I am a lover of Te Mana Lamb, as their breeding program and diet makes them almost the equivalent of what people consider 'Wagyu Beef', and even many top Michelin starred restaurants use them. Sometimes it is even sold as a 和羊 for marketing purposes albeit its not related to Japan, but the irony being Japan traditionally doesn't really breed Lamb for meat produce except Hokkaido for eating it as a Chinese Genghis Khan way, almost a sole exception when you can order anything from Deers to Bears, Horses, Whales, etc there.. And compared to all the Saltbush or Seaweed eating lambs in Australia or Europe, these just have a diff taste profile. Nom Nom ~!
