《新年健康食譜- 紅棗糕》
今年屋企整紅棗糕,用咗成三大碗香甜嘅紅棗去整!食起嚟有好香紅棗味,口感煙韌,忍唔住食完一件又一件!😋😋😋
比起市面上嘅紅棗糕,我減少咗添加糖嘅份量。大家亦可以用甜菊糖去進一步減少糖分。而且自製紅棗糕會更真材實料!最近見到市面上有一啲紅棗糕,竟然落好少紅棗,再加老抽、色素同調味劑!😡😡😡
好易整㗎咋,廚房新手都會整到!食完紅棗糕,祝大家新一年大紅大紫,「紅」運當頭!
材料(約20件,1.5寸方塊)
紅棗 (連核計算) 300克
水 500-700毫升
木薯粉 200克
馬蹄粉 30克
糯米粉 30克
片糖 90克
(要因應紅棗的甜度而調整片糖份量。或可使用4-5湯匙甜菊糖代替片糖)
做法:
1. 紅棗洗淨,開邊去核。
2. 煲滾500 毫升水,把紅棗放水中煲爛。放入攪拌機打茸,用篩和湯匙壓出棗蓉。
3. 把棗蓉加水至700毫升放入煲內,加入片糖/甜菊糖用小火煮至糖完全溶化,放涼備用。
4. 木薯粉丶糯米粉及馬蹄粉放入一大碗中拌勻。倒入已放涼的棗蓉水,混合至沒有粉粒。過篩以確保沒有粉粒。
5. 在鑊中加入蒸架,加入水,煲滾。在蒸模內先掃一層薄薄的油,放入已煲滾水的鑊中。在模內,先倒入大約0.5 厘米厚的粉漿。加蓋大火隔水蒸5-6分鐘至已凝固及變色,再倒入另一層粉漿。重複此步驟至8成滿。
6. 最後就可以最用大火隔水蒸15分鐘,取出放涼,即成。
煮食小貼士 :
1. 粉漿會沉底,所以一定要每次都攪勻後,才倒入蒸模中。
2. 想節省功夫,可以考慮每次倒入更多的粉漿,那就可以蒸少一點層數。
3 要待紅棗糕完全涼透才脫模。切時一定要一刀過切,否則不美觀。
4. 想減省糖分,可使用甜菊糖,熱量減少24%!

For the seasoning, I used chicken stock and white miso. The chicken stock adds a nice and rich flavor and white miso makes the dish slightly sweet and tasty!
It can be very colorful and festive recipe for Chinese Lunar New Year's day. Also, it is perfect for every-day bento box :)
BTW, at our wedding, we could luckily cater chef Wakiya's fancy and healthy Chinese cuisine from "トゥーランドット遊仙境 - Turandot Yusenkyo" restaurant in Akasaka.

Chinese Style White Miso Stir Fried Seven Vegetables
Difficulty: Easy
Time: 20min
Number of servings: 2
Ingredients:
75g (2.6oz.) ham
100g (3.5oz.) onion
50g (1.8oz.) carrot
100g (3.5oz.) zucchini
100g (3.5oz.) bean sprouts
50g (1.8oz.) red bell pepper
6 dried cloud ear mushrooms (you can use 3 shiitake mushrooms)

* 2 tbsp. white miso (it tastes different but you can use 1 tbsp. regular miso)
* 1 tbsp. sake
* 1 tbsp. mirin (sweet sake)
* 1/2 tbsp. chicken stock powder
* 1 tsp. sugar
1/2 tbsp. cooking oil
cracked black pepper
Directions:
1. Soak the dried cloud ear mushrooms in hot water for at least fifteen minutes. Then drain and cut into strips. Trim the bean sprouts at both ends if you prefer. Cut ham, carrot, zucchini and red bell pepper into strips. Thinly slice onion.
2. Mix A.
3. Heat cooking oil in a frying pan, stir-fry onion, carrot, zucchini, bean sprouts, red bell pepper, cloud ear mushrooms, and ham in order. Add A and stir-fry until the seasonings blend. Serve on the dish and sprinkle cracked black pepper.
