As a chef, I wish more people can enjoy my cuisine…
I moved to Tokyo as I found the Japanese ingredients can make fantastic Chinese cuisine. I wanted to put my expertise to good use and expand my restaurant and therefore more and more people can enjoy my cuisine.
However, things didn’t turn out the way I wanted.
Now, my restaurant has only 3 seats…
As a chef, I wish more people can enjoy my cuisine…
Therefore, I decided to transform my restaurant to be a research and development center. I will spend most of my time to develop products. The main goal of these products is to have everyone can enjoy ChoyChoy’s Cuisine at home easily.
However, I think no matter how good I develop the products, these products will not be as good as you cook ChoyChoy’s Cuisine by yourself.
Therefore, I decide to share this award-winning cookbook and its 60 videos. Hope you could spend more time to enjoy cooking.

肉寿司の食べ放題も！極上なのにリーズナブルな肉料理を爆食！東京都渋谷区恵比寿『よしにく EBISU NIKU BAR』に伺いました。こちらは国産黒毛和牛の様々な部位（ハラミやホルモン、タンもあり）から馬肉までバリエーション豊かな肉を揃えており、肉寿司やステーキ、炙りタタキなど多彩なメニューで堪能できるお店です。和牛の中でも特にA5、A4ランクの雌牛（未経産牛。より柔らかい肉質が特徴）にこだわって提供！ちなみに雌牛は雄牛よりもキメ細やかな肉質のため美しいサシが入るそう。オレイン酸をより多く含んだ肉は旨みがとても強く、サシの溶ける温度が低いため口溶けがよく胃もたれしにくいそうです。そんな最高級和牛がリーズナブルに食べられるのはかなりの魅力！また、動画内でご紹介している「肉寿司」食べ放題＆飲み放題がついて5,000円（肉寿司のみ食べ放題3,500円もあり飲）のコースもかなりの人気だそうです（詳しくはHPをご覧ください）。！

This is a restaurant where you can enjoy a wide variety of meat from various parts of domestic Kuroge Wagyu beef (including Harami, hormones, and tongue) to horse meat, and you can enjoy a variety of menus such as meat sushi, steak, and roasted tataki. Among Japanese beef, we are particular about A5 and A4 rank cows (heifers, which are characterized by softer meat quality). Cows have a finer meat quality than bulls, so they contain beautiful sashimi. Meat that contains plenty of oleic acid has a very strong taste, and the temperature at which the sashimi melts is low, so it melts in the mouth and does not cause stomach upset. It is a big attraction that you can eat such finest Wagyu beef at a reasonable price! After getting its Michelin star back in January, The Chairman claimed the top spot for Asia’s 50 Best Restaurants 2021 – a first for a Hong Kong restaurant – just two months later. Tucked away in a small side road at the back of the bustling Central district, the modern classic Cantonese eatery is owned by Danny Yip, a low-key veteran restaurateur who has managed to stay out of the limelight until recent years. “Food is always our centre of attention. Because whenever we struggle to take care of everything else, we always consider: how much time can we actually spend in the kitchen during the year? We want to put all our energy on our food, especially during the first few years,” Yip says.
Little Meg, a top food influencer with over 159,000 followers on Instagram and one of the Tokyo guides featured in Netflix’s foodie docuseries “Ugly Delicious”, is one of the most frequent regulars of The Chairman. She has dined at the small restaurant at least 37 times within nine months since June last year. “Chinese cuisine used to lack certain finesse, but The Chairman has successfully filled the gaps over the past decade. For instance, Chinese dishes were often cooked with stock or a lot of sauces, but The Chairman decided not to go down the same route. They establish their own flavors with their own techniques,” Little Meg says.
