HAWAIIAN CHICKEN PIZZA
Pizza dough
* 2-2 ⅓ cups bread flour
* 1 packet instant yeast (2 ¼ teaspoon)
* 1 ½ teaspoons sugar
* ¾ teaspoon salt
* 2 Tablespoons olive oil + additional
* ¾ cup warm water
Toppings
* 2 small chicken breasts cooked then chopped in 1-inch pieces
*1/2 cup marinara
*1/2 cup barbecue sauce divided
* 3 slices cooked bacon chopped
* 2½ cups shredded Mozzarella cheese
* ½ cup pineapple tidbits
* thinly sliced red onion use as much or little as you like
* chopped cilantro optional
* black pepper
1. For pizza dough, mix yeast, sugar and warm water. Leave aside for about 5 mins. In a big bowl, mix flour and salt. Make a well in the middle of the flour mixture and pour in olive oil and yeast mixture. Incorporate ingredients and mix till you get a soft dough. Knead till elastic and smooth (about 5 mins). Leave to rest, covered with a damp cloth for about 45 mins. Once dough is doubled in size, punch down and flatten.
2. Place flatten dough in a cast-iron pan that has been heated in an oven at 220C for 15 mins. Top with marinara, bbq sauce and spingkle as much of the other toppings as you want. Finish with a generous amount of mozzarella. Bake in oven for 15-20 mins or until crust is fully crisp.

じゅわとっとだし汁が溢れ出す揚げ出しレシピ♫
たっぷりの大根おろしと一緒にいただくので、揚げ物だけどさっぱりいただけます。

揚げだし鶏もも大根
2人分
材料:
鶏もも肉 300g
酒 大さじ1/2
塩 適量
片栗粉 大さじ3
揚げ油 適量
◾︎だし汁
だし汁(白だしめんつゆ使用)
※表示の通りうどんの汁くらいにうすめて 参考:めんつゆ60ml+水320ml
しょうゆ 大さじ1
大根おろし 5センチ分
えのき (根を切り落とし5センチの長さに切る) 小1袋
一味唐辛子、ねぎ お好みで
作り方:
1.だし汁を作る。だし汁、しょうゆを鍋に入れ、煮たったらえのきを入れ一煮立ちさせ、大根おろしの半量を入れる。
2.鶏肉の余分な脂や筋を取り一口大に切って、酒と塩を揉み込み下味をつける。
3.(2)を袋に入れて片栗粉をまぶし、油で揚げる。
4.(3)を器に盛り付け、(1)のだし汁をかける。
5.(4)に残りの大根おろしと、お好みでねぎや一味唐辛子を添えたら、完成!

Fried chicken with dashi broth
Servings: 2
INGREDIENTS
300g chicken thigh
1/2 tablespoon sake
Some salt
3 tablespoon potato starch
Some oil (for frying)
◆Dashi broth
Noodle soup base (dilute with water as a package instruction)
1 tablespoon soy sauce
5cm Japanese radish aka Daikon (grated)
1 packet enoki mushroom (remove the root, cut into 5cm pieces)
Some chili powder
PREPARATION
1. To make dashi broth, heat diluted noodle soup base and soy sauce in a pan. Add enoki mushroom when boiled. Add half of grated daikon.
2. Remove excess fat and tendons from chicken thigh. Cut into bite-size pieces. Season with salt and sake.
3. Coat the chicken with potato starch in a plastic bag, then deep-fry.
4. Place fried chicken (3) in a bowl. Pour dashi broth (1) over the chicken.
5. Put rest of grated daikon. (Sprinkle with chili powder as you like.)
6. Enjoy!

