You always smile so cheekily! It’s like you have something up your sleeves. You would take a piece of tissue to clean the table. After 3 wipes, run to the bin and come back to proudly tell us “Throw”! We will tell you “Cannot waste! Yeye beat!” The playful you will beat your hand to show us how yeye would lightly slap your hand if he’s home.
Aaron is 18 months old! That’s 1 and a half years of you, my dearest sonshine. You still prefer to call me Mimi which is music to my ears! You can baby-call me “mimi” for as long as you like because I know that I will miss that baby you very soon. You are still speaking mostly 1 syllabus words and some new favorite words include, mei mei, kor kor, there, nice, car, bus, throw, bang, yes, no, piggy, bubbles, egg, bread and please! Bao bao is still ba ba now. You take instructions well, better on things that interest you - like making coffee with papa and we tell you “Want to cycle?” You will run to your shoe rack, take your helmet! You love car rides and the vehicles on the road. You will look out of the windows and very excitedly exclaim “Mimi mimi!”! I don’t even have to turn to know that you are pointing at the vehicle in front of us. You will only stop calling mimi after I have acknowledged you by saying “Oh yes, is that the bus, Aaron!” You will do a slow nod, with eyes closed and say mmm!
You are still unadventurous with food, extremely particular with appearance of food. You refused red bean pancake because it’s reddish black. Your favorite food are snacks and eggs - any way we prepare, you love it! Snack reward system hasn’t worked on you - to you, no means no.
You have 8 upper teeth and 8 lower teeth, which is 3 more lower teeth from last month! You are growing way too fast, my love. It’s such a dilemma, loving to see you meet milestones yet wanting you to grow up slow. Sigh… nonetheless, I’m enjoying all the time I have with you before we start you at preschool in January 2022, when you’re 2 years old. Happy 18 months old, Aaron boy. I love you so so much! 中國人傳統習俗生日會吃紅雞蛋,從前的人會用花紅粉為雞蛋染色,但花紅粉為工業用色素不利健康,所以現在改用紅色食用色素,或者用紅色玻璃紙包裹。雞蛋是一種老少咸宜的食材,從中醫角度來看它屬性平和,有滋陰潤燥、養血安胎及健腦的功效,但怎樣吃才是最好?來看看以下Q&A能否解決你對雞蛋的疑問。
雞蛋 — 性平,有滋陰潤燥,養血安胎及健腦,適合體質虛弱、營養不良、氣血不足、產婦、孕婦等。蛋黃能健腦益智,增強記憶力,適合嬰兒及小兒適量食用。注意發燒及腹瀉不宜。
問:一天只可吃一隻雞蛋?

答:全熟烚蛋最好,因為生雞蛋含有抗生物素蛋白(avidin)令身體難以消化及吸收蛋白質,當雞蛋煮熟後蛋白結構會變化,蛋白質會易於被吸收,吃烚蛋我們可以吸收到雞蛋的蛋白質九成以上,但吃生蛋只可以吸收三至五成。而雞蛋中可能存在沙門氏菌,食用未完全煮熟的雞蛋例如溫泉蛋、溏心蛋等,會有感染沙門氏菌的風險,所以嬰幼兒、長者或抵抗力較差者宜吃全熟蛋。

Our body can absorb at least 90% of the protein if they are completely boiled, but it can only absorb 30%-50% if the eggs are still raw. Moreover, eggs might contain salmonella, so we might risk getting an infection if we eat soft-boiled eggs and poached eggs that are not fully cooked. Therefore, toddlers and elders with a weak immune system are encouraged to consume eggs that are fully cooked.

OMG! I never thought Roland would be able to replicate the taste of my favourite McDonald's Samurai Burger. Boy I was wrong! Roland's Samurai Burger is so good!! If you're not from Singapore or Thailand (which other country has Samurai burger? - lemme noe if you noe), you may not have heard about this burger before. This is a seasonal burger meaning McDonald's only serve this once a year. I love Samurai Burger because it's so juicy - drenched with the yummy sauce. Ooh Lala!! Next up, I shall get Roland to try and make McDonald's Prosperity Burger. Who here likes that too?

