INGREDIENTS
A. Crepes
- 3 eggs (medium size) - room temp
- 430 ml lukewarm milk
- 30 ml coffee (freshly brewed preferable)
- 1/2 tsp vanilla extract
- 40 gr unsalted butter melted (lukewarm)
- 165 gram all purpose flour
- 15 gram cocoa powder
- 40 gram sugar
- butter for coating the pan
B. Tiramisu Cream
- 200 gram Mascarpone
- 200 ml whipping cream
- 3 egg yolks
- 115 gram sugar
- 5 gram corn starch
- 150 ml milk - lukewarm
- 150 ml whipping cream - lukewarm
- 3 Gelatin sheets (5 - 6 gram) (Gelatin powder with the same amount is also fine)
- 1 tsp vanilla extract
- 2 - 3 tsp Rum (optional and to taste)
C. Decor
- 50 gram Mascarpone - room temp
- 50 ml whipping cream
- 15 gram sugar
- 1/4 tsp vanilla extract
- cocoa powder for dusting the cake
