Using @orasi_asia Almond milk, I did a Green Apple with cranberry oats cups. It has a hint of green apple sour sour and almond milk fragrance which is a great snacks for the kids or can be a main meal for weaning baby. This oats cup is high in iron, calcium and vitamins for our growing child.
🍏 Green Apple With Cranberry Oats Cup
Ingredients
300g oats
200g @orasi almond drink
1 Green apple, blend into small pieces
2 eggs
50g cranberry
1 tsp baking powder
15mls olive oil
1 tsp vanilla extract
Steps:
👉 Preheat the oven at 180°C and spray your muffin tray with oil or use cupcake paper liners.
👉 In a bowl, mixed in oats and baking powder.
👉 In another bowl, mixed in Apple, eggs, oil and vanillalla extract until well combined. Add in the dry ingredients at step 2.
👉 Slowly pour in almond milk and stir until combined.
👉 Continue to stir and add in cranberry.
👉 Scoope the mixture evenly into your muffin tray
👉 Baked for 25-30mins. Insert a toothpick and if it comes out clean meas it's baked.
👉 Enjoy! You can also put it in the fridge or freezer. Just need to head it up using toaster or microwave. For frozen just thaw before reheat.

【Ingredients】Baking cup(Φ 4.5cmH3.5cm) 6servings
1Egg(Medium))*beaten egg(room temperature)
70g Vegetable oil (Any oil you like)
70g Plain yogurt
20g Milk(room temperature)
150g Cake flour
70g cane sugar
3g baking powder
【Directions】
Preparation: Preheat the oven to 180°C.
①Beat the egg well and add the oil little by little and mix well with a whisk.
②Add yogurt,milk and mix well.
③Shift and add cake flour, cane sugar and baking powder, and mix.
④Line the muffin tray with glassine paper, pour in the batter.
⑤Bake it in the preheated oven (180°C) for about 15-16 mins.
⑥When they're baked, cool them on a cake cooler.
memo
Stick into the muffins with a bamboo skewer and if nothing sticks to the skewer, it's done.
However, if you bake them too much, they will be dry, so please be careful.
The baking time depends on pans, bake for the proper time.
When the heat went away, put it in a plastic bag or wrap it.
【材料】カップの底の直径は4.5cm高さ3.5cm(6個出来ます♪)
卵(M) 1個(室温)
米油(又は太白胡麻油、サラダ油など) 70g
プレーンヨーグルト 70g
牛乳(室温) 20g
薄力粉 150g
きび砂糖 70g
ベーキングパウダー 3g
【作り方】
準備:オーブンは180℃に温めておく
①卵はよく溶いて、ここに油を少しずつ加えながら泡立て器でよく混ぜる。
(分離した状態から卵と油がきちんと混ぜ合わさった状態にする)
②ヨーグルト、牛乳を加えてよく混ぜる。
③薄力粉、きび砂糖、ベーキングパウダーをふるって加え、泡立て器でぐるぐる混ぜる。
④マフィン型に生地を流し入れる。
⑤予熱したオーブン(180℃)で15〜16分ほど焼く。
⑤焼きあがったら、ケーキクーラーの上で冷ます。
竹串に何もついてこなければ焼き上がりですが、焼きすぎるとパサパサになってしまうので、焼きすぎないようにする。
冷めたら乾燥しないようにビニール袋などに入れる。

かぼちゃが少し残っていたので、チョコチップを加えてマフィンに!バターが相変わらず品薄なので、生クリームを使うレシピにしてみました。マッシュかぼちゃと生クリームでしっとり濃厚でいい感じです。焼きたての方が美味しいですが、前日の夜焼いて翌日プレゼントしても大丈夫です♡

【Ingredients】Mini cupcake mold, bottom Φ3.5cmH2cm
(14 muffins)
140g Kabocha Squash (Japanese Pumpkin) net weight140g
35g Sugar
100g Heavy Whipping cream
1Egg(large)*beaten egg(room temperature)
100g Cake flour
30g Almond flour
3g baking powder
50g Chocolate Chip
【Directions】
①Remove the kabocha skin and cut, then put them in a heat-resistant container and wrap, and soften them in the microwave. (for 3 mins at 600W)
Preheat the oven at 170°C.
②mash it while it's hot, add sugar and Heavy Whipping cream, and mix well each time.
③Add beaten egg, mix well.
④Shift and add cake flour, almond flour and baking powder, and mix.
⑤Add chocolate chip mix.
⑥Put the mixture into a pastry bag, and squeeze it into muffin cups.
⑦Bake it in the preheated oven (170°) for about 16 mins, and serve!
【材料】マフインカップ底Φ3.5cmH2cm 14個
南瓜(正味) 140g
砂糖 35g
生クリーム 100g
卵(L)1個
薄力粉 100g
アーモンドプードル 30g
ベーキングパウダー 3g
チョコチップ 50g
【作り方】
①南瓜は皮の部分を取り除き、小さく切ったら耐熱容器に入れたら、ラップをして電子レンジ600w3分ほど加熱して柔らかくする。
電子レンジを使い終えたら、オーブンを170℃に予熱スタート。
②南瓜が熱い内に潰して、砂糖、生クリームを加えてよく混ぜ合わせる。
③溶き卵を加えてよく混ぜる。
④薄力粉、アーモンドプードル、ベーキングパウダーをふるって加え粉っ気が無くなるようにざっと混ぜる。
⑤最後にベイクド用のチョコチップを加えて混ぜる。
⑥生地を絞り袋に入れて、マフィンカップに絞り入れる。
⑦170℃に温めたオーブンに入れて約16分ほど焼いて出来上がり。
*もう少し大き目マフィンカップで焼きたいとき。
底の直径5.4cm高さ4cmのマフィンカップの場合
この分量で4個出来ます。
焼き時間は170℃で16分で竹串を刺してみて生のようなドロッとした生地が
つかなければokですがあまり焼きすぎるとパサつきますので注意します。

Ingredients:
egg whites 2
sugar 100g
all-purpose flour 63g
cornstarch 3g
rice flour 20g
salt 1.5g
vegetable oil 32g
Water 25g
Vanilla extract 5g
Instructions
1. Add the egg whites and vanilla extract, water, vegetable oil to a bowl and use a whisk to beat until frothy. Set aside.
2. In a medium bowl, sift in all-purpose flour and rice flour, cornstarch, use a whisk to incorporate all dry ingredients.
3. Add sugar and salt, mix well.
4. Use your hand to create a well in middle of dry ingredients.
5. Add about half egg white mixture, smash that together and stir well.
6. Pour the rest of egg white mixture, stir until smooth.
7. Place 1 tablespoon of batter onto a baking sheet and use a spoon to spread into 9 cm circle.
8. Repeat with another batter circle, do not make too many, because you just have a little time to fold them. Two is ideal.
9. Preheat oven to 170C, bake for 10-11 minutes or until the edges become golden brown.
11. Work quickly, first flip them over, it's easier to put the fortune in the middle, and then fold the cookies in half.
12. Use a cup to fold and bend a fortune cookie into shape.
13. Put the folded fortune cookies in a small muffin or tart pan to hold the shape until firm. It's done.
