♥ Ingredients:
(Makes 14 spring rolls)
14 rice wrappers (8 ½ inch diameter)
½ lb (230g) large tiger shrimp, peeled, deveined & cooked
4 oz (110g) pork belly, cooked (Watch this video: https://www.youtube.com/watch?v=W7mZUwyAa_4)
4 large eggs
¼ tsp fish sauce
2 oz (60ml) water
½ tsp corn starch
1 head of lettuce
1 English cucumber
1 carrot
½ cup fresh mint leaves
½ cup perilla (Tía tô)
½ cup fish mint (Giấp cá)
14 garlic chive leaves (optional)
Oil
A pinch of black pepper
Peanut butter sauce
(About 1 cup)
½ cup (120ml) hoisin sauce
3 tbsp creamy peanut butter
¾ cup (180 ml) water
2 shallots, minced
1 tsp oil
2 tbsp crushed roasted peanuts
