第一次做泡芙,挺有趣的,我的擠花袋終於派上用場!🤣
型狀還要多加練習是真的!! 我擠的有點大小不一哈哈,不過擠花真的好好玩,但事後洗器具可不好玩了。。😅

❤️/無敵美味!#酥餅乾泡芙/❤️
帶這個去朋友家聚會,當飯後點心,大家都說超好吃的!我自己本來就很愛這種餅乾泡芙,好吃到轉圈圈😆!
這次因為我想示範用最少工具完成餅乾泡芙,用了一些小技巧, 例如用量米杯沾醬油先在紙上做記號,量米杯壓餅乾脆皮(給怕擠泡芙不同大小,又沒有專門模具的朋友),所以泡芙很大一個😁,也沒用泡芙殼的圓口花嘴,也沒有用專門擠內餡的長嘴花嘴,重點就是希望大家在家也可以烤出超好吃的酥餅乾泡芙喔!雖然步驟多了些💦(所以週末都在弄這影片🤣)
這種泡芙最推薦現烤現吃,建議吃之前才擠內餡(內餡食譜當然就是上一篇po的 #香緹卡士達 囉!)。或是擠好馬上冷凍起來,冷凍吃會像冰淇淋🤤,也很適合夏天~
#酥餅乾泡芙食譜:(可做大泡芙8個)
A.餅乾脆皮
1.有鹽奶油35g+糖粉30g,打發成泛白蓬鬆的奶油霜。加入過篩低筋麵粉45g,先切拌混合均勻,再混合成餅乾麵糰. 擀成薄片,冷凍備用 (冷凍這步驟是海頓媽的小秘訣,到時候才不會因為餅皮很軟難操作)
B. 泡芙殼
1.低筋麵粉(先過篩好準備):65g
2.有鹽奶油50g+牛奶50g+水50g+糖粉10g,放在鍋子裡,煮沸後關火,馬上倒入篩好的低筋麵粉65g,攪拌至團狀
3.全蛋液兩個,打散,分次加入麵糰。每次加入都要等蛋液全部吸收才能再加。
⭐成濃稠度的麵糊即可,蛋液也許用不完沒關係,太稀泡芙會膨脹不起來❗
4.擠出泡芙(請看影片示範),烤箱預熱好200度烤10分鐘,將烤箱調降到180度再繼續烤25分鐘,至上色。關烤箱火,烤箱門夾手套悶15分鐘烘乾
⭐烤溫要看泡芙大小調整,如果你的泡芙擠的小,降到180度後就可能只需要10分鐘左右,這些要自己觀察喔。烤溫時間也要看每台烤箱不同自行調整
⭐中途不要隨便開烤箱,泡芙會“消風”,也不要為了上色均勻在中途將烤盤轉向❗
5.要享用之前,再填入我分享過的“#香緹卡士達”,也可以填好冷凍起來,會很像吃冰淇淋喔!
#CookiePuffPastry ingredients
1.cookie crust: salted butter 35g, powder sugar 30g,cake flour 30g
2.puff: salted butter 50g+milk 58+water 50g+powder sugar 10g,sifted cake flour 65g
Bake at 200°Cfor 10 min, then 180°C for 25 min, with an oven mitt ,leave the oven door unclosed for 15min.
(depends on the sizes of your puff, adjust oven temperature or time of bake)
Fill in Chantilly Custer cream right before serve.

就順勢只好做起了卡式達醬,
一起來看看吧 :)
\ 義美感泡芙 Puff /
* 食材:
無鹽奶油 Unsalted Butter · 45g
牛奶 milk · 50ml
水 water · 50ml
鹽巴 salt · 1g
砂糖 sugar · 1g
低筋麵粉 Low-Gluten Flour · 55g
雞蛋 egg · 2顆
* 作法:
① 將奶油、牛奶、水、鹽巴、糖一起放入鍋中,用小火的方式煮滾
② 滾後離火加入低筋麵粉,並且快速的攪拌均勻
③ 攪拌均勻後,再次小火加熱15秒後,壓平成糰後離火
④ 將兩顆雞蛋打散,分多次加入麵糰中,每次都要拌勻才加入下一次(速度要快,加速散熱)
⑤ 攪拌完成的麵團放入擠花袋中,在烘焙紙上擠出適當大小
⑥ 烤箱210度,烤15-17分鐘
(180度小烤箱也可以自己把時間往上加3-5分鐘試試看)
⑦ 出爐後放涼,擠入卡士達醬即可完成!

