[認真吃] 甜點的神話系統: 乳酪蛋糕與女人
說到乳酪蛋糕（Cheesecake），我會想到在大二的時光，窩在東區的「花徑開咖啡」，很man的老菸槍女老闆端上來的超濃紐約起司蛋糕，有時候還會搭上偷偷送給我們的檸檬薄荷茶，白色的盤子裡裝載著小小塊的雪白蛋糕，旁邊放著一杯閃耀著青綠色水滴的冰茶，然後，紅色Marlboro的煙灰不斷地落在法國哲學家Boudrillard寫的《物體系》綠色封面上。為賦新辭強說愁的大學假文青景象，隨著花徑開咖啡換老闆而永遠暫停，當然，那個濃的要死的紐約重乳酪蛋糕也不復見。
雖然乳酪蛋糕在台灣算是十分常見又便宜的蛋糕，但我找了好幾年的重乳酪而不可得，不是有加了麵粉就是糖放太多，完全失去了重乳酪的意義。前幾天吃了Amo的紐約乳酪蛋糕，超濃到有一點嚇人的滋味，讓我重新記憶起那段假文青的日子。說到乳酪蛋糕的普遍，大抵上是因為它的成本實惠，製作方式簡易，從輕到重，混合的比例也就不同，懶一點的也不需要加上餅乾底，乳酪、糖、奶油、奶混一混就可以放在模子裡拿去冰箱，半天就完成了。所以，在西方世界，乳酪蛋糕的普及幾乎就是他們的點心歷史時間本身那麼長，大致從希臘時期就有人用凝乳取代牛奶來做糕餅（出自La Tres Belle et tres exquise Histoire des Gateaux et des friandises?談奧林匹克的點心部分）。乳酪蛋糕與人類社會相半已久，文化也必定有所交雜，乳酪蛋糕也有它獨特的社會意義：簡單、便宜、濃郁、健康。
在《女人、乳酪蛋糕與邊緣材料》（Women, Cheesecake, and Borderline Material）（Meyerowitz, 1996）中就體現了人類社會運用乳酪蛋糕意義的一個例子。該女性史研究者Meyerowitz研究了二十世紀中期的女性文化在報章雜誌上的再現，Meyerowitz指出在1915年的美國文化中，常見到「乳酪蛋糕」一詞在美國俚語中，指的是一張明信片或雜誌照片上的一個有吸引力的、肉體完美健康的女人形象，但影含著「女性像是市場商品」的性意義（sexual meaning）。這樣的乳酪蛋糕的講法同時出現在色情刊物與一般男性日常言談中，像是女性是一種可口的點心，召之即來，並且廉價。Meyerowitz接著描述，當時萌芽的女性主義者便試圖透過重新詮釋這些詞語，來恢復「女人、乳酪蛋糕與邊緣材料」在男性主流色情社會的權力位置。
這樣看來，乳酪蛋糕的確是被認為是好吃、誘人、卻又廉價、快速的一種點心。也許我們不會在使用乳酪蛋糕來形容色情女體，但無疑的，乳酪蛋糕絕對是當你不知道要選哪一個蛋糕時的最佳選擇，形式簡單，品質也穩定。Amo的這塊蛋糕，簡單濃郁，因為裡面還參雜一些柑橘皮，讓膩口的味道稍稍紓緩，雖然，我們各自吃了一小塊後，就整個蛋糕塞到冰箱裡到現在還沒有再拿出來過….@@但我想對於非常熱愛吃重乳酪蛋糕的人，應該是非常迷人又情色的選擇。
