
パセリ(みじん切り) 適量
作り方:
1.フライパンにベーコンを入れて弱火にかけ、脂が出てくるまで炒める。
2.にんにくを入れてさっと炒めたらキャベツを加える。塩(少々・分量外)を ふって、キャベツがしんなりするまで炒めて火からおろし、バットなどに入れて冷ましておく。
3.ボウルに合い挽き肉、塩、粗挽き黒コショウを入れて、白っぽくなるまでよくこねたら、(2)を加えて混ぜ合わせる。
4.スライスチーズの上にシュレッド・モッツァレラチーズを散らし、上からさらにスライスチーズを重ねる。手前から奥にきつめに巻いて半分に切る。
5.(3)を半分に分けて(4)を2つずつのせ、チーズがはみ出ないように成形する。
6.フライパンにオリーブオイルを入れて中火で熱し、(5) を並べて両面に焼き色をつける。
7.トマトソースの材料を加えて軽く混ぜ、蓋をしめて10分煮込む。
8.ハンバーグを取り出し、ソースを軽く煮詰めて完成!

Spring Cabbage Cheese in Stewed Hamburger
Servings: 2
INGREDIENTS
■ Hamburger
400g Ground meat (beef and pork)
200g Cabbage (cut in 3cm squares)
2 pieces Bacon (chopped)
1 clove Garlic (chopped)
1/2 teaspoon Salt
Coarse black pepper
4 slices Cheese (mozzarella)
Shredded mozzarella cheese (as needed)
1 tablespoon Olive oil
■ Tomato sauce
1 400g Can chopped tomatoes
200ml Red wine
2 teaspoons Soy sauce
Parsley
PREPARATION
1. Place bacon in a frying pan, heat over low heat and fry until it starts to release fat.
2. Add garlic to the pan and give it a quick fry, then add cabbage and sprinkle with a bit of salt, cook until the cabbage is tender, remove from heat, and put in a vat to cool.
3. Place the ground meat, salt and coarsely ground black pepper in a bowl and knead well until it becomes whitish, then add (2) and mix.
4. Sprinkle shredded mozzarella cheese on top of a slice of cheese and place another slice of cheese on top. Wrap it tightly into a roll and cut it in half.
5. Divide (3) in half and put two pieces of the rolled cheese in each, warp the meat around the cheese to make a patty that completely surrounds the cheese.
6. Pour olive oil in a frying pan and heat it over medium heat. Place (5) side by side to brown both sides.
7. Add the ingredients for the tomato sauce, mix gently, close the lid and simmer for 10 minutes.
8. Take out the hamburger steak and let the sauce cook for a little longer. Serve the hamburger topped with the sauce and sprinkle with a bit of parsley to complete!
9. Enjoy!
