Preserved Bean Curd Fried Chicken
2 Chicken whole leg with or without bones
- cut into bite size
2 to 3 tsp Preserved Bean Curd
1 tbs Sugar
1/8 tsp salt
1 to 2 tbs oil. (more oil get crisper crust)
Dash of pepper
1 egg
1 inche ginger finely blended
2 cloves garlic finely blended
3 tbs wheat flour
3 tbs corn flour or tapioca Flour
1 cap cooking wine or whisky or brandy
#mix Well and cover. Marinate in refrigerator for 30 minutes to 12 hours if you have time.
1. Heat up oil in wok. Tune to medium flame.
2. Add in chicken piece by piece.
3. Fry until batter set and split the chicken pieces.
4. Stir gently to get evenly fried chicken.
5. Strain chicken pieces when almost done.
6. High flame, bring up oil temperature.
7. Deep fry again and stir constantly to get Crispy Crust. SERVE HOT 👍😋 Enjoy 👍
《腐乳炸鸡》
2 只鸡全腿带骨或去骨
- 切小块
2 to 3 茶匙 腐茹
1 汤匙 糖
1/8 茶匙 盐
1 to 2 汤匙 油. (油多一点可以脆一点)
少许 胡椒粉
1 颗 蛋
1 寸姜 -打细茸
2瓣 蒜头 -打成茸
3 汤匙 面粉
3 汤匙 玉米粉 或 胡椒粉
1 盖 料理酒 或烈酒
#捞匀关盖,腌制三十分钟到12小时。
1. 大火烧热一锅油,转中火。
2. 一块一块地把鸡放入油锅里炸。
3. 粉浆开始凝固后,翻面,慢慢搅动。
4. 一边炸一边搅动。
5. 要好前把鸡块捞起。
6. 大火再度把油温拉升。
7. 再次把鸡块放入锅内炸脆。不停搅拌。炸好后捞起沥干油。
