CheckCheckCin:陽光普照被視為好天氣,但熱邪過盛也會消耗氣和陰液,所以炎熱天氣下我們特別容易出暗瘡、頭瘡、喉嚨痛、發燒等上火症狀。如果所住地區溫暖又乾燥,身體需要一點點偏涼的湯水,宜選擇屬性偏涼的蔬菜入饌,例如番茄、西芹、青/白蘿蔔、白菜等,配搭具清熱解毒、消暑祛濕功效的綠豆,有助清熱解毒。
番茄 — 性涼,有生津止渴、健胃消食、涼血平肝功效,適合發熱口乾、食慾不振者食用,它亦有護膚美白的功效。惟注意番茄性涼,胃寒人士不宜食用,寒性痛經女士在月經期間勿吃,胃酸過多者不宜空腹食用。
番茄薯仔綠豆湯
功效:清熱健脾,紓緩炎熱天氣帶來的口乾、喉嚨痛、悶熱等症狀。
材料:番茄3個、薯仔2個、椰菜半個、西芹2細條、綠豆20克
做法:
1. 所有材料洗淨,番茄切件;薯仔去皮切塊;椰菜及西芹切塊備用。
2. 鍋中加入2000毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

According to Chinese Medicine theories, the pathogenic factor can invade the body and exhaust the yin, and this is why we experience dry mouth and sore throat easily.
When the body cannot dissipate heat on time, yin-yang balance is disrupted, causing us to develop a heatstroke. Therefore, individuals who live in dry and warm areas should consume soups and vegetables that are cool in nature such as tomato, celery, green/white radish, Chinese cabbage, not forgetting mung beans, which can relieve the summer-heat and clear toxins from the body.
Tomato - cool in nature, has the effects of promoting fluid promotion, quenching thirst, strengthening the stomach, aiding digestion, cooling blood and calming the liver. Suitable for fever, dry mouth, those with poor appetite. It can nourish and whiten skin. But it is cool in nature making it not suitable for those with cold stomachs. Women with cold type menstrual pain should not eat tomatoes during menstruation. Those with gastric hyperacidity should not consume it with an empty stomach.
Tomato and potato soup with mung bean
Effects: Clears heat and strengthens the spleen, relieves dry mouth, sore throat, stuffiness and other symptoms caused by hot weather.
Ingredients: 3 tomatoes, 2 potatoes, 1/2 cabbage, 2 stalks of celery, 20g mung bean
Preparation:
1. Rinse all ingredients thoroughly. Cut the tomato into pieces. Peel the potato and cut into pieces. Cut the cabbage and celery into pieces.
2. Combine all ingredients with 2000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

