酸菜魚
材料: 桂花魚或其他魚,帶甜咸酸菜,大豆芽 ,泡椒 ,辣椒干,花椒 ,薑,蔥,紅辣椒,花椒
醃魚肉味料: 鹽少許,一隻蛋白,胡椒粉少許
做法: 1 燒熱鑊落油,猛火煎香魚骨,鹽少許,加滾水煮至湯濃白隔起魚骨
2 魚肉加鹽拌勻至感覺有些膠質後加一隻蛋白,胡椒粉少許拌勻待用
3 咸酸菜片薄切塊,白鑊炒至乾身
4 落油將薑絲,蔥頭,泡椒,大豆芽,咸酸菜炒香
5 開火煲熱魚湯落魚肉加鹽,菇粉各少許稍滾,魚肉鏟起放做法 4 面上,繼而淋上魚湯加一匙白醋
6 燒熱鑊落油爆香辣椒干及花椒後倒入酸菜魚湯內,紅椒粒,蔥花飾面

Hot and Sour Fish Soup with Pickled Mustard Greens
(YouTube video starts at 1:33.)
Ingredients:
Fish - 1 large sea bass (or your choice of fish)
(Separate the meat from the bones and head. Thinly slice the meat at 45-degree angle into bite size pieces. For larger pieces, make a slit in the center of each slice. Set aside.)
Chinese pickled mustard green (“syun choi” or “hum choi”) - 1 package
(Important to choose ones that are SWEET tasting instead of salty.)
(Slice horizontally into half then slice vertically into pieces. Pat dry then pan fry them without oil until dry and fragrant. Transfer to a bowl. Set aside.)
Chinese pickled green chili (“pao jiao”) - 1 jar
Ginger shreds
Garlic pieces
Bean sprouts
Salt - to taste
Mushroom seasoning powder - to taste
White vinegar - 1 tbsp
Potato starch noodles or glass noodles “fensi” - optional to add into the soup
Fish soup base ingredients:
Fish bones
Fish head
Ginger slices - for frying the fish bones and head
Ginger slices - for making the soup
A dash of salt
Very hot boiling water (to make the fish soup creamy white)
Marinade fish meat ingredients:
Salt - a dash
Egg white - 1
White pepper - a dash
Garnish ingredient:
Dried chili
Sichuan peppercorns
Green onion pieces
Fresh red chili pieces
Sichuan peppercorn oil
Methods:
1. In a bowl, add in all the fish meat, a dash of salt, and thoroughly mix until slightly sticky. Add in 1 egg white, a dash white pepper, and mix well. Set aside.
2. Heat up a wok to very hot and add oil. Sprinkle in a dash of salt, add in ginger slices, and add in fish bones and head to make the soup base. Fry them until fragrant and golden brown on HIGH heat, and remove the ginger slices.
3. Add in very hot boiling water, add ginger slices, and bring it to a boil and cook until creamy white. Turn off heat and remove all the fish bones and head and pour the soup through a strainer into a bowl.
4. Return the soup back to the wok and add in marinated fish meat prepared in Step 1 and simmer until cooked. Add in salt and mushroom seasoning powder to taste. Set aside.
5. Heat up a wok, add in oil. Add in ginger shreds, garlic pieces, Chinese pickled green chili, and stir fry until fragrant. Add in bean sprouts, Chinese pickled mustard greens, and mix well. Add in cooked fish meat and fish soup.
6. Drizzle in 1 tbsp of white vinegar.
7. Heat up a separate frying pan, and add oil. Add in dried chili, Sichuan peppercorns, and pour on top of the soup.
8. Garnish with fresh red chili and green onion pieces.
9. Drizzle Sichuan peppercorn oil on top.

酸菜牛肉
材料: 牛肉,青紅辣椒,咸菜
香料: 薑一片,蒜一粒
醃料: 糖少許,胡椒粉少許,鼔油,生粉適量
做法: 1 牛肉先醃備用
2 落油爆香薑,蒜,青紅辣椒,落牛肉炒,最後加咸菜炒勻即可
備註: 咸菜有二隻,一帶甜,另一帶咸,今次是帶甜
咸菜處理可參考酸菜魚
煮酸菜牛肉可試味需否加糖