今日は、チョコとココアのマフィンを作りました。
食感のアクセントにアーモンドを入れると更に美味しくなります^^
サーティーワンのロッキーロードアイスが好きなので、
チョコマフィンにマシュマロ入れたら美味しそう...と思って
1回目はマシュマロを入れて焼いてみたら
生地に溶けてしまってなくなりました(笑)
生クリーム使いたくない!というコメントをたまに見かけるので
生クリームよりは常備されていそうな牛乳バージョンを作ってみました。
レモンは絞ってもいいですし、ポッカレモンなどでも大丈夫です。
Today, I baked chocolate and cocoa muffins.
Adding the almond would give a nice texture accent to the muffins.
I thought at first.... if I put marshmallow in the muffins, that would be so yummy
So at the first time, I put them and baked but, they melted completely and gone lol
Sometimes I see a comment which is like "I don't want to use a fresh cream! "
That's why I made this milk version of recipe using milk that is more often stored than fresh cream in your fridge.
You can squeeze a lemon or use a bottle of lemon juice as well.
▷Ingredients(6 muffins):
100g unsalted butter
100g sugar
2 eggs
200g cake flour
12g cocoa powder
6g baking powder
50g non-sugar yogurt
50g heavy cream
(or 50g non-sugar yogurt + 50g milk + 5g lemon juice)
50g ~ almonds
80g ~ chocolate chip
▷材料(マフィン6個分)
無塩バター 100g
砂糖 100g
全卵 2個
薄力粉 200g
ココアパウダー 12g
ベーキングパウダー 6g
無糖ヨーグルト 50g
生クリーム 50g
(または無糖ヨーグルト 50g+牛乳 50g+レモン汁 5g)
アーモンド 50g~
チョコチップ 80g~
▶作り方:
準備①バターと卵は予め室温に戻しておく。
②オーブンを180℃に予熱しておく。
1.アーモンドを適度な大きさにカットしておく。
2.無塩バター100gとグラニュー糖100gを白っぽくなるまでよくすり混ぜる。
3.溶いた全卵2個を3回以上に分けて加え、その都度よく混ぜる。
4.薄力粉200g、ココアパウダー12g、ベーキングパウダー6gの半分をふるって加えてさっくり混ぜる。(粉が多少残っている状態)
5.無糖ヨーグルト50gと生クリーム50gを混ぜ、半分加えてさっくり混ぜる。
6.薄力粉の残り半分をふるって加え、アーモンド、チョコチップも入れてさっくり混ぜる。
7.ヨーグルトの残り半分を加えて粉が見えなくなるまでさっくり混ぜる。
8.マフィンカップにグラシン紙を敷いて生地を入れる。
9.180℃に予熱したオーブンで30分~焼く。
竹串でチェックして生地がついてこなければ焼き上がり。

Q.バターは無塩ですか?有塩ですか?
お菓子には基本的に無塩バターのみ使用しています。
無塩バターに塩を加えるレシピは有塩バターではだめなのか?と質問をいただくのですが、狙った塩加減にしたいため無塩バターを使っています。
※一部過去の動画は「バター」のみの記載になってしまっています。
今後は字幕に「無塩バター」と表記するよう心がけますが、
それ以前の字幕に「バター」としか書かれていなくても
「無塩バター」を使用しています。
Q.オーブンは予熱しますか?
焼成温度に合わせて予熱しています。
家庭用オーブンは庫内が小さく扉を開けた時に熱が逃げやすいため、
焼成温度+10〜20℃で予熱し、焼くものを入れてから焼成温度に合わせて焼いています。
こちらも今後は字幕で「〇〇℃に予熱したオーブンで□□分焼く」といった形で表記するように心がけます。
