I was really skeptical when it comes to the claypot for dessert but Marcus Low convinced me that it's something light . In fact, his exact word was ; " that's actually the lightest".
Well I'm glad I took his words. It's something so unique with a heap mix of emotions as every components from this artpiece combines in your mouth. It is after all a chilled dessert ironically served in claypot with that smokey burnt aroma that you'll only get from the result of claypot used in cooking; and getting that robust profile in a dessert? That's just mind blowing. Some great deal of molecular cooking for sure. Something you've got to try it for yourself to believe in the possibility of "magic" that is derieved from food science.