Stir Fried Beef with Pickled Mustard Greens

Ingredients:
Beef steak slices
(You can replace with beef tenderloin or pork.)
Chinese pickled mustard green (“syun choi” or “hum choi”) - 1 package
(Important to choose ones that are SWEET tasting instead of salty.)
(If you are using the SALTY type, just add more sugar.)
(Slice horizontally into half then slice vertically into pieces. Pat dry then pan fry them without oil until dry and fragrant. Transfer to a bowl. Set aside.)
Red and green sweet bell peppers - sliced
Minced ginger
Minced garlic - 1 clove
Marinade beef ingredients:
Cooking oil
Sugar
Light soya sauce
White pepper
Corn starch / flour
Methods:
1. In a bowl, add in sliced beef steak, cooking oil, sugar, light soya sauce, white pepper, corn starch, and mix well. Set aside.
2. Heat up a wok, add oil. Add in minced ginger, minced garlic, red and green sweet bell pepper slices, marinated beef slices, and briefly stir fry until fragrant. Transfer to a bowl. Set aside.
3. Heat up the wok, add Chinese pickled mustard greens. Optional to add sugar now if you find it salty.
4. Return the partially cooked beef back to the wok, and mix well. Transfer to serving plate. Serve.

芒果棷汁糕
材料:
凍滾水 250 ml
奶 250 ml
魚膠粉 35 gr (可改用魚膠片5-6片)
沙糖 100 gr (可依個人喜好加減)
棷奶 1罐
芒果 2-3個
做法:
1. 凍滾水、奶 、魚膠粉、沙糖放入煲內,開中大火煮,邊煮邊輕輕攪拌至魚膠粉和糖完全溶解。
2. 加入棷奶,攪拌至混合後關火,放涼備用。注意:加入棷奶後不要煮太久,以避免油水分解。
3. 芒果去皮切粗條或粗粒,排放入糕盆內,倒入已放涼棷奶混合液,蓋好後放入雪櫃雪至硬身便可

Mango Coconut Pudding
(YouTube video starts at 35:35.)
Ingredients:
Drinking water - 250ml (do not use tap water)
Milk - 250ml
Gelatin powder - 35g (or replace with agar agar)
Sugar - 100g or to taste
Coconut milk - 1 can
(Add in last to avoid the oil separating, which will result in two layers when pudding is set.)
Fresh mangos - cut into your choice of designs. (Cubes or strips or floral.)
(Cut into THICK pieces to avoid pieces from moving.)
Methods:
1. In a cooking pot, add in drinking water, milk, gelatin powder, sugar, and cook until sugar and gelatine have melted and little bubbles appear by continue stirring.
2. Add in coconut milk and taste test for sweetness.
3. Let it cool down to room temperature.
4. In a mould, add in fresh mango pieces on the bottom layer then pour coconut milk mixture on top.
5. Put in the refrigerator to set.
6. Cut into cubes. Serve.
To create mango layers:
Optional to layer mango pieces on the bottom of the mould then refrigerate until they are a bit dehydrated and stick to the mould. This is to prevent them from moving or floating.
Once the mango pieces are set on the bottom of the mould, pour half of the coconut milk mixture in and set in the refrigerator for about 30 minutes.
After 30 minutes, or once the pudding is set, add the remaining mango pieces, coconut milk mixture, and refrigerate it until set and firm. You may create more than 2 layers.
Once set, loosen the pudding from the mould and transfer to a serving plate with the bottom of the pudding facing upward displaying the mango pieces design. Slice and serve.

