INGREDIENTS
A. Crunchy dough
80 g (1/3 C + 1 tsp) unsalted butter - soft
100 g (1/2 C) light brown sugar
95 g (3/4 cup) all purpose flour
5 g (2 tsp) cocoa powder
B. Choux pastry
60 g (1/4 C + 1 tsp) unsalted butter
120 ml (1/2 cup) water
3 g (1/2 tsp) sugar
1/8 tsp salt
65 g (1/2 cup) all purpose flour
2 medium sized eggs
C. Fillings
1 egg yolk
15 g (1 tbsp) sugar
10 g (1 tbsp - heaped) AP flour
100 ml (1/2 C less 1 tbsp) milk
20 g bittersweet chocolate
150 ml (1/2 cup & 2 tbsp) whipping cream
20 g (1.5 tbsp) sugar (to whip with cream)
