不問還不知,原來在光大旁的今旅酒店(Hotel Jen)有近20種蛋糕任君選擇,但食家要我嚐他們的芝士蛋糕,所以買了一小塊Baked Cheese,一粒1.2公斤的Toffee Mascarpone Cheese Cake,外加一粒1.5公斤Monte Cristo。結論是一致好評。
Hotel Jen that is located next to Komtar has about 20 variety of pastries, but the food connoisseur insisted that Gibson give cheese cake a try, so Gibson bought a small piece of baked cheese cake, a 1.2kg of Toffee Mascarpone Cheese Cake and a 1.5kg Monte Cristo, of which none disappointed him.
老實說,味道是主觀的,所以這裡的好評,指的是蛋糕用足食材,所以製成的蛋糕紮實且原汁原味。
Taste can be quite subjective, but you able to tell if the cake is made from quality ingredients or not, which determines the richness in flavor.

ビスケットなのに!?しっとりふわっとした食感。
なんとビスケットに水分を含めるだけで、まるでスポンジケーキのようにびっくりするほど柔らかくなります!
今回はいちごとティラミスの2種類のレシピをご紹介します。

ビスケットケーキ
各1人分
材料:
■いちごのビスケットケーキ
ビスケット 6枚
牛乳 20ml
生クリーム 100ml
砂糖 大さじ1
いちごジャム 適量
いちご 適量
作り方:
1.ボウルに生クリーム、砂糖を入れ、ハンドミキサーでツノが立つまで泡立てる。
2.ビスケットは牛乳にくぐらせ、いちごジャム、クリームを塗り、もう1枚のビスケットを牛乳にくぐらせて重ねる。残りも同様に重ねたら全体にクリームを塗り、ふんわりラップをかけて冷蔵庫で1時間冷やす。
3.ラップを外して器にのせ、仕上げにいちごをトッピングしたら、完成!
■ティラミス風ビスケットケーキ
ビスケット 6枚
お湯 大さじ3
インスタントコーヒー 小さじ2
生クリーム 50ml
マスカルポーネチーズ 50g
砂糖 大さじ1
ココアパウダー 適量
作り方:
1.インスタントコーヒーにお湯を加えて溶かし冷ます。
2.ボウルに生クリーム、マスカルポーネチーズ、砂糖を入れ、ハンドミキサーでツノが立つまで泡立てる。
3.ビスケットを(4)にくぐらせ、クリームを塗り、もう1枚のビスケットを(5)にくぐらせて重ねる。残りも同様に重ねたら全体にクリームを塗り、ふんわりラップをかけて冷蔵庫で1時間冷やす。
4.ラップを外して器にのせ、仕上げにココアパウダーを振ったら、完成!

INGREDIENTS
■Strawberry biscuit cake
100ml heavy cream
1 tablespoon sugar
20ml milk
6 biscuits
Some strawberry jam
Some strawberries
PREPARATION
1. To make strawberry biscuit cake, mix heavy cream and sugar with a hand mixer in a bowl
until stiff peaks form.
2. Dip a biscuit in the milk, spread strawberry jam and whipped cream. Repeat rest of biscuits and stock them together. Spread whipped cream evenly over biscuits and plastic-wrap them. Refrigerate for 1 hour.
3. Unwrap the biscuits on a plate and decorate with strawberries.
INGREDIENTS
■Tiramisu biscuit cake
2 teaspoons instant coffee
3 tablespoons hot water
50ml heavy cream
50g mascarpone cheese
1 tablespoon sugar
6 biscuits
Some cocoa powder
PREPARATION
1. To make tiramisu biscuit cake, make instant coffee with hot water and let it cool.
2. Mix heavy cream, mascarpone cheese and sugar with a hand mixer in a bowl until stiff peaks form.
3. Dip a biscuit in the coffee (4), spread whipped cream. Repeat rest of biscuits and stock them together. Spread whipped cream evenly over biscuits and plastic-wrap them. Refrigerate for 1 hour.
4. Unwrap the biscuits, place them on a plate and dust with cocoa powder.
5.Enjoy!

