So happy to be back at my college hall Chi Sun College for their first high table dinner in a while! How cool to be dressed in a black gown this time. And I had so much fun saying “…back in my days…” to the young HKU students I sat with at the dinner table 😄

│10月1日決殺令：美國 IATSE 工會的會員投票結果將決定好萊塢和串流劇組是否會在今年因罷工而陷入全面停擺│

• 上個月，近百名好萊塢攝影師包含 Roger Deakins（《1917》）、Emmanuel Lubezki（《The Revenant 神鬼獵人》）、Erik Messerschmid（《Gone Girl 控制》）等攝影大師共同連署一封公開信，向 AMPTP 電影電視製作人聯盟提出警告說大量好萊塢工作人員被迫在不安全的環境中連續超時工作，已經對許多從業人員的健康和生命安全造成危害。不到一個月，這些攝影師就有機會採取比發信更積極的行動。今天 ICG 國際攝影師工會（屬於IATSE 國際戲劇和舞台成員聯盟的分支機構）正式向所屬的會員呼籲在10月1日開始的 IATSE 會員電子投票中，投贊成票授權給工會領袖和談判代表發動全國性的罷工行動。

• IATSE 國際戲劇和舞台成員聯盟一開始是北美劇場跟舞台工作人員所屬的大型工會，後來才延伸到電影的相關職務，包含攝影師、服裝師、化妝師、髮型師等等好萊塢劇組劇組不可或缺的職務。在 IATSE 的各地方分會之中，規模最大的就是 ICG 攝影師工會和 MPEG 剪接師公會。這兩個工會近日已經連續表態呼籲支持 IATSE 主席發起的罷工授權投票。連不屬於 IATSE 的 SAG-AFTRA 演員工會剛剛當選的主席 Fran Drescher（《The Nanny 天才保姆》）也公開發言支持 IATSE 的罷工投票。包含好萊塢知名演員 Seth Rogen、Jane Fonda 和 Lily Tomlin 等也都相繼公開相挺。

• 罷工的選項之所以在最近浮上檯面，是因為 IATSE 與 AMPTP 電影電視製作人聯盟的勞動協議已經三年期滿，卻始終未能針對接下來三年的新協議達成共識。其中最主要的爭執還是勞動協議中關於薪資保障的規定。好萊塢正在經歷串流產業的大爆發，但製作人卻仍在用非常低的薪資雇用工作人員並每每要求超時工作，使他們的時薪經常只能勉強超過加州的每小時14美元最低薪資規定。不過因為雙方的談判是不公開的，我們無法確切得知雙方對於薪資條件的落差有很多。只能看到各自發新聞稿譴責對方沒有談判誠意的古老戲碼。

• 因為談判的持續擱淺， IATSE 於是決定祭出殺傷力最大的武器——罷工。 IATSE 過去從未發動過全國性的罷工。可以參考的案例是 2007 年美國東西岸的編劇聯合工會 WGA 發動的罷工致使1.2萬名美國編劇必須立刻停止手邊工作，根據 UCLA 的估計當年的罷工總計造成好萊塢3.8億美元損失。下週的授權投票如果獲得各分會會員75%贊成票支持的話，IATSE 的主席和談判代表將取得權利在談判中上提出罷工要脅，並在下一次談判破裂後啟動全國性的罷工。由於 IATSE 會員涵蓋了攝影師、服裝師、化妝師、髮型師等重要職務，屆時好萊塢可能的損失將非常可觀。而且適逢串流大戰造成對於內容供應的強烈需求，另一方面又有 COVID-19 造成的拍攝延誤和節目供應不及，這個時間點出現全面罷工甚至可能直接左右串流大戰的結果。