1. 急凍比目魚扒,連包裝袋,清水解凍。
2. 比目魚已解凍,檢查是否已打好魚鱗,除去內臟,輕手清水洗乾淨。
3. 比目魚,廚紙索乾。
4. 在比目魚上,灑上少許鹽。
5. 豆腐卜,清水沖洗乾淨,輕手揸乾水。
6. 粉絲,清水浸軟。
7. 薑,去皮,切片。
8. 預備醬汁:
a. 雞汁1茶匙
b. 生抽1茶匙
c. 糖1茶匙
d. 胡椒粉半茶匙
e. 水300毫升
攪勻。
烹調:
1. 中火在鑊中燒熱油1湯匙。
2. 爆香薑片。
3. 加入豆腐卜炒香。
4. 預備好煲仔。
5. 聞到薑的香味,倒薑片及豆腐卜入煲仔,開最慢火,慢慢燒熱。
6. 在鑊中,中火燒油1湯匙。
7. 比目魚,沾上生粉。
8. 放魚落鑊,中火慢煎。
9. 蟲草花,清水浸2分鐘。
10. 反轉比目魚。
11. 煲仔內,撥薑片及豆腐卜埋一邊,放粉絲。
12. 蟲草花已浸水2分鐘,清水洗乾淨,揸乾水,放入煲仔。
13. 放比目魚入煲仔。
14. 轉大火。
15. 倒醬汁入煲至滾起。
16. 完成,可享用。
Fish claypot with cordycep flowers:
Ingredients:
Frozen halibut 3 pcs
Cordycep flowers 50g
Tofu puffs 10 Nos.
Vermicelli 80g
Ginger 10 slices
Preparation:
1. Frozen halibut, defrost with package bag in tap water.
2. Halibut has been defrosted, check if it has been totally scaled. Remove its intestines. Rinse with tap water lightly.
3. Halibut, dry with kitchen towel.
4. Put little salt on halibut.
5. Tofu puffs, rinse with tap water. Squeeze them lightly.
6. Soak vermicelli in tap water.
7. Ginger, get it peeled. Slice it.
8. Prepare the sauce:
a. Chicken sauce 1 tsp
b. Light soya sauce 1 tsp
c. Sugar 1 tsp
d. Pepper 0.5 tsp
e. Water 300ml
Mix well.
Steps:
1. Heat up oil 1 tbsp at medium flame in wok.
2. Fry ginger slices.
3. Fry tofu puffs.
4. Get the claypot ready.
5. Put ginger slices and tofu puffs into pot once you feel the scent of them. Heat up at low flame.
6. Heat up oil 1 tbsp at medium flame in wok.
7. Put tapioca starch on halibut.
8. Fry the halibut at medium~low flame in wok.
9. Soak cordycep flowers in tap water for 2 minutes.
10. Flip over the halibut.
11. Push ginger and tofu puffs to the edge of pot. Put vermicelli.
12. Cordycep flowers have been soaked in tap water for 2 minutes, rinse with tap water. Squeeze them then put into pot.
13. Put halibut into pot.
14. Turn to high flame.
15. Pour the sauce into pot. Wait for boiling up.
16. Complete. Serve.

? 炒椰菜 重點?
想炒椰菜有爽脆感覺,可以首
先將較硬椰菜炒三分鐘,其後
再將菜葉加入,快炒兩分鐘,咁
就有爽脆感覺
材料:
椰菜1個
調味料:
鹽半茶匙
糖半茶匙
處理:
1. 將椰菜1個開2分。
2. 頂部較硬的部分,再1開4分,將菜心中間部分盡量切薄片,清洗乾淨。
3. 底部較軟的部分,1開6分,清洗乾淨。
4. 浸10分鐘,擎乾水備用。
烹調:
1. 放1/2湯匙油落鑊,用中火燒熱。
2. 先放較硬的部分,炒3分鐘至軟身。
3. 放剩下的椰菜落鑊,再加1/2湯匙油落鑊,炒勻。
4. 收細至中慢火,落鹽及糖,再將火調較至中大火,再炒2分鐘,直至全部椰菜軟身為止。
5. 上碟。
Frying cabbage:
Ingredients:
Cabbage 1 No.
Seasoning:
Salt 1/2 tsp
Sugar 1/2 tsp
Preparation:
1. Divide cabbage into two.
2. Divide the top part of cabbage (the harder part) into 4 shares. Slice thinly at the middle of the cabbage, clean thoroughly.
3. Divide the bottom part of the cabbage into 6 equal shares, clean thoroughly.
4. Soak in water for 10 minutes, hang dry.
Steps:
1. Heat up 1/2 tbsp oil at medium flame in the wok.
2. Put the harder part frying 3 minutes until it becomes soft enough.
3. Put the remaining cabbage into wok, add 1/2 tbsp oil more into wok, fry evenly.
4. Adjust to medium~low flame, put salt and sugar, then turn to high flame, frying 2 more miutes until the cabbage is soft enough.
5. Serve.

