We love Kimchi Jjigae (also known as kimchi soup or stew in English). This soup is super easy to make and you just need to cook some rice to go with it and call it a day. So easy! A big shout-out to Lady Boss Choi of Hanwoori Korean restaurant in Singapore. This restaurant is in our neighbourhood and her kimchi jjigae is really really good. If you don't like seafood, you can also use shabu shabu pork belly or beef. You don't have to season the meat, just add them around the same time as we added the seafood.

Seafood Kimchi Jjigae 韩国海鲜泡菜汤 (Kimchi Soup / Stew)
Ingredients:
Serves 4 - 5 pax

1.5L water
6 tablespoons light soy sauce
4 cloves of chopped garlic
1 teaspoon grounded black pepper
6 tablespoons Korean chilli powder (gochugaru)
3 tablespoons gojuchang (Korean chilli paste)
450g kimchi
300g silken tofu
1 red onion - sliced
4 fresh shitake mushrooms - sliced
3 potatoes - sliced
50g sweet potato vermicelli (can be replaced with glass noodles)
2 stalks of spring onion (can be replaced with scallion)
1 teaspoon salt (season to taste)
200g prawns
200g baby octopus (can be replaced with squid)
300g venus clams
150g enoki mushrooms
Add some white vinegar at the end of the cooking if you like the soup to be more tangy.

Korean Beef Doenjang Soup
Ingredients:
Kelp ------------------ 1 pcs
Dried Anchovies ------- 12 Pcs
Beef Flat Iron (Slices) -- 80 g
Enoki Mushroom ------- 1 Bunch

Tofu (Diced) ------------ 1/3 Pcs
Korean Squash (Cut Into Small Pieces) - 1/4 Pcs
Korean Doenjang ------- 1.5 Tbsp
Korean Rice Wine ------- 1 Tbsp
Korean Gochujang ------ 3/4 Tbsp
Garlic (Minced) --------- 2 Cloves
Korean Pepper ---------- 1/2 Pcs
Scallions (Chopped) ----- 1/2 Stalks

Chris Wong Private Kitchen Cooking Channel
Preparation:
1. Put the kelp and dried anchovy in 350 ml of boiling water and cook on high heat for 8 minutes.
2. Heat up a pot on medium heat, add sesame oil, beef slices and doenjang. Stir fry to enhance flavors.
3. Add Korean rice wine.
4. Add 300 ml of kelp and dried anchovy soup, Korean gochujang, garlic, onion and tofu. Cook for 6 minutes.
5. Add Korean squash and cook for another 5 minutes.
6. Finally add mushrooms, Korean pepper and scallion to finish.

「韓式牛肉大醬湯」(1人份)
材料:-
昆布魚乾湯..............300ml
翼板肉 (切片)............80g
金菇/金針菇..............1束
洋蔥(切塊)...............1/3個
豆腐(切細)................1/3磚
韓國櫛瓜(切細).........1/4個
大醬..........................1.5湯匙
韓國燒酒/米酒..........1湯匙
韓國辣椒醬..............3/4湯匙
蒜蓉.........................2瓣
青陽辣椒..................1/2隻
蔥花..........................1/2棵
做法:-
1. 熱鍋下麻油、牛肩胛片、大醬炒香,然後下韓國燒酒/米酒煮開。
2. 將昆布魚乾湯注入鍋內,下辣椒醬、蒜蓉、洋蔥、豆腐煮6分鐘,然後下韓國櫛瓜煮5分鐘。
3. 最後加入金菇、青陽辣椒和蔥花便可。
小貼士:-
1. 韓國大醬跟韓國辣椒醬之比例為2:1。
2. 用淘米水去煮昆布魚乾湯,然後再用來烹調大醬湯,可使大醬湯更濃稠,更具風味。

材料:-
洗米水/淘米水...............350ml
昆布...............................1片
鯷魚乾(去頭和內臟)......12條
做法:-

・牛薄切り肉 200g
・おろしにんにく 小さじ1
・おろし生姜 小さじ1
・砂糖 大さじ1
・醤油 大さじ1
・酒 大さじ1
・ごま油 大さじ1
・唐辛子パウダー 適量
・サラダ油 大さじ2
・唐辛子パウダー 適量
・にんじん 1本
・長ネギ 2本
・ゼンマイ 100~150g
・水 500ml
・ダシダ 小さじ1.5~2
・コチュジャン 大さじ1
・醤油 大さじ1
・豆もやし 200g
・ニラ 1束
・白ごま 適量
【準備】
・牛肉に下味の調味料を揉みこんでおく(ビニール袋でOK)
・にんじんを5cmくらいの細切りにする
・長ネギを5mmくらいの厚さで斜めにスライスする
・ゼンマイ、ニラを4cmくらいの長さにカットする
【作り方】
1. フライパンに油を薄くひき、下味を漬け込んだ牛肉を調味料ごと全て入れ、中火で8割くらい火を通し、いったん置いておく
2. 鍋や大きめのフライパンにサラダ油大さじ2・唐辛子パウダーを入れて弱火にかけ、油が温まったらにんじん・長ネギ・ゼンマイを入れる
3. 中火にして長ネギが多少くたっとするまで炒める
4. 水500ml・ダシダ小さじ1.5~2・コチュジャン大さじ1・醤油大さじ1を加える
5. 牛肉も調味料ごと加えて数分煮て、もやし・ニラを加えてくたっとするまで加熱する
6. 味見して醤油または塩で味を調整し、白ごまをちらして出来上がり

*1 tablespoon gochujang
*1 tablespoon soy sauce
*Bean sprouts 200 g
*1 bunch of Chinese chives
*White sesame seeds, to taste
[Preparation]
*Rub the seasoning ingredients into the beef (You can use a plastic bag.).
*Julienne the carrot to around 5cm.
*Slice the Japanese leek diagonally with a thickness of around 5mm.
*Cut the spring onion and chive to a length of around 4cm.
[How to make it.]
1.Lightly coat a frying pan with oil, add in all of the marinated beef including the seasonings, cook it over medium heat for about 80%, and leave it for a while.
2.Add 2 tablespoons of vegetable oil and red chili pepper powder in a pot or large pan and turn the heat to low. Add the carrot, leek and spring onion when the oil warms up.
3.Turn it to medium-heat and stir-fry it until the Japanese leek becomes a lot and a bit.
4.Add 500 ml of water, 1.5 ~ 2 teaspoons of Dashida, 1 tablespoon of gochujang and 1 tablespoon of soy sauce.
5.Add the beef along with the seasonings and simmer it for a few minutes. Add the bean sprouts and chives and heat it until it thickens.
6.Check the taste and adjust the taste with soy sauce or salt. Sprinkle white sesame and it will be complete.
