台灣時間有點晚了,不過因為消息太震撼,我還是快速分享一下。我七月才訪問過的 Maxime Frédéric 主廚將在今年10、11月時 #離開巴黎喬治五世四季酒店、#加入將在明年開幕的巴黎白馬莊園豪華酒店(Cheval Blanc Paris)。
Cheval Blanc Paris 屬於 LVMH 精品集團下的豪華酒店「白馬莊園」(Cheval Blanc)下最新的旅館,該酒店目前在法國 Courchevel(滑雪度假勝地)、Saint Tropez(蔚藍海岸度假勝地)、Saint-Barthélemy(法屬西印度群島聖巴特雷米)、Maldives(馬爾地夫)都有設點,其中 Saint-Barthélemy 的白馬莊園更是法國25家宮殿級酒店(palace)中的其中一家。
巴黎白馬莊園的高級餐廳主廚將由同樣來自諾曼地的 Arnaud Donckele 擔任,他目前也同時掌管白馬莊園酒店在 Saint Tropez 的餐廳。
這下我突然明白,為何在訪問當時 Maxime 說有個新目標,但「現在不能告訴你」😅 且突然讓我去拍了他所有甜點作品,原來是要做作品集的概念啊!
👉🏻👉🏻👉🏻 Maxime 離開喬治五世四季酒店意謂巴黎甜點圈又將有一波大變動,接下來不曉得哪一位甜點主廚會去接他的位置、是否會影響四季酒店三個餐廳的廚房管理與營運,甚至影響明年的米其林評鑑,通通都會和骨牌一樣造成連鎖效應。計畫要來巴黎的大家也要把握機會,不知道 Maxime 離開之後,他所創作的甜點是否還會持續留在菜單上、還是會成為絕響?

Maxime Frédéric, the current head pastry chef of Hotel George V Paris is leaving the hotel and joining Cheval Blanc Paris this coming October / November. The latter is expecting its opening in early 2020.
The Cheval Blanc Paris is the latest property of Cheval Blanc collection, a luxury hotel brand under the LVMH hotel management. The collection runs 4 other hotels in Courchevel, Saint Tropez, Saint-Barthélemy and Maldives. The one in Saint-Barthélemy is recognised as a “palace hotel” in France (there are 25 in total for the moment). The collection also aims to open one in London in 2022.
Arnaud Donckele, the head chef that will lead the cuisine kitchen of Cheval Blanc Paris now also manages the one in Saint Tropez.
This news actually means that some changes (and more news) are expected to take place in the following months, for example, the successor of Maxime, the potential adjustment of the management and operation of the 3 kitchens at hotel George V, the possible impact on the 2020 Michelin guide, etc. And I guess it’s time for the pastry lovers to go taste Maxime’s desserts as we never know if they are going to stay in the menu later.
