INGREDIENTS (6 servings)
A. MUNG BEAN PASTE
120 g mung beans
50 – 70 g caster sugar (about 1/4 - 1/3 cup, to taste)
B. GRASS JELLY & COCONUT MILK
250 ml (coconut milk)
15 - 20 g caster sugar to taste (about 1 - 1.5 tbsp)
2 - 3 pandan leaves - optional
25 g white grass jelly powder (see notes below)
400 ml water to cook with jelly powder
40 - 50 g caster sugar (about 1/4 cup - to taste) - to sweeten jelly
C. RAINBOW TAPIOCA PEARLS AND OTHER INGREDIENTS
200 g water chestnuts fresh or canned (or substituted with apples)
150 g tapioca starch
food color: red, yellow, green
grounded ice cubes
* If you can't find white grass jelly powder is available in Asian stores. If you can't find it, feel free to substitute with agar powder or gelatin. For 400 ml water, use 4 g agar powder (1 tsp) or 12 g gelatin.

NGUYÊN LIỆU (6 phần ăn)
A. Phần chè đậu xanh
120 g đậu xanh khô đã xát vỏ (mung beans)
50 – 70 g đường (định lượng thay đổi theo khẩu vị)
B. Phần thạch sương sáo và cốt dừa
250 ml nước cốt dừa (coconut milk)
15 - 20 g đường tuỳ khẩu vị
2 - 3 lá nếp/ lá dứa tươi (pandan leaves - không bắt buộc)
25 g bột thạch sương sáo trắng hoặc đen
400 ml nước để nấu thạch sương sáo
40 - 50 g đường (để hoà vào thạch - tuỳ khẩu vị)
C. Phần hạt lựu & các nguyên liệu khác
200 g củ năng (củ mã thầy)/ water chestnuts - loại tươi hoặc đóng hộp
150 g bột năng - tapioca starch
màu thực phẩm xanh, đỏ, vàng

Sweetened red kidney beans:
1 16-oz can (453g) red kidney beans
½ cup (100g) sugar
Coconut milk:
1 13.5-oz can (400ml) coconut milk
¼ cup (50g) sugar
¼ tsp salt
Crushed ice

Ingredients:
For coffee layer:
1 tbsp agar-agar powder (Telephone / Champion Cup Brand)
4 tbsp water
1 cup brew coffe / milk coffee
1 cup water
2-3 tbsp sugar
For coconut layer
1 tbsp agar-agar powder
4 tbsp water
1 cup coconut milk
1 cup water
2-3 tbsp sugar
For pandan layer:
1 tbsp agar-agar powder
4 tbsp water
2 cups water
1/2 tsp pandan extract
2-3 tbsp sugar
For other colors
1 tbsp agar-agar powder
4 tbsp water
2 cups juice (carrot for orange, berries for red etc)
2-3 tbsp sugar
** Note: This recipe makes quite firm jelly, so if you want it a bit softer, you may increase water amount for each layer from 1 cup to 1+1/4 cup. Happy cooking ^^
