【材料】
・ごま油 大さじ1
・長ネギ 1本
・豚薄切り肉 350g
・たけのこ 150~200g
・干し椎茸 4~5個
・きくらげ 3~4枚
・干し椎茸の戻し汁 200ml
・春雨 24g(乾燥時)
・小ねぎ 1/2束
・ごま油 小さじ1.5
合わせ調味料
・鶏ガラスープの素 小さじ1/2
・酒 大さじ1
・醤油 大さじ1
・砂糖 小さじ2
・オイスターソース 小さじ1
・酢 小さじ1/2
・黒胡椒 少々
・片栗粉 大さじ1
・小麦粉 大さじ1
・水 大さじ1
・春巻きの皮 10~15枚
・揚げ油 適量
【準備】
・干し椎茸を水かお湯(300ml程度)で戻す(戻し汁は取っておく)
・きくらげ、春雨を水かお湯戻す
・合わせ調味料を合わせておく
・長ネギを斜めにスライスする
・小ねぎを5cmほどの長さでカットする
・たけのこを細切りにし、沸騰したお湯でさっと茹でて水気を切っておく
・戻した春雨をぶつ切りにする
・戻したきくらげ、干し椎茸の石づきを取って細切りにする
・小麦粉と水、各大さじ1を混ぜておく(春巻きの皮を接着するのりになります)
【作り方】
1. 【あんの準備】フライパンにごま油大さじ1を熱し、長ネギを炒める
2. 香りが出てきたら豚肉を加え、ほぐしながら色が変わるまでざっと炒める
3. たけのこ・きくらげ・干し椎茸を加え、干し椎茸の戻し汁200ml・合わせ調味料(もう1度混ぜて)を加える
4. 混ぜながら加熱しとろみがついたら春雨を加えて混ぜ、小ねぎを加えて混ぜしんなりしたら火を止める
5. ごま油小さじ1.5くらいを混ぜ、バット等に広げて密着ラップをして上に保冷剤をのせて冷ます
6. 粗熱が取れたら冷蔵庫で冷やしておく(熱いままだと包みにくいため)
7. 【本調理】春巻きの皮をはがし、つるつるしたほうが表になるので、ザラザラしたほうを上に向けてあんをのせていく
8. 正面に角が来るように置き、少し手前にあんをのせて1周巻いて、左右の角に小麦粉ののりをつける
9. 折りたたんで貼り付け、空気が入るようにゆるく最後まで巻いて、巻き終わりにのりをつけて接着する
10. 150℃の揚げ油でじっくり、温度を維持しながらたまに返したりして10分を目安に揚げていく
11. 皮がほどほどに色づき、箸で持った時に中が沸騰している振動が手に伝わればあんが熱々になっている証拠
12. さらにきつね色・カリカリに揚げたい場合は最後に高温にして揚げて取り出し、油を切る

Harusame Salad is a very refreshing noodle salad with lots of vegetables. Perfect dish during the hot and humid summer season. However it can be served all year long ;)
Vegetarian people can remove the ham and egg (seasonings are just fine, so you don't have to add anything to substitute them)!

Harusame Noodle Salad
Difficulty: Easy
Time: 30min
Number of servings: 4
Ingredients:
40g (1.4oz.) Harusame noodles (cellophane noodles)
4 slices ham
1/2 cucumber
50g (1.8oz.) carrot
1 egg
a pinch of salt
cooking oil
Seasonings
* 1 tbsp. vinegar (rice or cereal)
* 1 tbsp. soy sauce
* 1 tbsp. ground toasted white sesame seeds
* 1/2 tbsp. sesame oil
* 1 tsp. sugar
lemon juice if you like
Directions:
1. Cut ham and cucumber into thin strips.
2. Cut carrot into thin strips, place them on a microwavable dish, cover with plastic wrap, then microwave at 500w for 1 minute to make them soft.
3. Season an egg with a pinch of salt, then mix well. Heat cooking oil in a frying pan and make 1 or 2 thin omelets (depending on the size of your frying pan). Leave to cool on a plate, then cut into thin strips.
4. Cook Harusame noodles in boiling water, wash with cold water, cut into bite size pieces if necessary, then drain well.
5. In a large bowl, mix the seasonings. Add cucumber, ham, carrot, egg, and Harusame, then toss well to coat. If you like, you can mix in some lemon juice to finish to add more refreshing flavor ;)