• 好萊塢歷史上最激烈的罷工都跟新媒體有關，因為片廠經常沿用舊合約範本，假裝不知道有一個新的收入正在快速激增。一旦被演職員抓包，就很容易撕破臉。 1988年編劇工會破紀錄的22週罷工主因正是片廠偷偷隱藏錄影帶帶來的激增營收，不分給相關演職員；2007年持續14週（還跨到隔年）的編劇罷工則是為了 DVD 和網路零售（iTunes ）的營收分潤。今年的爭執點理所當然就是在疫情中快速崛起的串流市場。實際上幾個星期前 Scarlett Johansson 和 Disney 針對《Black Widow 黑寡婦》的訴訟正是跟串流和分潤有關。

• 有趣的是 IATSE 這次的行動似乎在偷學2008年 WGA 編劇工會罷工的經典技巧。2008年編劇罷工是網路時代的罷工典範，因為編劇工會全程善加利用網站來向大眾溝通他們的罷工理念，並充分運用明星好朋友們的曝光來幫忙擴散理念，因此才有辦法在產業重創之中仍然得到民意支持。而這次 IATSE 則進一步在罷工的發動過程中或用另外一個力量無窮的網路工具——社群媒體 Instagram。

• 一個多月前 IATSE 開設了一個 Instagram 帳號名為 IATSE Stories，由他們會員中一名紐約的燈光技師 Ben Gottlieb 發起並經營，持續刊登影視產業中不同職位工作人員在非常艱困的勞動條件下勉強活著的慘烈故事。這個社群帳號幾乎在業界之間一夜爆紅，不僅獲得大量專業媒體報導，並快速累積9萬粉絲追蹤。發文中許多驚悚的故事引發了同業的激烈迴響，也創造了行業外的大量同情。最驚悚的故事包括過勞的助理在開車過程中睡著，一名女性工作人員甚至忙到撥不出時間去開乳癌切除手術，或是因為沒有時間上廁所而膀胱發炎等等案例。工時過長更是不同職務共同遇到的狀況，製作人經常為了控制拍攝成本而要求連續上班12甚至16個小時。

• 由於多數影視工作者和雇主之間都沒有長期雇用關係，採用的是比較接近 Uber 司機那種零工制，所以勞動環境和基本生活條件都無法像一般勞工那樣受到完整的法制保障。台灣的影視工作者也在一個多星期前在勞動部的會議上極力爭取讓拍攝現場的工作人員納入勞基法的責任制勞工，以便取得關於工時、休假、工作中休息時間和加班費等等基本保障。

〈無垢鳥〉的歌詞係由《維摩詰所說經·方便品》以及客語童謠〈阿啾箭〉所發想而成。
The lyrics are inspired by “The Vimalakirti Sutra” and the Hakka nursery rhyme “Black Drongo”.

阿啾箭為大卷尾的客語稱法，是地域性很強的鳥類，昔常見於農村牛背上；維摩的梵語是清淨、無垢的意思，結合以上二者，故曲名題為〈無垢鳥〉。
A black drongo is a highly territorial bird often seen resting on the back of a cow in the countryside. “Vima” in Sanskrit language means clean and pure, which is why the song is named “White Drongo”.

〈阿啾箭〉這首童謠使用在電影《光的孩子》的劇情關鍵處，藉由不同角色的無伴奏哼唱，前後串連出生命、情感的一脈相承。〈阿啾箭〉的童謠歌詞迴環反覆、直白簡要，指出無父無母的處境、追尋的失落，剛好扣合電影的角色際遇，也與《維摩詰所說經·方便品》的核心精神相呼應。
The Hakka nursery rhyme “Black Drongo” is used in an important part of the film “The Child of Light”. Hummed by different characters without the accompaniment, it expresses how our lives and feelings are interrelated. With the rotatory and straight forward lyrics, we know how it feels when you’ve lost your parents and try to find something but in vain, which is what the protagonist of the film has been through and in accordance with the core of “The Vimalakirti Sutra”.