薑蔥蒸紅魚:
材料:
紅魚1條
薑切片切絲
蔥切段切絲
紅椒切絲
處理:
1. 紅魚連包裝清水解凍。
2. 30分鐘後,魚擎乾水,在身上切3刀。
3. 在碟上預先放薑絲及蔥段,然後再放紅魚在上面。
烹調:
1. 煲滾1鍋水。
2. 大火蒸魚12分鐘。
3. 魚蒸好後,隔清碟上的魚水。
4. 放薑絲、蔥絲及紅辣椒在魚上面。
5. 灒滾油。
6. 在魚的兩側落豉油,完成。
Steamed red snapper:
Ingredients:
Red snapper 1 No.
Shredded ginger
Shredded green onion
Shredded red pepper
Preparation:
1. Defrost the red snapper with packaging.
2. Hang dry the fish after 30 minutes, cut three times on fish.
3. Put shredded ginger and shredded green onion on plate, then put the fish on top.
Steps:
1. Boil up a pot of water.
2. Steam the fish at high flame for 12 minutes.
3. Pour out the water from plate.
4. Put shredded ginger, green onion and red chili on top of fish.
5. Put hot oil on fish.
6. Pour light soya sauce on two sides of fish. Complete.
蕃茄甜酸寶石魚:
材料:
寶石魚1條
處理:
1. 寶石魚魚連包裝清水解凍。
2. 洗淨蕃茄,1開8。
2. 30分鐘後,洗淨,擎乾水。
3. 蔥切段,薑切幾片。
4. 預備薑絲及蔥絲。
5. 在魚身上切3刀,索乾水,在2面薄薄撲上生粉。
烹調:
1. 放2湯匙落鑊,大火燒熱。
2. 沾上薄生粉的寶石魚,放入鑊煎。
3. 收至中慢火,煎3分鐘。
4. 反轉另一面,再煎3分鐘。
5. 用另一隻鑊,預備酸甜汁:
a. 200毫升水
b. 加入蕃茄
c. 加入冰糖
d. 白醋1/2湯匙
煮滾。
6. 煎好寶石魚,擎乾油分。
7. 煮滾酸甜汁,埋生粉芡。
8. 寶石魚上碟,淋酸甜汁上面,完成。
Jade perch with tomatoes and sweet and sour sauce:
Ingredients:
Jade perch 1 No.
Tomatoes 2 Nos.
Preparation:
1. Defrost the jade perch with packaging.
2. Rinse the tomatoes, divide one tomato in eight equal shares.
2. Rinse and hang dry after 30 minutes.
3. Chop the green onion and slice the ginger.
4. Prepare the shredded ginger and shredded green onion.
5. Make 3 cuts on fish. Put a thin layer of tapioca starch after the fish has been dried well by kitchen towel.
Steps:
1. Heat up 2 tbsp oil in wok at high flame.
2. Fry the jade perch with tapioca starch into wok.
3. Turn to medium~low flame, fry 3 minutes.
4. Fry 3 more minutes on the other side of fish.
5. Boil up the sweet and sour sauce in another wok:
a. 200no water
b. Put tomatoes
c. Put rock sugar
d. White vinegar 1/2 tbsp
6. Cook the made perch well, release the excess oil.
7. Put tapioca starch sauce to the sauce to make it thick.
8. Put the fish on plate, pour the sweet and sour sauce on top, serve.

高速煲支竹炆鵝掌
材料:
急凍鵝掌8隻
廣西支竹半斤
辣椒仔3隻
芫荽1棵
處理:
1. 支竹,清水浸軟,剪一塊塊。
2. 芫荽,清水洗淨,切碎。
辣椒仔,洗淨,切粒。
3. 在高速煲內煲滾水1升,放鵝掌出水,加入紹興酒1湯匙及少量鹽去除羶味。
4. 水已滾起,倒去水分,加入清水浸3分鐘,再倒去水分,開住水喉,逐隻鵝掌,清洗乾淨,擎乾水。
5. 用洗潔精,洗乾淨高速煲,才繼續使用。
6. 用菜刀切去鵝掌的趾甲,放入高速煲內,加入調味料:
a. 紹興酒1湯匙
b. 冰糖幾粒
c. 辣椒仔2隻(搣去椗)
d. 老抽半湯匙,撈勻
e. 生抽半湯匙
f. 蠔油1湯匙
加入清水400毫升。
6. 加入支竹。
烹調:
1. 所有材料在高速煲內炆40分鐘。
2. 放高速煲在電磁爐上煮至收汁。
3. 上碟,灑上芫荽碎及辣椒粒。
4. 完成,可享用。
Braised geese feet with bean curd with high speed cooker
Ingredients:
Frozen geese feet 8 Nos.
Bean curd 0.5 catty
Chili 3 Nos.
Coriander 1 No.
Preparation:
1. Bean curd, soak in tap water until it turns soft. Cut in pieces.
2. Coriander, rinse with tap water. Chop well.
3. Heat up water 1L in high speed cooker. Put in geese feet. Add in Shaoxing wine 1 tbsp and little salt to remove the unpleasant smells.
4. Water boils up, pour away the water. Add in tap water, soak for 3 minutes, pour away water again. Rinse the geese feet one by one under running tap. Drain.
5. Rinse the high speed cooker with detergent. Rinse thoroughly. Continue cooking.
6. Cut the geese nails with chopper. Put into high speed cooker. Add seasoning:
a. Shaoxing wine 1 tbsp
b. Rock sugar several cubes
c. Chili 2 Nos. (With no stems)
d. Dark soya sauce 0.5 tbsp, mix well.
e. Light soya sauce 0.5 tbsp
f. Oyster sauce 1 tbsp
Add in tap water 400ml.
6. Add in bean curd.
Steps:
1. Put all ingredients in high speed cooker, braise for 40 minutes.
2. Put the cooker on induction cooker. Continue braising until the sauce becomes thick.
3. Put on plate. Put coriander and chili cubes on top.
4. Complete. Serve.

