We visited Huat Huat Land at Singapore Chinese Cultural Centre this Chinese New Year to behold their life sized pineapples, beautifully illustrated murals and gigantic mahjong tiles. We were then inspired to create a recipe using leftover ingredients from Chinese New Year like pineapples, Sio bak and bak kwa!
Here's a simple recipe that you can make with your leftover ingredients that tastes amazing! The combination of pineapples and Sio bak is just heavenly as there is a balance of sweet, savoury and tart. The taco shells also add a nice crunch to the texture together with the fried shallots.
Do check out the Huat Huat Land exhibit, going on until the 31st of March 2020

Have you tried bak kwa baked pasta? That was actually the monkies' idea when I left them to decide on the ingredients instead of the usual chicken or beef. And I have to say it tasted pretty good... helped mostly in part by the extremely cheesy taste of Perfect Italiano Parmesan Grated Cheese! The cheese is matured up to 21 months, giving it that sharp and savoury taste. With its 100% authentic cheese taste and full range of easy-to-use cooking cheese, it's no wonder that Perfect Italiano is the #1 cheese brand in Singapore.
And in case you are wondering about the monkies' bak kwa baked pasta recipe? Here it is:
Bring a medium pot of salted water to a boil over high heat. Add a cup of pasta and cook until just tender, stirring occasionally, about 5 minutes. Drain pasta into a large mixing bowl. Meanwhile, put 2 tablespoons of olive oil in a medium saute pan over medium heat. Add the 1/2 cup of diced onions and 1 clove of minced garlic, stirring to combine, and cook until the onions are soft. Add in 1/2 cup of bak kwa (cut into tiny pieces) and continue to fry for another 3 minutes.
Put the mixture into the bowl with the cooked pasta. Add 1 can of diced tomatoes, 150g of Perfect Italiano Mozzarella Grated Cheese, 1/4 teaspoon salt and pepper. Stir to combine. Place the mixture in a baking dish. Sprinkle 50g of Perfect Italiano Parmesan Grated Cheese on the top of the pasta mixture. Preheat the oven to 400 degrees and bake until the top is golden brown, about 30 minutes.
If your kids love bak kwa like my monkies, they will wolf down this dish with a local twist! Do give this a try and let me know what you think. And should you have recipes with local dishes that incorporate cheese too, share them and other cheesy tips with the hash tag #saycheese!

Bak Kwa is one of the snacks that we Singaporeans always must have at home for Chinese New Year. I dunno when this became a tradition but i guess it's because bak kwa is expensive so usually families will only eat this during festive period.
Bak kwa, also known as rou4 gan1 in Chinese, is a savoury and sweet dried meat product that is similar to jerky. In Singapore, it is usually made of pork. Bak kwa can also be found in Malaysia.
If you like to buy a Magimix food processor, head up to Robinsons, Tangs, Metro, Takashimaya, OG, BHG etc in Singapore to get one for yourself or your loved ones. This is the last recipe we prepared specially for Chinese New Year. We thought this Chicken Soup with Pears is an excellent dish to be added on your reunion dinner menu because of its cooling effects. I’m not sure about you but we’re definitely going to gobble down lotsa bak kwa, love letters, pineapple tarts and other heaty food so this soup can help balance things out a little (or so we hope ?)
Refer to the ingredient list below or go to our website here http://spicenpans.com/chicken-soup-with-pears/ for your easy reference.
We would like to give special thanks to La Gourmet for letting us try out their thermal wonder pot. It's really useful for busy peeps who still like to enjoy yummy home cooked food. If you like to buy them, you can go to any of the major department stores in Singapore such as Isetan, Robinsons, BHG, OG, Metro or Tangs.
Hope you can recreate this yummy dish in the comfort of your home. Thanks for dropping by our channel.
