Beef Pho. With Beef Tendon. This wasn't bad per se, may be I am comparing it too much to Vietnam and Paris on both Chinese Streets. The Beef soup depth was there, but the Noodles were majorly broken up over boiled. The Herbs were served like there was a famine and in mini-cure proportions, I could count a maximal two 鵝苐 herbs and they were not even fresh. The tendons were quite broken and the beef, for close to $100 I was disappointed for the size portion. Pho 26 nearby is way way better and authentic, much more similar to the ones in Vietnam. 🤕 In Addition to that, there's too much Onions. The Concept sounded so right though, but the taste wasn't really accurate enough this time around oops. 🤐. 【Brass Spoon, Wanchai, HK】

• 2 packed tbsp brown sugar
• 1 tbsp paprika
• 1 tsp cayenne pepper
• 2 tsp garlic powder
• 2 tsp onion powder
• 2 tsp turmeric
• 2 tsp salt
• 1 tsp freshly ground black pepper
3 lbs skinless chicken legs, cut into bite size

¼ cup plus 1 tbsp green onion, white part, minced
2 garlic cloves, peeled, finely chopped
1 cup white or yellow pearl onions
1 large jicama, peeled, chopped into small cubes
1 tbsp cooking oil (ideally peanut oil)
quail eggs, boiled, peeled
1 packed Mi Quang noodle, cooked following instructions
Accompaniments:
• Rice cracker
• Raw vegetables (lettuce, bean sprouts, banana blossom, mint, perilla,...)
• lime, cut into wedges
• green onion, green part, finely chopped

3 lbs (1.5 kg) đùi gà, cắt vừa ăn

1 tbsp muỗng canh dầu (nếu có dầu đậu phụng càng tốt)

1 gói mì quảng khô, luộc chín

For the soup:
1 7 oz jar of minced crab in spiceås
¾ cup (60 g) fried shrimp
1 cup (180 g) fresh shrimp, peeled, deveined
1 cup (180 g) pork paste giò sống
1 egg
10 cups (2400 ml) pork or chicken broth
1 tbsp tomato paste
3 medium-large ripe tomatoes, cut into wedges
1 cup cubed deep fried tofu
1 cup cubed pork blood
1 tbsp finely chopped shallots
½ tsp ground pepper
fish sauce
¼ cup green onion white part, finely chopped
1 tbsp oil
For the bowl, garnish, and common accompaniments:
Vermicelli noodles

shredded water spinach (I substitute thinly sliced cabbage)