冰豆腐炆素:
材料:
硬豆腐2磚
冬菇(大)3隻
雪耳1個
雲耳1兩
甜椒1隻
素食蠔油適量
處理:
1. 硬豆腐切成1“ x1“ x 1“。
2. 放豆腐入有蓋膠盒,雪至硬身,大約雪8小時。
3. 豆腐用清水浸2分鐘,揸乾水。
4. 預備醬汁:
a. 素蠔油2茶匙
b. 豉油2茶匙
c. 糖1/2茶匙
d. 水200毫升
攪勻。
5. 甜椒,切大粒。
烹調:
1. 中火在鑊中燒熱1湯匙油。
2. 放冬菇、雲耳及雪耳爆香。
3. 加入冰豆腐,炒勻。
4. 加入醬汁及100毫升水。
5. 冚蓋,炆10分鐘。
6. 加入2茶匙素蠔油,炒勻。
7. 最後加入甜椒粒,炒勻,放上碟,加入1茶匙麻油,完成。
Braised vegetables with iced tofu:
Ingredients:
Hard tofu 2 cubes
Mushrooms (large) 3 Nos.
Snow fungus 1 No.
Black fungus 1 tael
Sweet chili 1 No.
Vegetarian oyster sauce appropriate amount
Preparation:
1. Cut tofu with size 1" x 1" x 1".
2. Put tofu in a plastic storage box with lid. Refrigerate until it is hard. This takes about 8 hours' time.
3. Soak tofu in tap water for 2 minutes. Squeeze it.
4. Prepare the sauce:
a. Vegetarian oyster sauce 2 tsp
b. Light soya sauce 2 tsp
c. Sugar 1/2 tsp
d. Water 200ml
Mix well.
5. Sweet chili, dice in big cubes.
Steps:
1. Heat up 1 tbsp oil at medium flame in wok.
2. Fry mushrooms, black fungus and snow fungus.
3. Put iced tofu, fry well.
4. Add the sauce and 100ml water.
5. Braise for 10 minutes with the lid on pot.
6. Add 2 tsp vegetarian oyster sauce. Fry well.
7. Finally, fry well with sweet chilli. Put on plate. Add 1 tsp sesame oil. Serve.

鹹蛋白蝦米炒飯
材料:
白飯(凍)2碗
鹹蛋白2隻
蝦米3湯匙
臘腸1條(已蒸熟)
蔥1條
處理:
1. 蝦米,清水浸5分鐘。
2. 蔥,切粒。
3. 臘腸,打橫切細粒。
4. 蝦米,清水沖洗乾淨,擎乾水。
烹調:
1. 蝦米,白鑊,大火烘乾。
2. 加入油半湯匙。
3. 加入臘腸粒爆香。
4. 所有材料,放入碗中。
5. 加入油半湯匙。
6. 加入鹹蛋白,快推幾下凝結。
7. 鹹蛋白未完全凝結,放白飯。
8. 慢慢壓鬆白飯。
9. 加入蝦米及臘腸,大火炒至乾身,熄火。
10. 加入蔥粒,炒勻。
11. 上碟,完成。

Ingredients:
Rice (cold) 2 bowls
Salted egg white (2 eggs)
Dried sea shrimps 3 tbsp
Chinese sausage 1 No. (Cooked )
Green onion 1 No.
Preparation:
1. Dried sea shrimps, soak in tap water for 5 minutes.
2. Green onion, dice in cubes.
3. Chinese sausage, cut in small cubes horizontally.
4. Dried sea shrimps, rinse thoroughly, hang dry.
Steps:
1. Dried sea shrimps, fry with no oil at high flame in wok.
2. Put oil 0.5 tbsp in wok.
3. Fry Chinese sausage cubes well.
4. Put all the ingredients in a bowl.
5. Add oil 0.5 tbsp.
6. Put salted egg white, stir fry for 5 seconds to make it condensed.
7. Salted egg white has not been totally condensed, put rice.
8. Squeeze the rice.
9. Add dried sea shrimps and Chinese sausage, fry well at high flame until the rice is not sticky any more. Turn off fire.
10. Put green onion cubes. Fry well.
11. Put on plate. Serve.