✔ Nguyên liệu cần có:
- 5 lòng đỏ trứng
- Cà phê đen
- Bánh lady fingers
- Phô mai mascarpone
- 1/2 cup đường cát trắng
- 1 cup heavy whipping cream
- 1 thìa canh vanilla extract
✔ Cách làm:
- Trộn 1/2 cup đường với lòng đỏ trứng, đánh bông lên. Sau đó cho mascarpone vào hỗn hợp...và lạnh đánh bông lên :))
- Ở một hành tinh khác, ủa lộn, ở một cái tô khác :)) trộn 1 cup whipping cream với 1 thìa canh vanilla extract, cũng đánh bông lên nốt.
- Xong rùi trộn hai hỗn hợp lòng đỏ + đường + mascarpone với whipping cream + vanilla lại với nha
- Nhúng bánh lady fingers vào trong và phê đen, rồi xếp ra khuôn.
- Cho hỗn hợp đã trộn lúc nãy lên mặt bánh, phết đều
- Xong lại làm thêm một lớp nữa: nhúng bánh, xếp bánh, phết kem
- Cuối cùng, rắc bột cacao lên mặt
- Cuối cùng của cuối cùng... ĂN!!!

半熟チーズケーキ
15cmケーキ型 1台分
材料:
クリームチーズ(室温に戻しておく) 300g
マスカルポーネチーズ(室温に戻しておく) 100g
砂糖 60g
卵 2個
生クリーム 200ml
バニラエッセンス 適量
薄力粉 20g
■ボトム
ビスケット 100g
溶かしバター 80g
作り方:
1.オーブンは180℃に予熱しておく。
2.ボトムを作る。ジップ付きの袋にビスケットを入れて、めん棒で叩いて細かく砕く。溶かしバターを加えてよく揉み込む。クッキングシートを敷いた型の底に敷き詰め、冷蔵庫に入れて30分冷やし固める。
3.ボウルにクリームチーズ、マスカルポーネを入れ、ゴムベラでなめらかになるまで練り混ぜる。
4.砂糖、卵、生クリームの順に加えて、その都度泡立て器で混ぜる。
5.バニラエッセンスと薄力粉を振るい入れ、ダマがなくなるまで混ぜる。
6.型に流し入れて天板に乗せ、お湯を注ぐ。オーブンの温度を150℃に下げて35-40分湯せん焼きする。
7.温度を190℃に上げて10分ほど湯せん焼きし、表面に焼き色を付ける。
8.焼き上がったら粗熱を取り、冷蔵庫でしっかり冷やす。
9.型から外し、お好みの大きさに切り分けたら、完成!

Servings: 6
INGREDIENTS
300 grams Cream cheese (at room temperature)
100 grams Mascarpone cheese (at room temperature)
60 grams sugar
2 Eggs
200milliliters Heavy cream
Vanilla essence (to taste)
20 grams Flour
■ Crust
100 grams Biscuit
80 grams Melted butter
PREPARATION
1. Preheat the oven to 180°C.
2. Make the crust. Place the biscuits in a zipp bag and crush with a rolling pin. Add melted butter and knead well. Lay it on the bottom of the mold lined with parchment paper, let it chill in the refrigerator for 30 minutes.
3. Place the cream cheese and mascarpone in a bowl and mix with a rubber spatula until smooth.
4. Add sugar, eggs, and heavy cream, in that order, and whisk until smooth each time.
5. Sift the flour and add the vanilla essence to the mixture and whisk until there are no lumps.
6. Pour the mixture into a mold lined with parchment paper, place the mold in a hot water bath. Lower the oven temperature to 150°C and cook for 35-40 minutes.
7. Raise the temperature to 190°C, bake for about 10 minutes more, unil the surface has browned.
8. Remove from the oven and let cool, once it reaches room temperature place in the fridge to cool and firm up.
9. Remove from the mold, cut into slices, and complete!
