Indonesian Curry Prawn (Curry Shrimp)

3 cloves garlic
1 stalk lemongrass (only use the white stem portion)
2 fresh red chilli (deseeded)
10g young ginger
1 chilli padi (optional)
4 kaffir lime leaves
1/2 teaspoon coriander seed powder
1 teaspoon turmeric powder
80ml water

20g belacan (dry fry first before using)
A small bunch of curry leaves
1 large red onion (cut into chunks)
300ml water
400g prawns
1/2 teaspoon sugar
1 tablespoon fish sauce (or light soy sauce)

Lontong is a Malay dish that can easily be found in Indonesia, Malaysia and Singapore. If you have never tried lontong before, just imagine you're eating curry vegetables with rice cake (which is actually known as compressed rice or nasi impit). In Singapore, lontong is usually enjoyed as breakfast but it's also available during lunch time and dinner time.

Part 1: Blending
2 pcs of fresh red chilli (cayenne pepper) - deseeded
1 piece of big red onion
3 cloves of garlic
10 pieces of shallots
30g of dried shrimp - rehydrated
10g of galangal
10g of young ginger
3 pieces of candlenuts
8 pieces of dried red chilli (cayenne pepper) - rehydrated & deseeded)
2 stalks of lemongrass - use only the white part
1 cup of water (from rehydration of dried shrimp)
Part 2: Frying & boiling

10g of belacan
Some cooking oil
Blended spice paste (rempah paste)
1 tablespoon of turmeric powder
1 tablespoon of meat or vegetable curry powder
800ml of water
1 chicken stock cube
170g of carrots - cut into strips
140g of long beans - cut into finger length
2 pcs of firm tofu - panfried
250g of round cabbage
400ml of coconut
2 teaspoons of salt
1/2 teaspoon of sugar
Part 3: Garnishing
80g of grated coconut
1/4 teaspoon of salt

Spice N' Pans goes live in public! This is Roland's first live cooking demonstration held at Takashimaya in Singapore. Held on 9 March 2019, Roland demonstrated very easy recipes to prepare Chinese Soy Sauce Chicken as well as Chicken Rendang on the spot. Even though Roland is used to doing presentation in front of hundreds at his company events, this live cooking demo was both a nerve-wrecking as well as exciting experience for Roland because this was his first time cooking in front of so many pairs of eyes :)

1kg chicken (thigh)
1 thumb size ginger
4 stalks spring onion
1 whole bulb garlic
3 pcs cinnamon bark

3 star anise
25 grams rock sugar
1 cup dark soya sauce
1 litre water
4 tablespoon light soya sauce
4 tablespoon Chinese rice wine
1 teaspoon salt
Marinade
2 tablespoon dark soya sauce
8 tablespoon light soya sauce
4 stalks spring onion (lightly bruised)
4 cloves garlic ( bruised)
Ingredients for Chicken Rendang

1kg chicken boneless thigh
Cooking oil
2 cinnamon bark

5 cardamon pod
2 cups thick coconut milk
3pcs kaffir lime leaves (thinely sliced)
5pcs kaffir lime leaves (crushed)
1 cup grated coconut (lightly toasted till light golden brown)
Salts and sugar to taste

10 shallots
1 inch Galangal
1 inch Ginger
4 stalks lemongrass
6 cloves garlic
1 1/2 teaspoon tumeric powder
15pcs dried chilli (reseeded and rehydrated)
