Blueberry Muffins
Ingredients
(Dry)
2 cups All-purpose flour
1 cup Pastry flour
1 tbsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
3 tbsps Oats
1 1/2 tbsps Cinnamon
(Wet)
8 oz Unsalted Butter
2 Extra large Eggs
1 1/4 cups Milk
1 tsp Vanilla Extract
1 cup Sugar
1 1/2 cups Blueberry
1/2 cup Hazelnuts or Almonds
Procedure
-Preheat oven to 375F/180C
-Line 12 muffin pan with the papaer cups
1. Mix dry ingredients together.
2. Mix together wet ingredients. Stir well.
3. Make a hole in the center of dry ingredients and pour the wet ingredient into it. Mix well.
4. Stir in sugar.
5. Fold in 3/4 of blueberry.
6. Spoon ingredients into the paper cups. About 2 spoons each.
7. Put the rest of blueberry on top. Sprinkle with nuts, cinnamon, oats and some sugar
8. Bake for about 20-25 minutes or until the toothpicks inserted into the cake come out clean.
9. Cool on the rack.
10. Enjoy them immediately or put in the airtight container and refrigerate for upto 5 days; freeze for 10.
