As the boy grows older, I think I feel it. Yup, I feel what they call last baby blues.

We made our way to Padang over the weekend for NDP and since we decided not to drive and the boy hadn't taken a nap all day, I decided to bring him out in our Tula toddler carrier which I have not used in months, or maybe even close to a year. It fits toddlers up to 60 pounds (around 27kg) so he is just half of that weight for now. Right, still not light of course, and carrying him for over an hour can be real taxing for the back and shoulders. But, you should see that huge beam on his face when he saw that he could be a baby once more because he used to love being in the carrier.

It made me realise how tall and big he has grown already. Gosh, he couldn't fit on my chest and it was awkward for him to lay his head on my shoulder because of the buckle. The whole time we walked and took the train, his eyes were almost on level with mine so he kept looking at me and planting kisses onto my face. Yup, it felt so sweet. He fell into a deep sleep soon and I had to use one hand to support his head, which was tiring. Yet, he was happy and so was I.

This feeling of having a baby snuggling up to me feels so familiar yet at the same time is slowly becoming a distant memory. Awww. I really, really ❤ these kids when they are so tiny. No, it's not I don't love them as much when they are bigger. It's just different.

So for this boy who still holds my hand and hugs me to sleep, who still asks for Mama's breastmilk for comfort, who just started doing away with diapers and is proud to be wearing underpants, who crys for me when he wakes up in the middle of the night, who still loves singing nursery rhymes and playing kiddy rides, who tells me he prefers me to call him 'Baby' instead of 'Didi', I hope to cherish this growing up phase of yours a little more.

P.S. Some friends told me to just go and have another baby since I love kids so much, but it's easier said than done. I think I am maxed out for the time being and it's not really possible for me to take on another without getting help - and I don't really wanna get help. So, just treasuring what I have for now and making the most of it.

🎄 Preparation:

➋ piping bags and nozzles, or make a parchment bag for piping, 2mm is for sticking, 1.5mm is for decoration
🎄 Yields: Can make 14~16 gingerbread houses

✎ Ingredients
🎄 For the cookies
unsalted butter 125g, softened
brown sugar 90g
molasses 58g
egg 1, at room temperature
all purpose flour 370g
baking soda 5g
salt 2.5g
grated ginger 10g
ground cinnamon 1.5g
nutmeg powder 1g

🎄 For the Royal Icing
vanilla extract 1.5g
powdered sugar 200g, sifted
powdered egg white 7.5g
warm water 25g~30g

✎ Instructions
🎄 For the cookies
1. In a large bowl, add butter, sugar and molasses, beat on mid-low speed, mix well until light and smooth.
2. Add egg and ginger, beat on medium speed until well combined. Scrape down the sides and the bottom of the bowl and beat again if needed to combine.
3. Sift the flour, baking soda, ground cinnamon, nutmeg powder and salt.
4. Fold in all dry ingredients, continue to mix until well blended, the dough should come together.
5. Transfer the dough out onto a work surface and knead until the dough is smooth and combined. Wrap the dough with plastic wrap and place in the fridge for 1 hour to chill.
6. Preheat the oven to 170°C.
7. Lightly flour the work surface and roll the dough to about 3mm thick.
8. Dust the dough lightly with flour to avoid sticking. Place the house pattern pieces on the dough, dip the knife into flour and cut out the pattern pieces from the dough (cut the door, but remove it after baking). You will need TWO of each shape.
9. Bake at 170°C for 10 minutes or until the edges are just beginning to brown. Large pieces will need more time.
10. Once baked, cut the door first, and then remove all cookies on racks to cool completely.

🎄 For the royal icing
1. Sieve the 200g of powdered sugar and 7.5g of powdered egg white in a bowl.
2. Add 1.5g of vanilla extract and 25g of warm water and beat at medium speed for 5 minutes.
3. Fill the Pastry Bag With Royal Icing. You will need at least two piping bags, one is for a thick line to glue the pieces of house together. Another one is a thin line to decorate the house. The royal icing is the best icing to use for gingerbread houses, it'll dry hard and last throughout the holiday season.

🎄 Assembling
1. Start with the front and the back pieces and two sides, then take the side piece and stick them together, do the same with the other side.
2. Grab the back piece and give it a nice firm. Then the base of the house is done. Wait for the icing sets before adding the roof.
3. Sticking the roof pieces in the same way, add lines of icing on all the edges, hold them together and allow the icing to set. It's probably best to let this dry overnight that way all the royal icing is definitely hard before decorating.
4. You can decorate with any pattern you like and custom detail. You can practice how to draw a line or draw a pattern on a board or plate before putting them on your house. But remember, once finished the decorating, please let the icing dry for a couple hours. Have fun.

Hi, everyone :) Today we’re going to show you how to make a traditional Swedish almond cake, also known as Mandeltårta/Mandeltorta and Almondy(by IKEA).

Everyone knows this Swedish almond cake from the IKEA restaurant. It’s a light, fluffy cake with a creamy custard, topped with sliced toasted almonds. But now you can make it at home as long as you follow our recipe. This cake is gluten-free, so those who can’t eat wheat or gluten can enjoy this cake. Hope you like this video. Smaklig måltid! :)

Ingredients

☞ almond cake
egg white 3
a pinch of salt
granulated sugar 72g
almond powder 120g
flaked almonds, toasted, to decorate 40g

☞ butter custard
egg yolk 3
whipping cream 120ml
granulated sugar 60g
unsalted butter, softened 90g
vanilla extract 2g

Instructions
1. Pour whipping cream, sugar and vanilla extract in a heavy pan over a medium heat, until all sugar is dissolved. Then remove from heat.
2. Meanwhile, whisk the yolk and pour it into the saucepan, mix well.
3. Return to heat, stirring constantly for 5-6 min until the mixture has thickened. Remove from heat, and pour the custard into a bowl, cover with plastic wrap and leave to cool in fridge.
4. In a large clean bowl, add egg white and a pinch of salt, whisk with an electric hand mixer. When tiny bubbles appear, add sugar gradually in 3 times and keep beating until stiff peak form.
6. Add haft ground almonds, using a spatula and fold until incorporated. Then add the rest of ground almonds, fold everything together.
7. Spoon the cake mixture into a bag with a 1 inch round tip. Pipe the mixture onto the baking parchment circle. you can draw a circles on a paper and put it under the baking  parchment. Repeat this process again.
8. Preheat the oven to 170C, and bake for 18~20 min. Remove from oven and set aside to cool.
9. Pour almond slices into a pan over medium heat. Use a wooden spoon to stir. Once the almonds are brown, pour the toasted almond slices into another dish to cool.
10. Put the butter in a bowl and beat with an electric hand mixer in low heat until light and fluffy. Gradually add the cold custard, beating until mix well.
11. To assemble the cake, place one cake layer on a plate, spread with 1 third of the butter custard mix. Then place the second one on top and spread the remaining custard, don't forget to spread the sides of the cake.
12. Sprinkle with the almond slices. Cover and chill in fridge for one hour before serving.
