Christian’s 檸茶咕嚕肉
Lemon tea Crystal Pork (Sweet and Sour Pork)
200g-300g 梅頭 Pork Collar, cut into 1 inch cubes
100g 紅綠黃蕉Red, yellow or green Peppers
100g 洋蔥onions
100g (or more) 新鮮菠蘿fresh pineapple
生粉Corn starch for frying
菜油Oil for frying
Sauce:
3 bags 三包錫蘭紅茶扣50克滾水Ceylon tea steeped in 50g hot water
2 檸檬lemons
200g 白糖sugar
Seasoning:
生抽Light soy sauce
老抽Dark Soy Sauce
白胡椒White pepper
鹽Salt
白糖 Sugar
蛋Egg, whisked
Ice coolant:
包裝凍檸茶Ice tea (packaged)
Sprite
冰 Ice
Season the pork with soy sauces, white pepper, salt, sugar.
Quickly stir fry the peppers, onions and pineapple, set aside
Coat the pork in egg, then corn starch, then fry until golden. Set aside.
Make the sauce by boiling the tea with the sugar. Then add the juice of 2 lemons, reserve the grated rind.
When the tea forms into a caramel, toss in the pork and coat each piece with the caramel.
Cool in the ice coolant mixture. The caramel should crystallise.
Serve with the peppers and onions, pineapple
