Perhaps, Chef Maxime simply likes things to be complicated therefore he favours one particular cooking technique -  kombu jime i.e wrapping marinated ingredients (usually seafood) with kombu, allowing it to absorb the umani flavour of the kombu. The result: sophisticated taste layering. On this basis, Chef Maxime created Beef Cecina Jime. He wraps sea bream fillet with Cecina de Leon (Spanish air-dried cured beef) and pairs it with asparagus poached in seawater （pic 2). To complete the dish, he grates some bottarga on top to complement the savory beef flavour infused in the sea bream fillet. Voila, the complex flavours of sea and land intertwine with every mouthful.    

也許是「喜歡複雜」，所以Chef Maxime特別著重一種料理手法：日式的昆布醃（kombu jime），就是把食材（通常是魚鮮）以昆布裹起進行醃製，好讓食材吸收昆布的鮮味，吃起來更有一言難盡的層次感。他把這個概念轉化成用西班牙風乾牛肉火腿包裹著鯛魚片來作「Beef Cecina Jime」，再以這鯛魚片配海水灼熟的青蘆筍來吃，然後刨上烏魚子來配搭鯛魚片裡鹹香牛肉味，海陸的熟成滋味就在暗地裡交接。

This time, I didn't pour the whole batch in mold to make the solid bars, instead, I kept some and turned them into liquid forms. (I personally like using liquid soap than the bars.)

The making process in this video is a bit complicated because I tried to make three types at the same time. If you only want to make the liquid one, then you can simply add sufficient water from the beginning and save a lot of time heating.

【固體皂配方/recipe of solid bars】
椰油醯基谷胺酸/cocoyl glutamic acid: 35%
丙二醇/propylene glycol: 9%
甘油/glycerin: 10%
三乙醇胺/triethanol amine: 25%
純水/purified water: to 100%
香精/fragrance oil: 2%
胺基酸起泡劑/foaming agent: 3% (optional)
　- sodium lauroyl methylaminopropionate
　- sodium lauroyl sarcosinate

Many people (like 5!) asked me about my views on climate change so here it is! The video can be pretty tedious if climate change isn’t a topic you are interested in in the first place, but I felt that climate change is such a complicated topic that without a long ass video I can’t really properly explain my disdain for Greta Thunberg’s speech.

Yes I know she’s a teen and she’s autistic but it doesn’t change the fact that she’s preaching a dangerous message that will have serious negative economic impact, especially on the poor and for poorer countries.

If you can’t be bothered to watch the entire video, here is the TDLR: The climate crisis cannot be solved simply blaming people for their greed. Everything comes at a cost and the current climate situation is the price to pay for the peace and prosperity that we all enjoy. Everyone is to blame. To implicate change comes with cost, which doesn’t mean we shouldn’t try to improve the current climate situation, but people should be made aware of the cost first. Actually I can’t really summarize it just watch the video goddammit
