The water between Ivana Port and Sabtang Islands is where the currents of the vast West Philippine Sea (South China Sea) and the even bigger Pacific Ocean clash, hence it is being known to the locals as “The Island of No Return” because it has a reputation of being rough, turbulent, and frightening. It experiences an average of 20 typhoon hits in a year hence the native Ivatans built stone houses since a hundred over years ago that have at least 1 foot thick walls to protect them from rough weather. They have lived in one with the harsh nature making them one of the most resilient indigenous clans in the world. If you think of only Japan when you can leave your belongings anywhere and can come back retrieving it untouched the next day now you can consider adding this place to your list. This may be one of the poorest municipals in Philippines, but in my opinion they are one of the richest I have ever seen - simple, kind, and contented. They might have all the disadvantages against them, but they own everything from nothing. Ode to the amazing Sabtang and Ivatans.

Technically this Stir Fried Fish & Bitter Gourd (Bitter Melon) in Bean Sauce is also a one dish meal since it has fish and vegetables all in a dish. In case you're worried that the bitter melon will be very bitter - no worries. Just make sure you remove the white core of the bitter melon because that's the part that makes the melon bitter. Once you have removed it, it should be okay.

Serves 4 - 5 pax
Ingredients (A)

Deep fry the ingredients below.
-------------
300g of bitter gourd (bitter melon) - cut into strips
700g of black pomfret
Ingredients (B)
-------------
Fry the ingredients below until fragrant
-------------
1 whole large red onion - cut into strips
20g of ginger - julienne
1 stalk of spring onion (add the stem first followed by the rest when the dish is done)
3 cloves of chopped garlic
3 pieces of bird's eye chilli - chopped
Ingredients (C)
-------------
Once you have fried ingredients (B) until fragrant, add the following as well as deep fried ingredients (A) and boil with the lid on for about 5 - 8 minutes

2 cups of water
1/2 tablespoon of fermented bean paste 豆酱
1/2 tablespoon of spicy fermented bean paste 辣豆瓣酱
1/2 tablespoon of fermented black beans 豆豉
1 tablespoon of oyster sauce
1 teaspoon of sugar
Ingredients (D)

Once you have simmered the above for 5 - 8 minutes, add the following in sequence

Some cornstarch solution
2 tablespoons of Chinese cooking wine (Shaoxing Huatiao wine)
Balance spring onion from Ingredients (B)

Ingredients:
Serves 3 - 4 pax
Ingredients (A)

Mix the ingredients below together.
-------------
280g of snapper meat - sliced thinly
1 tablespoon of fresh ginger juice
1/2 teaspoon of salt
A few dashes of white pepper
Ingredients (B)
-------------
Dissolve the ingredients below together then add marinated fish from Ingredients (A) and coat the fish well. Then proceed to deep fry the fish until golden brown and crispy.

1 cup (125g) of cornflour (can be replaced with potato flour)
1/2 cup (125ml) of water
Ingredient (C)
-------------
Fry until golden brown over low heat and then set aside once done. Use as garnishing once the dish is ready.

Some cooking oil
15g of young ginger - julienne
Ingredients (D)
-------------
This part of the ingredients is to make the sauce. Then mix the fish in the sauce and toss to coat the fish well.

Use the oil remaining from (C)
3 cloves of chopped garlic
1/2 cup (125ml) of water
1 tablespoon of oyster sauce
2 tablespoons of light soy sauce
1 tablespoon of premium dark soy sauce
1.5 teaspoons of sugar
