HOLIDAY SALAD
4 cups Jicama Spiralized
2 Cups Fennel Spiralized
1-2 Tablespoons Jalapeño Minced
¾ cup Dark Cherries Frozen (10 oz. bag)
¾ Cup Cranberries Fresh or Frozen
1 10 oz. Package Raspberries Frozen
2 heaping Scoops PureNourish Beauty Boost (Ground to Powder)
Cilantro Leaves
24 Pecans Whole
Citrus Vinaigrette Dressing (Recipe Below)
Spirialize Jicama and Fennel and set aside. Strain defrosted cherries in a bowl and reserve ¾ cup of the berries (save the remainder for another recipe). Strain the whole package of defrosted raspberries into the strained cherry juice; mashing the raspberries to get the maximum juice possible to yield the most amount of juice for dye. Now pour the strained berry juice(dye) onto the spirilized jicama and fennel to tint the the vegetables red. Let this absorb for about 15 minutes. In a coffee grinder; grind about 4 scoops of Beauty Boost until it becomes a fine powder. Sprinkle 2 heaping scoops over the cranberries and let this marinate for about 25 minutes as they defrost and sweeten.
Put the drained jicama and fennel in a serving bowl and add the marinated cranberries, cherries, minced jalapenos and scatter the cilantro leaves and pecans on top. Serve Citrus Vinaigrette on the side. Yield 10 ( ½ ) cup servings: Calories 21, Carbs: 6 , Fiber 3.5
Citrus Vinaigrette Dressing
2 Tablespoons lemon Juice
3 Tablespoons orange Juice
¼ Cup white Mild Vinegar
1 Heaping Scoop of PureNourish Beauty Boost Ground
¾ Cup Walnut Oil
Put all ingredients in a blender or shaker cup and emulsify. Serve on the side for individual service.
