Hello friends! Today we're going to share with you how to make a classic carrot cake and velvety cream cheese frosting.
Be honest, we’ve never tried a carrot cake before, until we found this recipe. We’re so surprised that It’s so easy and super super yummy. Everybody loves it. This cake is totally different from sponge cake or chiffon cake, it’s dense, super soft and deeply moist. And adding the walnuts in the batter is the perfect combination.
Carrot cake is an old fashioned dessert. Many food historians believe carrot cake originated from Europeans in the Middle Ages, when sugar and sweeteners were expensive and many people used carrots as a substitute for sugar. Even use it to make desserts.
This recipe is from the famed Rose Bakery in Paris. Their carrot cake is the best selling item in each of its locations in Paris, London, New York, Tokyo, Seoul and etc. And now it’s also our best ever carrot cake. We invite you to enjoy and explore this new cake.

How to make Carrot Cake Recipe

☞ Cake pan size: 15cm/ 6inch
✎ Ingredients
☞ For the cake
carrots 250g, peeled
egg 2, at room temperature
granulated sugar 112g
vegetable oil 150ml (133g)
all-purpose flour 150g
ground cinnamon 1.3g (1/2 tsp)
baking powder 2g (1/2 tsp)
baking soda 1.5g (1/4 tsp)
salt 1.6g (1/4 tsp)
walnuts 75g
☞ For the icing
cream cheese 125g, at room temperature
unsalted butter 62g, at room temperature
vanilla extract 2g (¼ tsp)
powdered sugar 30g
✎ Intructions
1. Preheat the oven to 170˚C
2. Butter the cake pan and line its base with a parchment paper.
3. Roughly chop the walnuts and then place them into the food processor, use the pulse function so you don’t end up with walnut paste.
4. Peel the carrots and remove the top and bottom. Cut into small chunks. Place the carrot chunks into the food processor, finely grated. Or grate the carrots on the small holes of grater. Set aside.
5. In a large bowl, combine flour, baking soda, baking powder, ground cinnamon and salt together, mix well.
6. Beat the eggs and sugar on medium speed for 3 minutes with an electric hand mixer, until fluffy and a bit of light.
7. Gradually pour in the oil little by little while beating constantly until fully combined.
8. Add the carrots and fold evenly by spatula, then add the dry ingredients into the mixture until just to incorporate. Finally fold in the walnuts.
9. Pour the mixture into the prepared pan and bake for about 45~50 minutes or until a knife or sticker inserted in the center comes out clean.
10. Remove from the oven and let cool in the pan, once the pan is cool to the touch, remove the cake from the pan and let cool completely on the rack.
11. Make the icing. Beat the butter with vanilla extract, till smooth, then add the cream cheese and beat for a few minutes till the mixture is well combined. Add the powdered sugar and mix well.
12. When the cake is cold, ice the top with the icing, it can be as smooth or rough as you like.

made with sponge cake, custard, and fruit, this is a very nice dessert to share with family and friends. It's delicious and pretty, great for a get-together. I made this recipe to use up all the egg white and yolk, so you will not have any leftover yolk like other recipes.
Recipe:
Ingredients for the cake
5 egg white
sugar 100g
butter 40g
lemon juice 1 tbsp (optional)
lemon zest 1tbsp (optional)
milk 2tbsp
flour 150g
baking powder 1 tsp
vanilla 1 tsp
pinch of salt
Custard Fruit cake/ german fruit cake
Ingredients for the custard
5 egg yolk L
sugar 100g
butter 40g
milk 2 cups
vanilla 2 tsp
pinch of salt
fruits of your choice
Tips:
1. don't over mix the batter when incorporating flower
2. it's better to use cake flour. but if you don't have, use all-purpose
3. my oven needed 16 minutes baking time but you might need 2 -3 minutes more depending on your oven type. feel free to adjust.
4. you can adjust the consistency of your custard by increasing the corn starch a little.

ALMOND COCONUT COOKIES
Ingredients:
1. 2 Egg Whites
2. ½ cup Shredded Coconut
3. 1 tbsp. Desiccated Coconut
4. 4 tbsp. Coconut Sugar
5. ½ tsp. Vanilla Extract
Steps:
1. Pre heat your oven to 150°C / 300 °F.
2. Line a baking tray with baking paper.
3. Separate egg whites into a mixing bowl and whisk on high until the egg whites become stiff.
4. Add in all other ingredients. Fold in with a metal spoon until thoroughly combined.
5. Using a tablespoon, measure out mixture and place on lined baking tray to make a total of 9 cookies.
6. Add a slither of an almond on top of each cookie and bake in oven for 15 minutes.
7. Once your cookies have cooled you can melt some dark chocolate and drizzle them over the cookies.
These cookies are gluten and dairy free, if you choose not to add the chocolate drizzle.
RAW CACAO WALNUT CAKE
Ingredients:
1. ¼ cup Shredded Toasted Coconut
2. 3 cups Walnuts
3. 1/3 cup Sultanas
4. 15 Pitted Dates
5. 1/3 cup Cacao / Cocoa Powder
6. 1/3 cup Coconut oil
7. 1 cup Rolled Oats
8. 2 tsp. Vanilla Extract
Steps:
1. Line an 8-inch cake tin with baking paper.
2. Cover walnuts and sultanas with boiling hot water and let it sit for 10 minutes to help soften for blending and easy digestion.
3. Drain nuts and sultanas and add to food processor. Blend until you get a thick paste texture.
4. Add in dates and blend. You can stop the machine and push the ingredients down as you go.
5. Once combined, add in the rest of the ingredients.
6. Blend again until smooth and well combined.
7. Transfer mixture into the lined baking tin and use the back of a spoon to even out the mixture.
8. Cover with cling film and chill in the fridge for 2 hours.
9. You can choose to decorate with shredded coconut or sprinkle with cacao nibs. Slice & serve.
This recipes is suitable for Vegans. It is also gluten-free, dairy-free, without added artificial sugar.
Mini Mango Sponge Cakes
Ingredients:
1. Mascarpone
2. Lime zest
3. Mango
4. Passion fruit
Steps:
1. Cut out sponge cake into desired shapes. You can either make your own sponge cake or buy ready ones in the shop.
2. Top the cakes with mascarpone and mango chunks. Drizzle with passion fruit and lime zest.
