【油適不適合熱炒,只看發煙點嗎?】
許多朋友來買油,常問我們不同油的發煙點幾度?可不可以熱炒?多數人把發煙點,當作判斷油適不適合熱炒的唯一指標,但您知道嗎,還有其他因素,比發煙點更重要。
「發煙點」是指加熱的油開始產生煙的最低溫度。在此溫度之下,一些揮發物質如水、游離脂肪酸、氧化降解之短鏈產物會從油品逸散出來,產生可識別的青煙。此時油品的變化會加劇,可能產生有害物質。
因此一般民眾會選擇高發煙點的油,以為只要在發煙點以下,一般煎煮炒炸就安全無慮了。但真的是這樣嗎? 舉個例子,一般精煉油發煙點都在攝氏220度以上,所以廠商都宣稱這些油適合熱炒,但是這些油只要在220以下烹煮就安全嗎?
除了發煙點外,影響油質受熱氧化的因素還有:
1. 油的抗氧化能力
2. 脂肪酸的飽和程度
♦油的抗氧化能力:
一般的初榨油大都含有不同種類的天然抗氧化劑,例如維他命E、β-胡蘿蔔素、 多酚、木酚素等等,這些抗氧化劑對油質受熱時,能夠保護脂肪酸鍊,替代脂肪酸因過熱受自由基攻擊而快速鍊解。葡萄牙的學者(註1)將特級初榨橄欖油、純橄欖油(精煉後)、以及橄欖果渣油(精煉後)用油炸實驗比較,指出「特級初榨橄欖油中的維生素E,酚類和β-胡蘿蔔素對油炸中氧化穩定度扮演決定性的角色」。一般的精煉油在製油過程中,把油中的營養物質都處理掉了,雖然提高了油的發煙點,但沒有抗氧化元素,因此油受熱的耐受性不佳,變質的速度較快,縱使油溫還沒到達發煙點,也可能因加熱時間增長而變質。另有學者(註2)將初榨橄欖油、玉米油、大豆油及葵花籽油做實驗,發現對熱的氧化穩定度由高到低分別為初榨橄欖油>玉米油>大豆油>葵花籽油。
♦脂肪酸的飽和程度
另一個影響油質受熱穩定性的因素是油質脂肪酸的飽和度,脂肪酸飽和度是指脂肪酸結構中含雙鍵的多寡,雙鍵越多飽和度越低。一般而言脂肪酸飽和度越高,對熱的耐受性越好。動物性油質飽和度高,所以常有人建議用動物性油脂來炸食物,就是這個道理。但是動物性油脂含有膽固醇,膽固醇對熱的耐受性不算太好,過度加熱,膽固醇變質,也會對健康造成不良影響,這點必須注意。而目前市面上的精煉油,多元不飽和脂肪酸的比例較高,例如大豆沙拉油、葡萄籽油、玄米油、葵花油、芥花油等,這些油經過精煉加工後發煙點雖然高,但因為飽和度低,脂肪酸對熱的耐受性相對不佳。
因次當您在選油時,不要以為發煙點高,就可以安心使用。發煙點只是縱軸,告訴您油溫到幾度可能快速變質,抗氧化元素的多寡以及脂肪酸的飽和度就像橫軸,告訴您油的耐受性,更是影響油質受熱穩定度的重要因素。

There’s a new kind of storage device which many tech companies have been diving into in secret for the past few years, which Hitachi recently came out with a technology they are developing which is essentially a sheet of Quartz Glass, which could potentially save data up to 300 Million Years!
不過呢,日立公司宣布該公司正在開發一種用一小片水晶玻璃做的資料儲存裝置。它的資料保存期限可望長達三億年!
If you didn’t know anything about storage devices that we currently have, but anything from records, CD’s, USB sticks, magnetic tape, none of these can even lay a finger on this new, very impressive technology.

"The prototype is made of a square of quartz two centimeters wide and two millimeters thick. It houses four layers of dots that are created with a femtosecond laser, which produces extremely short pulses of light. The dots represent information in binary form, a standard that should be comprehensible even in the distant future and can be read with a basic optical microscope. Because the layers are embedded, surface erosion would not affect them."

Now, while this is exciting, there’s more to it than just that. See, While Hitachi currently has an actual produceable thing which they will probably start marketing once they figure out a simple means of transferring data to say, computers and television, the basic model they have (see picture above) only has the data storage capacity slightly better than a CD.

Scientists in the University of Southhampton in the UK have been developing an even MORE incredible technology. It’s called “Superman” Crystals, and potentially has the storage capacity of up to 350 TB, and can last forever!
英國南安普頓大學的科學家們一直在開發一個更令人難以置信的技術:超人水晶。這種水晶的存儲容量可能多達350TB,而且資料可以永久保存!
There currently isn’t any demonstrated prototypes available to the public yet, and the 350TB of storage is speculation, but it does sound promising.

"The scientists used a femtosecond laser, which emits pulses of light in femtoseconds (one quadrillionth, or one millionth of one billionth of a second). The 5D read/write laser can record up to an estimated 360 TB/disc data capacity on nano-structured glass capable of thermal stability up to 1000°C -- and a practically unlimited lifetime.
The information encoding comes in five dimensions that include the size and orientation in addition to the three dimensional position of these nano-structures."

2018 Toyota Hilux
The exterior reflects a "tough yet emotional" design expressing power and vigor. The interior features silver highlights throughout along with blue cabin illumination, creating a sense of sophistication. Five colors were selected for the exterior panels, including Nebula Blue Metallic and Crimson Spark Red Metallic, while the interior is black.
The vehicle is equipped with a 2GD-FTV 2.4-liter diesel engine. Offering power performance demonstrating high torque even in the low revolution range, it also demonstrates excellent environmental performance through high thermal efficiency and achieves a fuel efficiency rating of 11.8 km/L1.
The vehicle is outfitted with safety features, including a Pre-Collision System with Pedestrian Detection2 collision avoidance support package to recognize pedestrians, as well as cars. Additionally, Lane Departure Alert2 is an installed feature that helps prevent accidental lane departures.
The vehicle is equipped with a part-time 4WD system that allows the driver to select driving modes at the touch of a dial. The two-wheel drive mode boasts superior quietness and fuel efficiency and is ideal for driving in urban areas and on expressways. This can be switched to four-wheel drive for rough terrain and slippery roads, thus comfort and performance can always be maintained. Also, driving power can be adjusted to suit various road conditions through Hill-start Assist Control, Active Traction Control2, or Downhill Assist Control2. As an authentic 4WD vehicle, it achieves high on- and off-road driving performance.
The vehicle adopts a suspension system that boosts vibration damping, as well as a high-strength frame that ensures excellent running stability and driving comfort both on- and off-road.
By setting the steel bumper at a low position behind the bed, passengers can safely board and disembark when loading and unloading items. Also, large hand grips help passengers enter and exit the cabin with ease.
