黃耳湯潤肺抗秋燥
踏入初秋,開始感受到秋燥的威力,皮膚開始變得繃緊乾燥,除了多塗抹潤膚乳,還要記得內在調理,多飲用有滋陰潤肺功效的湯水,增加身體津液。滋潤湯水常用到雪耳,而肉質較厚的黃耳,其滋潤效果一樣高,而且補脾胃效能更勝雪耳,特別適合陰虛、血虛、氣虛、陽虛體質人士食用。乾身的黃耳皺褶很多像個小腦袋,煲煮前要先清洗,並且浸泡數小時至軟身才使用,小小的黃耳浸泡後可發大數倍,除了煲湯,黃耳本身帶有淡淡桂花香味,煮糖水同樣美味。
滋陰潤燥湯水小貼士:
適當地添加滋陰潤燥的食材如沙參、玉竹、麥冬、枸杞子等。
黃耳百合螺頭烏雞湯
功效:健脾潤肺,有助舒緩因為乾燥而出現的不適症狀。
材料:黃耳2塊、新鮮百合1個、蓮子40克、乾淮山20克、乾螺頭5塊、烏雞1隻、蜜棗2枚
做法:
1. 所有材料洗淨,烏雞氽水備用;百合剝開一片片,黃耳及乾螺頭浸泡至軟身備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮2小時,最後下鹽調味即可。

Yellow fungus soup moistens the lungs to combat autumn dryness

Nourishing soups with moistening property normally involve snow fungus. A small-sized yellow fungus can expand several times from its original size. Yellow fungus, which carries a mild sweet osmanthus fragrance, is also a suitable ingredient for sweet soup or dessert.
Tips for soup to nourish yin and relieve dryness
Appropriately add in ingredients such as glehnia root, polygonatum root, radix ophiopogonis and wolfberry etc.
Yellow fungus soup with lily bulb and black chicken
Effects: Strengthens the spleen and nourishes the lungs. Relieves symptoms caused by dryness.
Ingredients: 2 yellow fungus, 1 fresh lily bulb, 40g lotus seed, 20g dried Chinese yam, 5 dried couches, 1 black chicken, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Blanche black chicken and set aside. Peel lily bulb. Soak yellow fungus and dried couches until soft.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 2 hour. Add salt to taste.

做法:
1. 所有材料洗淨,紅蘿蔔去皮切塊;烏雞汆水備用。
2. 鍋中加入2000毫升水,放入全部材料,武火煮至水滾,調文火煮1小時,最後下鹽調味即可。

Replenish yin to relieve burning sensation of the five centres
There is a phrase in Chinese that refers to ‘burning sensation of the five centres, but where exactly are these ‘five centres’? They actually refer to the left and right palms and soles of our feet, as well as our chest.
According to the Chinese medicine theories, these five centres are yin in nature, and if an individual is deficient of yin, his or her body will produce heat from within, causing the five centres to feel warm. Nevertheless, the body temperature may not increase. Individuals with this condition like to grab cool objects, as their palms are constantly giving out heat, and when they sleep, they tend to extend their hands and legs out of the blanket.
The burning sensation of the five centres is often caused by frequent late nights, obsession with spicy food, emotional distress, menopause and stagnant heat in the body during the post-surgery period, and the feeling often happens to individuals with yin deficiency. As the body remains constantly dehydrated, other related symptoms such as dry mouth and tongue, dry skin, constipation and insomnia will also become apparent.
In order to improve such condition, do consume food that will nourish the yin, for instance, snow fungus, glehnia root, lily bulb, dendrobium and American ginseng; cut down on spicy, deep-fried and greasy food, and cultivate the habit of sleeping early, as it can help relieve symptoms caused by the yin deficiency.
Tips for soup to nourish yin and relieve dryness :
Appropriately add in ingredients such as lily bulb, dendrobium and American ginseng.
Carrot soup with black-bone chicken and polygonatum root
Effects: Nourishes yin and relieves dryness. Alleviates dryness related symptoms such as dry mouth, dry skin and constipation.
Ingredients: 2 carrots, 80g hairy fig root, 20g polygonatum root, 1 black-bone chicken, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Peel carrot and cut into pieces. Blanche black-bone chicken and set aside.

除此之外,肺主皮毛,人們秋季養肺時,也可以選用宣肺化痰、滋陰益氣的中藥,例如沙參、西洋參、川貝等等,不僅可增強肺對於秋燥和外邪的防禦能力,保養呼吸道系統,滋潤肌膚,進而增進免疫力,甚至可降低過敏性體質發作的風險喔。