カルツォーネ
材料:
4人分
■生地
ぬるま湯 ¾カップ (180 ml)
インスタントイースト 小さじ1 ½ (1/2 packet)
薄力粉 2カップ (250 g), plus more for dusting
塩 小さじ1 ½
オリーブオイル 大さじ1
中身
イタリアンソーセージ 3本 (薄い皮から出して崩したもの)
玉ねぎ ½個 (角切り)
塩 小さじ½ + ひとつまみ
黒コショウ 小さじ½
マリナラソース ½カップ (130g) + 適量(ディップ用)
ハム 8枚
ペパロニ 20枚
モッツァレラチーズ 1カップ (100g)
卵 大1個
作り方:
1.生地を作る: 中型のボウルに、ぬるま湯、イースト、薄力粉、塩を入れて混ぜる。生地がまとまるまで、ゴムベラでよく混ぜる。
2.清潔な作業面に軽く小麦粉をまぶし、生地を裏返して1~2分こねる。滑らかになってきたら、生地をボール状に整える。
3.大きめのボウルにオリーブオイルを振りかけ、生地を入れて、表面全体に油が回るように塗る。キッチンタオルで覆って1時間ほど寝かせる。(約2倍の大きさになる)
4.オーブンを220˚Cに予熱しておく。天板にクッキングシートを敷く。
5.生地を発酵させている間に、中身を作る:テフロン加工のフライパンにソーセージを加え、色が変わるまで中火で5~6分炒める。玉ねぎ、塩、コショウを加え、さらに5分以上炒め、ソーセージに焼き色がついたら、火からおろし、冷ます。
6.生地が発酵できたら、軽く小麦粉をまぶした作業面に取り出す。生地を4つに分け、それぞれ厚さ5mm程度に丸く伸ばす。
7.生地1枚の半分に1/4量のソースを塗り、端に1cmの縁を残す。その上にハム2切れ、ペパロニ5個、(5)の1/4、モッツァレラチーズ1/4カップ(25g)をのせる。
8.卵に塩をひとつまみを加えて混ぜる。残した生地の縁に卵液を塗り、生地の半分を折り返し、端を押し合わせる。片方の角から始めて、生地をねじりながら折り重ねる。もう片方の角を下にしぼる。用意した天板にカルツォーネを移す。卵液を軽く塗り、湯気が出るように包丁で十字に切り目を入れる。
9.15~17分、きつね色になるまで焼き、5分ほど冷ます。
10.お好みでカルツォーネにマリナーラソースをかけて、完成!
Classic Meat Lover’s Calzones
Servings: 4
Prep time: 30 minutes
Cook time: 20 minutes
Total time: 1 hour 40 minutes
INGREDIENTS
Dough
¾ cup warm water
1⅛ teaspoons instant yeast (½ packet)
2 cups all-purpose flour, plus more for dusting
1½ teaspoons kosher salt
1 tablespoon olive oil
Filling
3 links Italian sausage, casings removed and sausage crumbled
½ yellow onion, diced
½ teaspoon kosher salt, plus a pinch
½ teaspoon black pepper
½ cup marinara sauce, plus more for dipping
8 slices deli ham
20 slices pepperoni
1 cup shredded mozzarella cheese
1 large egg
PREPARATION
1. Make the dough: In a medium bowl, combine the warm water, yeast, flour, and salt. Mix with a rubber spatula until well-combined and the dough comes together into a ball.
2. Lightly flour a clean surface, then turn the dough out and knead for 1-2 minutes to smooth and encourage gluten development. Shape the dough into a ball.
3. Drizzle the olive oil in a clean large bowl. Add the dough ball and turn to coat in the oil. Cover with a kitchen towel and let rise for 1 hour, or until doubled in size.
4. Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
5. While the dough is rising, make the filling: Add the sausage to a medium nonstick pan over medium heat and cook until no longer pink, 5-6 minutes. Add the onion, salt, and pepper and continue to cook until the sausage is browned, about 5 minutes more. Remove from the heat and let cool.
6. After the dough has risen, turn it out onto a lightly floured surface. Divide the dough into 4 portions, then roll each into and round about ¼-inch thick.
7. Spread ¼ of the sauce over one half of each dough round, leaving a ½-inch border along the edge. Top each one with 2 slices of ham, 5 pepperoni, ¼ of the sausage and onion mixture, and ¼ cup of mozzarella cheese.
8. Lightly beat the egg with a pinch of salt. Brush the egg wash on the border of the dough, fold the other half over, and press the edges together. Starting from one corner, fold the dough over itself in a twist. Tuck the other corner underneath. Transfer the calzones to the prepared baking sheet. Brush lightly with egg wash and score the tops with a knife to allow steam to escape.
9. Bake for 15-17 minutes, until golden brown. Let cool for 5 minutes.
10. Serve the calzones with marinara sauce for dipping, if desired.