〈無垢鳥〉歌詞以聚沫、泡、燄、幻、夢、影、浮雲、電等喻，示明無常的諦理；而〈阿啾箭〉童謠則提供了一個生活感的基底；兩者一虛一實，精神層面和現實景況交匯共振，成為了普世無盡的扣問。
A cluster of foam, a bubble, a flame, an illusion, a dream, a shadow, a cloud and lightning in the lyrics show us how transitory life is while the nursery rhyme “Black Drongo” itself describes an ordinary daily routine. The former is unreal while the later is real. When the spirituality meets the reality, endless questions arise ubiquitously.

〈無垢鳥〉是電影《光的孩子》的片尾曲。原初的構想是希望片尾曲能有不斷往前、往前，最後隨風消散的感覺，意圖在影片結束時，以對自然的感知、經文的無常空相，延擴至更超然的識界，並帶給人飛昇、療癒的力量。
“White Drongo” is the ending song of the film “The Child of Light”. The initial conception about ending song is to deliver the feelings of going forward and fading away eventually. We expect that the ending shows the sense to nature and the impermanence of sutra expending to the unlimited ambit, and also provides people the power of inspiration and mind-curing.

Hello friends! Today we're going to share with you how to make juicy oven-baked smoked BBQ ribs at home.

Copying and practicing a recipe from a famous restaurant is the most challenging thing, but it is very interesting and we learn new things from it. In this video, we copied the taste of the famous pepper ribs, but made some modifications, because some ingredients are not found in this city. Chili’s slow-cooked pork ribs has been a top seller on the menu since 1986 and is still the best seller today. So this is a must try.

To make smoked flavor BBQ ribs without a smoker, we slow cook in the oven, and make the Chili's BBQ sauce with smokey chipotle in adobo, or it can be made by liquid smoke instead. The flavor is found in the sauce, and the cooking secret is slow-braising which can keep the meat juicy and tender like the original. You can use the barbecue sauce suggested in the recipe below or use your favorite homemade or store-bought sauce. Hope you like it. Enjoy. :)

How to make Oven-Baked Smoked BBQ Ribs

✎ Ingredients
pork ribs 950g

☞ for dry marinades
coarse salt 70g
black pepper 15g
ground white pepper 4g
cayenne pepper 2g
granulated sugar 3.5g
garlic powder 1.5g
onion powder 1.5g

☞ for BBQ sauce
chipotle peppers in adobo 7g
regular soy sauce 32g
tomato paste 70g
ketchup 20g
chicken broth 30g
apple cider vinegar 35g
dark beer 45g
fresh orange juice 87g
minced garlic 10g
chili powder 1.5g
onion powder 5g
salt 3g
black pepper 2.5g
light brown sugar 130g

1. Combine together coarse salt, black pepper, ground white pepper, cayenne pepper, granulated sugar, garlic powder and onion powder, mix well.
2. Line a baking tray with foil or parchment paper.
3. Place the ribs on the baking tray, pat dry the ribs with paper towels on both sides.
4. Using a sharp knife to take off  excess fat. Just keep a little fat.
5. Remove the silver skins or whitish dense skin on the bone side of the ribs.
6. Then turn the meatier side facing up, generously season with 1 tablespoon of dry marinades.
7. Cover with another foil, shiny side out.
8. Preheat the oven to 135C, bake for 2.5~3 hours.
9. While the ribs bake, make the barbecue sauce. Add all the sauce ingredients together, using an immersion blender to blend the ingredients until smooth. Pour into a saucepan and cook over medium-low heat for 15-20 minutes, stirring often until thicker.
10. Once baked, remove foil and transfer to a new baking tray and brush ribs with the barbecue sauce on both sides. Let the bone side facing up.
11. Preheat the oven to 220C, bake for 5 minutes, then turn the meatier side facing up and brush a little bit of sauce and bake for 10 minutes or until  ribs have been caramelized.
12. Transfer the ribs to a plate or a cutting board, brush with sauce again if needed and serve.

我覺得林鴻鳴缺點主要是咬字，只要改正，應該可以跟國外主唱打平...
