New year’s eve is just like Christmas Eve in the western countries. There are classic dishes like nian gao (a sweet glutinous cake), turnip cake, fa gao...etc. All the classic dishes signify certain meanings and blessings. Sausage is one of them! Back then, it was for people, mainly labourers, who can’t make it home for the new year’s eve dinner to have a taste of home, because preserved meats are easier to transport. It is the flavours that I’ve always missed! As a tradition, my mom makes the sausages from scratch! Perfect proportions of fats and meat (at least it’s perfect for me 🙊), and my grabdma’s recipe (I don’t know it...).
