Stewed pork belly with glass noodles is the essence of Northeastern Chinese cuisine. It is one of the region’s four most popular stews. Due to the vast area and large population of Northeastern China, every family has its own recipe, based on individual tastes and preferences.
The recipe I am sharing with you is one that has been passed down for many generations in my family. I have been eating it since as early as I can remember. It’s something I grew up with, and it’s part of who I am.
It also has become my 2-year-old daughter’s favorite. She doesn’t usually eat meat, but when it comes to this stew, she just can’t get enough. “Rou rou mian mian!”—“Meat and noodles!”—she demands, pointing emphatically at the dish.
According to the legend, the origin of stewed pork belly with glass noodles is tied to the nomadic hunting life of the Manchu people of Manchuria and their Jurchen ancestors. They enjoyed eating big pieces of meat and made glass noodles out of potatoes. To endure the cold, they stewed the meat and the noodles together, and the dish gradually became a local signature. Today, Manchus form China’s fourth-largest ethnic minority, with many of them living in the Northeast.
To make their classic dish, pieces of pork belly are caramelized in a sugar syrup and stewed until so soft that they melt in your mouth. The noodles, added to the soup and cooked until al dente, soak up its rich flavors. This is what I call the ultimate comfort food.

What will occur to you when you hear the term PhD? In response, many people say: “being a PhD candidate must be a tough job.” Sure, it is not an easy job. Then, how about pursuing a doctoral degree as an international student? Actually, it is quite another story. Culture shock comes along when attitudes, habits, ethnic character, climate, food, and even opening hours of stores are different. Also, you will have to handle issues such as writing in your second language, adapting to different accents of the lecturers, getting involved in networking, mental health, and financial support. Each of these situations you will encounter will be elaborated here.

Singapore is a multiracial and multicultural country with ethnic Chinese (about 76% of the citizen population), Malays (15.0%), and ethnic Indians (7%). We also have Eurasians as well as other non-Singapore citizens in Singapore. Given our racial proportion, one would have imagined that our coffeeshops or foodcourts only have Chinese, Malay or Indian food but no matter what, there will always be one stall selling what we term affectionately as Western food. In case you're wondering how a Western food stall looks like in Singapore, just google it and there are plenty of images out there. Interestingly, the Western food we get at coffeeshops or foodcourts are usually marinated in Chinese style. :)) We grow up eating this type of Western food and we love it! My favourite order at a Western food stall is always chicken chop. Roland's favourite is mixed grill because he likes variety. What's yours?

When I said they speak different languages, what I mean is that there are differences within the languages & there are aboriginal & foreign languages in Taiwan which are not really spoken or used in China.
Furthermore, there are believed to be over 200 living languages in China today which are used by over 50 ethnic groups within China, and most of those are not used in Taiwan.
