Prawn Paste Chicken Pot 虾酱鸡煲
Ingredients:
Serves 4 pax

Marinate the following together and marinate for 15 minutes.

500g (17.4 oz) boneless chicken thigh
1 tablespoon oyster sauce
1 tablespoon prawn paste
1 teaspoon sugar
A few dashes of white pepper
2 tablespoons cornflour
1 tablespoon sesame oil
Other ingredients

1 yellow onion (sliced)
6 shallots (cut into halves)
5 cloves of garlic (cut into halves)
3 dried chilli (rehydrated & deseeded) - optional
1 stalk of spring onion
1/2 cup (125ml or 4.23 fl oz) Chinese white rice wine
1/2 cup (125ml or 4.23 fl oz) water
1 tablespoon premium dark soy sauce
A small bunch of coriander leaves (optional)
