In this video, we are going to tell you the secret to making the perfect Belgian fries. There is no fancy skill to make these crispy fries, the only tip is double-fried. So easy, right? By the way, once the fries are ready to golden perfection, don’t forget to try the most classic sauce with it. How to make Belgian Fries and Sauce Andalouse
📍 Ingredients
☞ For fries
large potato 1, about 260~280g
salt 1g
sunflower oil or any deep-frying oil
☞ For Sauce andalouse
mayonnaise 125g
salt 0.8g (about ⅛ tbs)
tomato paste 14g (about 1 tbs)
onion 9g (about 1tbs)
red pepper 9g (about 1tbs)
green pepper 9g (about 1tbs)
fresh lemon juice 4g (about ½ tbs)
📍 Instructions
☞ For Sauce Andalouse
1. Chop red pepper, green pepper and onion finely.
2. In a medium bowl with mayonnaise, add the tomato paste, black pepper, salt, chili powder, finely chopped onion, red pepper, green pepper and lemon juice, then mix all the ingredients together. Cover with plastic wrap and place in the fridge for at least one hour.
☞ For fries
3. Brush and rinse potatoes under cool water, then peel the skin and dry it in a clean dish towel.
4. Cut the potatoes into discs in 1cm thickness, then cut the discs into fries into 1cm squares.
5. Wash them in cold water two or three times until the water just becomes clear.
6. Dry them with a towel or kitchen paper until they are completely dry.
7. Pour the oil in a deep fryer and when the temperature reaches 150°C, fry the potatoes for 3 minutes.
8. Take the fries out of the fryer and transfer them into a baking tray which is lined with kitchen paper. Let the kitchen paper absorb the excess oil. Let the fries cool down for about 20 minutes.
9. Reheat the fryer to reach 190°C, and fry the fries for 2-3 minutes or until they are crispy and golden.
10. Take them out of the oil. Sprinkle it with salt. Serve with Sauce Andalouse.

材料:
■ラズベリージャム
ラズベリー 250g
グラニュー糖 100g
レモン汁 小さじ2
■ちぎりパン
オイルスプレー
ハワイアンスイートブレッド 1袋(12ロール)
ターキーハム (スライスしたもの) 115g
ハニーハム (スライスしたもの) 115g
スイスチーズ (細切り) 110g
卵 (溶いておく) 1個
無塩バター (溶かしておく) 大さじ4
粉砂糖 適量
作り方:
1.ラズベリージャムを作る。中火にかけた鍋にラズベリーを入れ、実がつぶれて香りがするまで4分ほど煮る。砂糖を加え、絶えずかき混ぜながらとろみがつくまで10~15分ほど煮る。レモン汁を加えて混ぜる。鍋を火から下ろし、ジャムを完全に冷ます。冷蔵庫に移し、最低でも2時間、または一晩冷やす。
2.オーブンを160℃に予熱する。天板にアルミホイルを敷く。アルミホイルは両サイド少し長めに残しておき、持ち運びできるようにしておく。オイルスプレーをふりかけておく。
3.ハワイアンブレッドを横半分にカットする。(各ロールは切り離されないようにしておく)底半分を(2)の中央に置く。
4.(3)のパンの上にターキーハムとハニーハムを重ねる。各ロールに2枚のハムが収まるように折りたたんで配置する。その上にスイスチーズをのせる。
5.ハワイアンブレッドの上半分に(1)のラズベリージャムを塗り、チーズの層の上に軽く押さえてのせる。
6.小さなボウルに卵と溶かしたバターを入れて混ぜる。(5)の上にたっぷりと塗る。
7.チーズが完全に溶け、パンがトーストされるまで25-30分ほど焼く。表面が焦げてきそうなら、アルミホイルを軽くかぶせる。
8.オーブンから取り出し、10分ほど冷ましてから、皿に盛り付ける。軽く粉砂糖をまぶしたら、完成!
Monte Cristo Pull-Apart Sliders
for 12 sliders
Ingredients:
RASPBERRY JAM
2 cups raspberry(250 g)
½ cup granulated sugar(100 g)
2 teaspoons fresh lemon juice
SLIDERS
nonstick cooking spray, for greasing
1 package sweet hawaiian dinner rolls, 12 count
¼ lb roasted turkey(115 g), sliced
¼ lb honey ham(115 g), sliced
¼ lb swiss cheese(110 g), grated
1 large egg, beaten
4 tablespoons unsalted butter, melted
powdered sugar, for dusting
Preparation:
1.Make the raspberry jam: In a medium saucepan over medium heat, cook the raspberries for about 4 minutes, until they start to burst and become very fragrant. Add the sugar and cook, stirring constantly, for 10-15 minutes, until running a spoon through the jam leaves an open trail at the bottom of the pot. Stir in the lemon juice. Remove the pot from the heat and let the jam cool completely. Transfer to the refrigerator and chill for at least 2 hours or overnight.
2.Make the sliders: Preheat the oven to 325°F (160°C). Line a small baking sheet with foil, leaving enough overhang so the sides can be used as handles. Grease with nonstick spray.
3.Slice the sheet of Hawaiian rolls in half horizontally, leaving the individual rolls connected. Place the bottom half in the prepared baking sheet.
4.Layer the turkey and ham on top, making sure to fold the meat to fit inside the individual squares of the rolls, then top with the Swiss cheese.
5.Spread the raspberry jam over the top half of the rolls and place on top of the cheese layer, pressing down lightly.
6.In a small bowl, mix together the egg and melted butter. Liberally brush on top of the rolls.
7.Bake the sliders until the cheese is completely melted and the buns are toasted, 25-30 minutes. If the tops begin to brown too quickly, cover loosely with foil.
8.Remove the sliders from oven and let cool for about 10 minutes, then transfer to a serving platter. Dust lightly with powdered sugar and serve whole so the sliders can be pulled apart.
9.Enjoy!

How to make
Preparation. Let the cream cheese return to room temperature. Cut the strawberry for topping into 1cm squares.
