巧克力慕斯就是我心中最完美的甜點之一。這一年來接觸全素食譜，試過用不同的食材製作巧克力慕斯，像是酪梨、鷹嘴豆水(Aquafaba)等；豆腐其實在試作 Jamie Oliver 的巧克力慕斯中就有用到，但那個食譜的成品我並沒有很滿意...所以後來又看了許多類似的食譜再自己調整，做出這個目前有我最滿意的口感與濃度的 豆腐巧克力慕斯。