I came across a fried rice called “Not A Fried Rice” when dining at a Shanghainese restaurant one time. I was so intrigued by its name and wondered where the rice had gone in this “fried rice”. The magic revealed when it was served on table. The rice was replaced with cauliflower that was chopped very finely. The texture was like the real fried rice, but without the heaviness that ordinary fried rice would have and the drowsiness that came after when you had eaten too much carbs. I love the fact that by eating this “fried rice”, you can actually increase fibre intake a lot. Cauliflower is a very healthy food, which is under the category of cruciferous vegetables. Other vegetables in this category include broccoli, kale, arugula, cabbage etc. They all have anti-inflammatory and anti-cancer function.
We love to add fresh fruit to fried rice to bring more stimulations to our taste buds. I chose to add red pitaya this time. Not only because it can make the fried rice turn into a dazzling purple colour, but it also contains a very strong antioxidant called betalains that can slow down skin ageing!!
Red Pitaya “Fried Rice”
Recipe for 2 portions
Heura plant-based chicken (diced) half box
Cauliflower (finely chopped) half pc
Rice 1 bowl
Fresh corn kernels half pc
String beans (diced) half bowl
Red pitaya (diced) half pc
Minced ginger 2 tsp
Minced garlic 2 tsp
Salt to taste
Soy sauce to tase
1. Heat oil in a pan, pan-fry plant-based chicken until both sides turn golden brown. Set aside.
2. Slightly stir-fry corn and string beans until soften. Set aside.
3. Add cauliflower to pan, season with a little bit of salt. Stir-fry cauliflower until it becomes dry and crumbly.
4. Add a little oil, stir-fry garlic and ginger until aromatic.
5. Add rice and stir-fry it to loosen up. Once the rice turns a bit golden brown on the outside, add cauliflower, plant-based chicken, corn and string beans. Season with soy sauce.
6. Add red pitaya and turn off the heat. Mix all the ingredients well and serve.

曾經一次出街食飯的時候吃過一個名為「不是炒飯」的炒飯,最初真的很好奇究竟是用甚麼來炒這毎飯。上枱後發現原來是用椰菜花切碎扮成飯!吃的時候感覺很神奇,口感真的很像炒飯!但吃這個椰菜花炒飯卻沒有一般炒飯飽飽滯滯的感覺,亦不用怕因為吃得太多澱粉質而引致的「飯氣攻心」睡魔急call,同時纖維攝取量亦大大提升。當然椰菜花亦是非常健康的食物,它屬於十字花科蔬菜,同類的蔬菜包括西蘭花、羽衣甘藍、火箭菜、椰菜等,它們都具有抗炎和抗癌的功效。
炒飯很多是都會加入水果,令炒飯酸酸甜甜更開胃。今次選了紅肉的火龍果,煮好後整個炒飯會變成迷人的紫紅色,真是很靚!除了外貌吸引之外,最重要是紅肉火龍果含有的超強抗氧化物甜菜紅素,它可以減慢肌膚老化,愛美的你一定不能錯過。
火龍果美顏炒飯
二人份量
Heura 植物雞(切粒)半盒
椰菜花(切微粒)半個
飯 1碗
新鮮粟米粒(半條)
四季豆(切粒)半碗
紅肉火龍果 (切粒)半個
薑蓉 2茶匙
蒜蓉 2茶匙
鹽 適量
豉油 適量
1. 熱鑊下油,將植物雞煎至兩面金黃色,盛起備用。
2. 把粟米和四季豆下鑊略炒至軟身後盛起。
3. 椰菜花碎下鑊炒,加少許鹽調味,炒致乾身後盛起。
4. 下少許油,爆香薑蓉和蒜蓉。
5. 加入白飯炒散後,待飯面轉微微金黃色後,把椰菜花、植物雞、粟米和四季豆回鑊炒勻,加入豉油調味。
6. 最後下紅肉火龍果,熄火後炒勻,讓飯粒和椰菜粒沾上火龍果汁後便可上碟。