\ 卡式達醬 Pastry Cream /
• 食材”
雞蛋 egg ·1顆(或兩個蛋黃)
細砂糖 sugar ·50g
低筋麵粉 Low-Gluten Flour ·30g(可用15-20g)
牛奶 milk ·200ml
• 作法”
① 將雞蛋與細砂糖拌勻(不一定要完全無顆粒)
② 過篩30g低筋麵粉後拌勻,有些濃稠為正常現象(喜歡稀一些的卡士達醬,可以調整為15-20g)
③ 200ml牛奶中小火加熱到周圍有小氣泡即可(不可過熱)
④ 分多次加入麵糊中,速度要快的攪拌,有助於散熱
⑤ 攪拌後倒入鍋中,繼續小火加熱
⑥ 過程中繼續攪拌,會漸漸變成濃稠狀
⑦ 待它變為滑順即可倒出冷卻食用!

Hello friends! Today we're going to share with you how to make a classic French style pie: Strawberry & Blueberry Galette, aka Fruit Galette.
Fruit galette is so gorgeous in its rustic form. It’s a French pastry similar to a tart or a pie, the famous one is Galette des rois (king cake). The fruit galette is another free form pie with fruit filling, and the crust folded partway over the top of the filling, looks like a flat round pie. The best part is the pastry dough is simple to make for even beginners, it's quite a bit less effort than puff pastry, but the result is amazing.
In this video we'll show you how to make the delicious strawberry galette in an easy way. This galette recipe features jammy strawberries and an ultra flaky, buttery crust. Enjoy. :)

How to make French Strawberry & Blueberry Galette
French Style Strawberry & Blueberry Galette Recipe
☞ Yield: Serve 3~4
✎ Ingredients
📍 Pie dough
all purpose flour 100g (plus more for dusting)
granulated sugar 15g
a pinch of salt
unsalted butter 80g (Iced, cut into cubes)
iced water 30g
one egg
crystal brown sugar Q.S
📍fruits filling
strawberries 180g
blueberries 40g
granulated sugar 30g
corn starch 6g
half lemon zest
lemon juice 2g
✎ Instructions
1. In a medium bowl, mix flour, sugar and salt together until well combined.
2. Add very cold butter cubes and toss in the flour and until each piece is coated. Just take a piece of butter, using your fingertips to press it flat, then complete all. If your fingers warm up the butter too much, you can chill for 10 minutes
3. Add ice water and mix with your fingertips until the dough holds together enough to form a ball. If too dry, drop the remaining water. Lumps of dough are OK.
4. Put the dough onto a piece of plastic wrap, and flatten into a disk and refrigerate for 1 hour.
5. Make the fruit filling. Pinch off the green and slice the strawberries.
6. In a large bowl, combine the strawberries and blueberries with sugar and cornstarch. Zest half of lemon and squeeze a little lemon juice. Toss the fruit mixture together, set aside.
7. Lightly flour your working surface, so the pastry doesn't stick. Unwrap the dough and roll it into a 26cm/10-inch round circle about 3mm~4mm thick.
8. Pile the fruit filling onto the center of the dough and leave at least 2 inches border around the edge. Fold the edges of the dough up and over the filling.
9. Brush the edges with the egg wash and sprinkle with sugar.
10. Preheat the oven to 220C and bake for 25 minutes. Once baked, transfer onto a wire rack and cool completely.
10. Let cool before slicing and serving with an ice cream or a dollop of whipped cream to take it to the next level!

忌廉芝士 60g Cream Cheese
蒜頭 2cloves Garlic
洋蔥 1/4 Onion
白酒 40g White Wine
菠菜 75g Spinach
麵包糠 7g Breadcrumbs
巴馬臣芝士 15g Parmesan Cheese
酥皮 2 Puff Pastry
雞蛋 1 Egg
鹽 Salt
黑椒 Blackpepper
1.洋蔥及蒜頭去皮切碎備用
2.炒香洋蔥及蒜頭
3.洋蔥變半透明後加入白酒稍
4.轉細火加入忌廉芝士,菠菜,巴馬臣芝士及麵包糠拌勻,盛起備用
5.三文魚柳表面撒上少許鹽及黑椒
6.酥皮稍為放軟
7.三文魚放在酥皮中間,鋪上約一半份量的芝士菠菜
8.四面塗抹蛋漿,切去多餘酥皮
9.酥皮包裹三文魚,兩邊酥皮擀平後切去多餘部分再向內摺
10.反轉放在焗盤上
11.塗抹蛋漿後輕輕?花
12.以200℃焗25-30分鐘即成,中途轉180°令顏色更均勻
