Ingredients:
75g starter (tripled, use at peak)
150g all purpose flour
60g water (room temperature)
15g caster sugar
6g vegetable oil (or any neutral oil)
Red bean paste
Natural food colour powders
Method:
1. Mix all ingredients
2. Knead dough till smooth and shiny
3. Colour and shape dough into desired sushi shapes
4. 190g White - main dough (30g each with 15g red bean paste as filling), prawn and fish veins
5. 50g Black - seaweed and sesame seeds
6. 10g Yellow - egg
7. 10g Red - tuna
8. 15g Orange - salmon and prawn
9. 8g Dark orange - salmon roe
10. 10g Brown - inari
11. Let dough proof for about 2 hours at 28C
12. Wrap the lid of the steamer with cloth
13. Bring water to a rolling boil
14. Steam buns at medium heat for 9 minutes
15. Turn off heat and let the buns sit inside the steamer for 5 minutes, lid closed
16. Remove buns from steamer
17. Enjoy

まぐろの表面をごまでまとい、こんがり焼いて、黄金ソースを絡めるだけ!
香ばしさと甘辛ダレのハーモニーが食欲をそそります。

まぐろステーキ
2人分
材料:
まぐろ(刺身用) 150g
にんにく(スライス) 1片
塩 少々
コショウ 少々
白いりごま 大さじ2
黒いりごま 大さじ1
ごま油 大さじ1
■タレ
酒 大さじ1
みりん 大さじ1
しょうゆ 大さじ1
砂糖 小さじ1
作り方:
1.まぐろの両面に塩、コショウを振る。
2.バットに白いりごま、黒いりごまを混ぜて広げ、(1)を入れてまんべんなくまぶし付ける。
3.フライパンにごま油、にんにくを入れて火にかけ、にんにくがきつね色になったら皿などに取り出す。
4.(3)のフライパンを中火に熱し、(2)を入れて片面2-3分ずつ焼く。焼けたら取り出し、食べやすい大きさに切る。
5.(4)のフライパンにタレの調味料を加え、とろみが付くまで軽く煮詰める。
6.器にまぐろを盛ってにんにくチップをのせ、タレをかけたら、完成!

Grilled tuna with garlic
Servings: 2
INGREDIENTS:
Tuna 150g
1 clove garlic
A pinch of salt
A pinch of pepper
sesame seed 2 tbsp
black sesame seed 1 tbsp
sesame oil 1 tbsp
■SAUCE
sake 1 tbsp
mirin 1 tbsp
soy sauce 1 tbsp
sugar 1 tsp
PREPARATION
1. Salt and pepper both side of tuna.
2. Mix both sesames seeds in a tray. Put tuna in the tray to coat with sesame seeds.
3. Heat sesame oil and garlic in a skillet, then take out garlic when it browns.
4. Turn up heat to medium, sear tuna for two to three minutes for each side. Remove tuna from the pan and slice into bite-sized pieces.
5. Add all ingredients for sauce into the pan, and simmer until it's thicken.
6. Arrange sliced tuna on a plate with garlic chips on top, spoon sauce over tuna.
7. Enjoy!

【材料】(冷蔵保存3日~4日)
●茄子:5個
●ツナ缶:2缶
●あごだし(4倍濃縮):大さじ1(めんつゆ、醤油でもOK)
●丸鶏がらスープ:大さじ1
●ごま油:大さじ2
●塩少々
●砂糖少々(更に糖質をおさえるならラカントとかオススメ)
●桃屋のきざみしょうが:大さじ1/2(勿論、普通の生姜でもOKだよ♪)
●最後にブラックペッパー
お好みでかつお節、炒りごま、ネギ
※今回は無限シリーズ、これから旬になってくる茄子ですね。
これがまた最高にご飯とお酒がすすむ超簡単なおつまみになってます。
暑い日でもレンジでチンするだけでとっても簡単に作れるし作り置きにも出来るので
おつまみ、おかず、お弁当に是非作ってみて下さい。

[Ingredients](3 to 4 days in refrigerated storage)
Eggplant: 5 pieces
Canned tuna: 2 cans
Broth made from flying fish: 1 Tbsp (Noodle soup or soy sauce is also acceptable)
Whole chicken stock powder: 1 Tbsp
Sesame oil: 2 Tbsp
A pinch of salt
A pinch of sugar (if you want to cut down on the sugar, I recommend Lakanto)
Chopped ginger: 1/2 Tbsp (of course, regular ginger is OK too♪)
Black pepper at the end.
Finish with bonito flakes, roasted sesame seeds and green onion on it as you like.

It's a super easy snack that goes well with rice and alcohol.
It's very easy to cook in the microwave even on a hot day, and you can also keep it in the fridge.
